Abstract

Food is a basic need that must be available all the time for human survival. Food as a source of energy must be of high quality. In 2016, the Indonesia Ministry of Health issued a program on the consumption of nutrition and safety food. Indonesia is the country with the most Muslim population in the world with 87.17 % of the total Indonesian population of 255,461,700 people (BPS, 2015). It is well known that to get proper food by an individual is consider as ones’ right that must be satisfy. Therefore, food as a strategic commodity perceive to satisfy the right of an individual to obtain a proper consumption of food. Halal food does not only cover religious aspects. Halal certified products have gone through the production process which takes quality, processing, and cleanliness of a product into account. The demand for halal food products is increasing and has been widely proven on the market implementation. Not only in Muslim-majority countries but in developed countries which do have high living standards including standards for quality assurance of food products. The respondents of the study are household wives reside in Aur Duri Residential and Kota Baru Residential, Jambi. The study collected 96 respondents who filled up the surveys. Moreover, the study signified that there are 43 (44 %) respondents who prefer the MUI Halal logo affect their purchase intention. It is influenced by characteristics in terms of religion, age and education. Knowledge, compliance based on beliefs, and awareness of quality assurance and food security affects the perceptions of household wives to the decision to purchase food with halal logo MUI packaging. The marketing strategy that most influences the purchase intention on an individual are price and products that become daily necessities.

Abstract

Abstract— Dioscorea alata grown in many areas of the world has been intensively studied. However none of Indonesian cultivar has been intensively studied for their properties and its utilization in food industry. This research was aimed to compare the properties of purple Dioscorea alata’s flour produced using different methods and to study the effect of partly substituted wheat by purple Dioscorea alata’s flour on the characteristic of wet noodles. The research on the properties of purple Dioscorea alata’s flour was conducted using complete random design with treatment on the methods used to produce flour: control, steaming, soaking in 1% citric acid solution + steaming, blanching + soaking in 1% citric acid solution + steaming and blanching + soaking in 2% ascorbic acid solution + steaming.These 5 methods were repeated 4 times. The research on utilization of Dioscoreaalata’s flour on wet noodle was conducted using complete random design with 5 levels of treatment (0%, 10%, 20%, 30%, and 40% of Dioscorea alata’s flour) and 4 replications. The result showed that steaming the slices of tuber for 7 minutes prior to drying was an effective method to produce flour with strong natural color of purple. The concentration of Dioscorea alata’s flour significantly affects the elongation and texture of noodle (p<0.05). Except for its unpleasant grey color, wet noodle can be produced using up to 40% Dioscorea alata’s flour.

Abstract

The conventional steam-based sterilization of crude palm oil (CPO) in Indonesia is known to be energy- and water-intensive, as well as time-consuming. This necessitates more efficient and sustainable alternatives, such as microwave oven heating. While microwave applications in CPO sterilization have been explored as a more efficient and sustainable alternative, existing studies often lack comprehensive optimization and a systematic investigation of key process parameters. This study aimed to optimize fresh fruit bunch (FFB) sterilization using a microwave oven to identify optimal operating parameters for maximizing oil extraction yield and minimizing Free Fatty Acid (FFA) content. The Central Composite Design (CCD) within Response Surface Methodology (RSM) was employed as a statistical technique to model the process and ensure the validity of the results. Three independent variables were investigated: sterilization time (6–20 min), fruit mass (396–1104 g), and fruit maturity level (ripe and over-ripe), resulting in twenty-six experimental combinations. Optimal conditions for maximum yield and lowest FFA were determined at 6 min sterilization time and 550 g fruit mass for both maturity levels. Conversely, suboptimal conditions at 11.5 min and 150 g fruit mass for both maturity levels resulted in the lowest yield and highest FFA. This research provides crucial insights for developing an optimized microwave sterilization technique, enhancing palm oil processing efficiency and product quality. The findings underscore the potential for a scalable, low-energy sterilization method that could significantly reduce the environmental footprint of CPO production, instilling optimism about the positive impact of this research.

Abstract

This research aimed to study the antioxidant activity of several cultivars of fresh yam tubers and its flour and to determine the effect of processing and storage on antioxidant activity of yam flour. The research used Complete Random Design (CRD). This study was conducted in three stages and repeated 3 times.  At first stage, antioxidant activities of three types of yam were investigated.  The type of yam tuber which has the highest antioxidant activity was used for second stage. At second stage, the experiment was carried out to determine the effect of processing methods on the antioxidant activity of yam flour. The treatment which produced yam flour with the highest antioxidant activity was further used in the last stage.  At last stage, the experiment was carried out to determine the effect of storage on antioxidant activity.  At this stage, 3 different storage times was used (0 weeks, 4 weeks and 8 weeks). The results showed that types of yam and processing treatment gave significant effect on antioxidant activity, IC50, L*, a* and b*, and total anthocyanin of yam tuber and flour.  However, processing method gave insignificant effect on value of L* of yam flour. Type of yam with the highest antioxidant activity was purple yam with antioxidant activity 96,35%, IC50 44,95 μg/ml, total anthocyanin content 351,82 mg/100g, L* 46, a* 54, and b* - 21. The processing method that produce flour with the highest antioxidant activity was steaming which produce yam flour with antioxidant activity of 83.59%, IC50 67.48 μg/ml, total anthocyanin content 136.94 mg/100g, L* 66, a* 26, and b* -15. There was a decrease in antioxidant activity, total anthocyanin content, L*, a* and b* of yam flour during storage of 4 and 8 weeks
