Abstract

Metabolism plays a role in changing food substances such as glucose, amino acids, and fatty acids into compounds needed for life processes such as energy sources (ATP). Metabolic processes that occur in all body tissues which occur under the same conditions or reaction conditions require physicochemical and chemical requirements that are not much different from each other. Fat is considered by many to be a component of a diet that must be reduced as much as possible. However, this is not beneficial for health because of a certain amount of fat, usually about 30% of the total energy needed to carry out its functions properly in the body. Sources of fat usually there are many from animal sources, one of which contains a lot of pork fat content in it. However, according to Islamic teachings and written in Al-Quran that pork should not be consumed because it is included in illicit food. This paper aims to find out the understanding of fat metabolism, to find out the fat content in the body of pigs, and to know the unlawfulness of pork in Al-Quran. The writing method used is the method of literature, the author gets information through various references from the internet, as well as Al-Quran and commentary books. This paper was made as a reference or guide for readers and also lecturers and students of UIN Sunan Gunung Djati Bandung, especially the chemistry department of the Faculty of Science and Technology in the learning process as a manifestation of Revelation Guiding Science (WMI). In addition, we can practice in life.

Abstract

Meningkatnya aktivitas masyarakat Kabupaten Kuningan tanpa memperhatikan lingkungan menyebabkan terjadinya pencemaran, salah satunya pencemaran sumber air minum sehingga menurunkan kualitasnya. Bakteri coliform merupakan mikroorganisme yang lazim digunakan sebagai indikator air yang terkontaminasi oleh patogen. Pada penelitian ini bertujuan menentukan kelayakan serta jumlah bakteri coliform dalam sampel air minum PAMSIMAS yang berasal dari tujuh sumber mata air di Kabupaten Kuningan. Metode analisis yang digunakan berdasarkan metode Most Probable Number (MPN) dengan melibatkan dua tahapan uji, yakni uji penduga pada media Lactose Broth (LB) single strength dan triple strength serta media Escherchia coli Broth (ECB). Kemudian, dilanjutkan tahap uji penegas pada media Brilian Green Lactose Broth (BGLB) dan Eosin Methylen Blue (EMB). Hasil penelitian menunjukkan pada uji penduga semua sampel dalam media LB positif mengandung bakteri coliform sedangkan dalam media ECB terdapat tiga sampel positif mengandung bakteri Escherichia coli. Tahapan uji penegas pada media BGLB menunjukkan enam sampel mengandung bakteri coliform dengan jumlah berbeda-beda. Sedangkan uji penegas pada media EMB hanya satu sampel yang menunjukkan hasil positif mengandung bakteri jenis E. coli. Sehingga berdasarkan PERMENKES nomor 492 tahun 2010 bahwa sampel air minum PAMSIMAS yang berasal dari tujuh sumber mata air di kabupaten Kuningan tidak memenuhi baku mutu dan tidak layak konsumsi. Abstract

The mouth is an ideal place for the growth and development of microorganisms because the mouth has moisture and a regular intake of food. Microbes found in the mouth, namely Staphylococcus aureus which can cause bad breath, one type of plant that is used as a bad breath remover is betel leaf. Betel leaf (Piper betle Linn) contains chavikol and betlephenol which can inhibit bacterial growth. This study aims to identify the class of compounds in betel leaf that have potential as antibacterial properties against S. aureus bacteria. The betel leaf was dried, then crushed to expand the surface of the sample (simplicia). Simplicia as much as 300 grams of macerated stratified with n-hexane, ethyl acetate and ethanol. The result was evaporated and the weight of each extract was 6.4371 g (n-hexane), 8.8007 g (etylacetate) and 9.2173 g (ethanol). Phytochemical tests and thin layer chromatography (TLC) using eluent n-hexane and ethyl acetate (8: 2) showed that n-hexane extract was thought to contain flavonoids, ethyl acetate extract containing saponins and ethanol extract containing polyphenols. Antibacterial activity test was carried out by using the paper disc diffusion method. Both the n-hexane extract and the ethanol extract of betel leaf showed very strong antibacterial activity, characterized by a diameter of inhibition above 20 mm.

Abstract

The purpose of this research is to discuss the hadith of the prophet Saw. about iron. This method of research is qualitative through the takhrij and syarah hadith approaches a chemical analysis. The results and discussions of this research are ways of eliminating and preventing rusty iron. The conclusion of this research is takhrij and syarah hadith of the prophet Saw. about iron by chemical analysis in optimizing iron use with plans to prevent it.

Abstract

The purpose of this research is to discuss the hadith of the Prophet Saw. about the use of soil as purification mughallazah unclean. This research method is qualitative through the takhrij and syarah hadith approaches with chemical analysis. The results and discussion of this study is that the components contained in the soil can clean and adsorb bacteria from dog saliva. The conclusion of this research is takhrij and syarah hadith of the Prophet Saw. regarding the use of soil as a purifier for mughallazah unclean with chemical analysis it is proven that bacteria or viruses in dog saliva can be absorbed by the soil.

Abstract

This study aims to discuss the hadith of the Prophet Muhammadﷺ about the role of soil as one of the materials used to clean dog saliva feces. This research method is qualitative through the approach of takhrij and syarah hadith with chemical analysis. The results and discussion of this research are that since the time of the Prophet until now the soil has been believed as a material used to purify dog ​​saliva, especially with the presence of research through the field of chemistry. This study concludes that the hadith is concluded to be of authentic quality and the truth of the content of the hadith can be proven, that by chemical analysis of the soil has a usefulness that has been tested to be able to clean the feces of dog saliva.

Abstract

Tempeh is a fermented food product that has the potential as a source of antioxidants and contains several nutrients needed by the body. The existence of innovation in terms of raw materials, namely the addition of other types of beans such as lima beans (Phaseolus lunatus L) has the potential to minimize soybean imports from outside. There are two factors that can affect the quality of tempeh during the fermentation process, namely the concentration of added yeast and also the length of fermentation time, so it is necessary to do research on the effect of these two factors. The method used in this study was a Randomized Block Design (RBD) with 2 factors and 2 repetitions. The first factor is yeast concentration with 3 variations (1.5%, 2% and 2.5%) and the second factor is fermentation time with 3 variations (42 hours, 48 hours and 54 hours). Furthermore, the analysis of the influence of these two factors on nutritional value using the proximate method (including water content, ash content, fat content, protein content and carbohydrate content), antioxidant activity using the DPPH method and organoleptic tests. The results showed that the addition of yeast concentration and fermentation time had a significant effect on the nutritional value, antioxidant activity and organoleptic. The best treatment was obtained in soybean tempeh combination of lima beans with the addition of 2.5% yeast concentration and 42 hours fermentation time, namely water content 60.92%, ash content 0.76%, fat content 1.33%, protein content 31.45%. and carbohydrate content of 5.54%, antioxidant activity of 34.23% and based on organoleptic tests are preferred and acceptable among the public.

Abstract

Plastic packaging on food has a negative impact on the environment because it is non-biodegradable. One way that can be done to overcome this problem is to replace plastic packaging on non-biodegradable food with biodegradable plastic, so that edible films are developed. An example of a material that can be used in the manufacture of edible films is potato starch. Edible films made of polysaccharides have low mechanical properties, so it is necessary to add a material that can improve the mechanical properties, namely plasticizer. The addition of sorbitol as a plasticizer is expected to improve the mechanical properties caused. In this study, the manufacture of edible films began with the extraction of potato starch, then added with sorbitol plasticizer with a concentration variation of 0.6; 0.9; and 1.2% (v/v). The edible film formed was then characterized by testing its physical and mechanical properties. Then applied as pineapple lunkhead packaging and hedonic organoleptic tests and descriptions were carried out. The addition of variations in the concentration of sorbitol affects the physical and mechanical properties caused. The morphology of the edible film was shown by SEM to determine the homogeneity of the mixture between starch and plasticizer. The best treatment in this study was edible film with the addition of 0.9% (v/v) sorbitol variation with a thickness of 0.0922 mm, tensile strength 9.84 MPa, elongation 16%, Young's modulus 0.615 MPa, and water uptake 111.39 %. The resulting edible film has a good level of homogeneity and a smooth surface. Application of edible film from potato starch as packaging on pineapple lunkhead can be accepted as an alternative packaging material for food based on organoleptic tests

Abstract

The purpose of this research is to discuss the hadith of the Prophet Muhammad Saw. about the hadith's point of view on iron. This research method is qualitative through the takhrij and sharah hadith approaches with chemical analysis. The results and discussion of this research are about the phenomenon of iron rusting and also about the benefits of iron in all aspects of life. This research concludes that the presence of iron is at the same time a phenomenon that has existed since the time of the Prophet Muhammad Saw. brings many benefits in human life based on takhrij and sharah hadith. This study recommends developing the benefits of iron through chemistry

Abstract

Breastfeeding is one of the most important activities for child development. Breastfeeding is a very important part of the process of growing children who are strong and healthy, both physically and spiritually. Breastfeeding activities not only have an impact on providing nutrition but also on the stimulation of the psychological aspects of the breastfed baby. Islam recommends that a mother breastfeed her baby for two years. Reviewing this explanation, it is necessary to conduct research that integrates religious studies related to the study of Al-Baqoroh verse 233 with chemistry related to the content of breast milk and also with psychology that examines the psychology of children who receive breast milk for 2 years and those who do not get breast milk at all. The research method was carried out by reviewing the interpretation of the Qur'an Surah Al-Baqoroh verse 233 from various experts, examining the chemical content of breast milk from various experts, and carrying out psychiatric observations on 50 school-age children. Based on the results of a literature study related to the study of Al-Baqoroh verse 233 and the chemical analysis of breast milk content with the results of psychological analysis of children who received breast milk for 2 years, it shows that there is an association or relationship. The commands in the Qur'an are in line with the many benefits of breastfeeding, as well as effects on child psychology.
