Abstract

Compementary Food (PMT) is food given to toddlers to meet the nutritional requirements that toddlers get from the daily food. Toddler Additional Food is nutrition supplementation in the form of additional food such as nuggets, meatballs, sausages, etc. for toddlers 6 – 59 months in the underweight category. In this research, used local food and functional foods are mackerel fish and tempeh flour to raw materials in complementary food of nuggets for toddlers of obtaining high protein content and other nutrients. This research is a quantitative with experimental methods using a completely randomized design with one factor, namely the formulation of tempeh flour nuggets with the addition of mackerel with three formulations. The object studied was the nugget treatment carried out in this research, the differences in the composition of the raw materials and the nugget characteristics. Formulation of three nugget for organoleptic quality test with 40 panelists mothers of toddlers. From the results of the organoleptic quality test, can be concluded that formulation 02 nuggets have the highest value can interpreted as being acceptable compared to formulation 01 or 03 nuggets from the aspects of taste, color, smell, and texture. The nugget formulation most preferred by the panelists explained that the protein content was 11.96%, which was higher than the control nugget (without the addition of tempeh flour and mackerel fish) on 4.85%. For toddlers aged 1 - 5 years who consume two nuggets equivalent to 60 grams every day can meet the daily protein of 35.9% - 28.7% of the protein requirement based on the 2019 Recommended Dietary Allowances (RDA).

Abstract

Nutritional status is a health condition that occurs as a result of a comparison between needs and the fulfillment of nutritional substances. There are several factors that can influence a person's nutritional status, namely suitability of needs with food intake, physical activity, increased nutritional needs due to various diseases, and other factors such as social and economic background. The nutritional status of adolescents can be described through measuring BMI/U. The prevalence of underweight in adolescents aged 13-15 years, based on research and development data from the Ministry of Health in 2013, is 11.1% (3.3% very thin and 7.8% thin) while for obese people aged 13-15 years was 10.8% (2.5% very obese and 8.3% obese). Data was obtained by interviews regarding identity, student age, weight and height measurements, exercise and physical activity habits, eating patterns and interpretation of nutritional status on Z-Score BMI according to Age. The results of this study showed that 59.5% of students had good nutritional status, 15.7% of students had overweight nutritional status, 13% of students have poor nutritional status, 10.3% of students have poor nutritional status, 1.6% students have obesity nutritional status.

Abstract

Diabetes mellitus (DM) is a collection of symptoms that arise in a person due to the body experiencing problems in controlling blood sugar levels. The lower the knowledge, the higher the blood sugar levels. The low knowledge of respondents about DM disease makes respondents unable to control blood sugar levels. This community service aimed to enhance public knowledge about DM prevention through education on local food consumption and healthy behaviors. The activity was carried out in Kedungmundu, Semarang City, in August 2024, with the participation of 39 people. The education was delivered through lectures, discussions, and a booklet, containing information about DM, recommended diets, and the use of local food. The results of the activity showed a significant improvement in community knowledge about DM prevention, with post-test scores higher than pre-test scores. This increase indicates that education through lectures and booklets was effective in disseminating health information. With better knowledge, the community is expected to adopt healthier behaviors that can reduce the prevalence of DM, particularly through the use of lokal food. This activity made an important contribution to promotive and preventive efforts to control DM within the community. Future research is recommended to explore the impact of increased knowledge on changes in community attitudes and behaviors in DM prevention.

Abstract

Diabetes melitus (DM) merupakan salah satu penyakit tidak menular dengan prevalensi yang terus meningkat, disebabkan oleh berbagai faktor seperti penurunan produksi insulin, gaya hidup tidak sehat, dan obesitas. Pengabdian kepada masyarakat bertujuan untuk meningkatkan pengetahuan masyarakat tentang pencegahan DM melalui edukasi tentang konsumsi pangan lokal dan perilaku sehat. Kegiatan ini dilaksanakan di Kelurahan Kedungmundu, Kota Semarang, pada bulan Agustus 2024 dengan partisipasi 39 orang. Edukasi diberikan melalui penyuluhan menggunakan metode ceramah, diskusi, dan media booklet, yang berisi informasi tentang DM, diet yang dianjurkan, dan pemanfaatan pangan lokal. Hasil kegiatan menunjukkan peningkatan yang signifikan dalam pengetahuan masyarakat mengenai pencegahan DM, dengan skor post-test yang lebih tinggi dibandingkan pre-test. Peningkatan ini menunjukkan bahwa penyuluhan menggunakan ceramah dan media booklet efektif dalam menyebarkan informasi kesehatan. Dengan pengetahuan yang lebih baik, masyarakat diharapkan mampu mengadopsi perilaku sehat yang dapat menurunkan prevalensi DM, terutama melalui pemanfaatan pangan lokal. Abstract

ABSTRAK Stunting menjadi isu yang mendesak untuk diselesaikan karena berdampak pada kualitas sumber daya manusia di masa depan yang merupakan faktor penentu keberhasilan suatu negara. Data Dinas Kesehatan Kota Semarang Tahun 2023 terdapat prevalensi stunting 1,1% (872 balita). Permasalahan stunting pada balita dapat terjadi salah satu karenakurangnya asupan zat gizi. Kegiatan pengabdian masyarakat dilaksankan di dua mitra yaitu kader Posyandu Delima dan balita di lingkungan Posyandu Delima Wilayah kerja Puskesmas Kedungmundu Kota Semarang. Permasalahan mitra yaitu dalam penyediaan MP-ASI kepada balita yang masih belum sesuai dengan standar kebutuhan gizi setiap kelompok usia balita dan tekstur yang belum sesuai. Membantu pencegahan stunting pada balita dengan meningkatkan derajat kesehatan masyarakat dengan inovasi pengolahan MP-ASI pangan fungsional berbasis pangan lokal Kota Semarang. kegiatan penyuluhan dan edukasi, pelatihan keterampilan praktik pembuatan MP-ASI pangan fungsional berbasis pangan lokal, serta pemberian MP-ASI yang sudah disesuaikan dengan AKG berdasarkan kelompok usia dan pemberian media berupa leaflet, buku pegangan bagi kader, dan poster. Terjadi peningkatan pengetahuan yang dibuktikan dengan meningkatnya nilai pretest dan posttest untuk ketiga kegiatan yaitu rerata nilai pretest yaitu 57,75 dan meningkat 41,39% menjadi rerata nilai 81,78 setelah kegiatan selesai dengan nilai signifikansi < dari 0,05 yang berarti terdapat perbedaan signifikan antara pretest dengan posttest. Kegiatan pengabdian masyarakat dapat meningkatkan pengetahuan dan keterampilan seluruh Kader Posyandu dan dapat memberikan perubahan pola konsumsi MP-ASI yang diberikan kepada seluruh balita di Posyandu. Kata Kunci: Kader Posyandu, MP-ASI, Pangan Fungsional, Pemberdayaan, Stunting.  ABSTRACT Stunting is a pressing issue that needs to be resolved because it impacts the quality of human resources in the future, which is a determining factor in the success of a country. Data from the Semarang City Health Office in 2023 showed a stunting prevalence of 1.1% (872 toddlers). The problem of stunting in toddlers can occur due to a lack of nutritional intake. Community service activities were carried out by two partners Posyandu Delima cadres and toddlers in the Delima Posyandu in the Kedungmundu Health Center working area of Semarang City. The partner's problem was in the provision of complementary feeding to toddlers, which still did not meet the nutritional needs of each toddler age group and the texture was not appropriate. To help prevent stunting in toddlers by improving public health through innovative processing of functional complementary foods based on local foods in Semarang City. Counseling and education activities, practical skills training in making functional complementary foods based on local foods, as well as providing complementary foods that have been adjusted to the AKG based on age groups, and providing media in the form of leaflets, handbooks for cadres, and posters. There was an increase in knowledge as evidenced by the increase in pretest and posttest scores for the three activities, namely the average pretest score was 57.75 and increased by 41.39% to an average score of 81.78 after the activity was completed, with a significance value of <0.05, which means there was a significant difference between the pretest and posttest. Community service activities can improve the knowledge and skills of all Posyandu cadres and can provide changes in the consumption patterns of complementary feeding given to all toddlers at Posyandu. Keywords: Posyandu Cadres, MP-ASI, Functional Food, Empowerment, Stunting
