Abstract

Holothuria edulis merupakan salah satu sumber hayati laut yang mempunyai banyak manfaat dan memiliki senyawa bioaktif. Tujuan dilakukannya penelitian ini untuk mengetahui kandungan senyawa bioaktif dan daya hambat terbaik ekstrak H. edulis basah dan kering serta  pengaruh perbedaan konsentrasi pelarut dan keadaan sempel sebagai aktivitas antibakteri Bacillus cereus dan Pseudomonas aeruginosa. Hasil dari penelitian didapatkan bahwa ekstrak etil asetat H. edulis dalam keadaan basah dengan konsentrasi 450mg/ml merupakan ekstrak terbaik. Hasil dari ekstrak H. edulis basah menunjukkan aktivitas antibakteri tertingi dengan daya hambat bakteri terluas pada bakteri B. cereus 2.8±0.2 mm dan P. aeruginosa yaitu 8.6±0.2 mm, sedangkan pada H. edulis kering pada B. cereus 1.7±0.1 mm dan P. aeruginosa yaitu 5.5 ±0.2 mm. Berdasarkan uji fitokimia dari ekstrak H. edulis basah dan kering positif mengandung alkaloid, triterpenoid, steroid, flavonoid, dan saponin. Holothuria edulis is one of marine resources that has many benefit and have bioactive compounds. The purpose of this research was to determine the content of bioactive compounds and the best extract inhibition of wet and dry H. edulis as well as the influence of the different solvent concentration and sample condition as the antibacterial activity of Bacillus cereus and Pseudomonas aeruginosa. Results of the research found that the best extracts of H. edulis is ethyl acetate extract of wet H. edulis in 450 m g/ml concentration. Results extracts of wet H. edulis show that the highest antibacterial activity with the wide blocked power on B. cereus is 2.8 ± 0.2 mm and P. aeruginosa is 8.6 ± 0.2 mm, meanwhile in dry H. edulis on B. cereus is 1.7 ± 0.1 mm and P. aeruginosa is 5.5 ± 0.2 mm. Based on phytochemicals test of wet and dry H. edulis extracts positive contains alkaloid, triterpenoid, steroid, flavonoid and saponin.

Abstract

Seahorse is one of the marine living  resources usually used as ornamental fish, traditional medicinal materials, and souvenirs. The purpose of the study was to determine the proximate composition of wet and dry seahorses, determine the profile of amino acid hydrolyzate and powder of seahorses, and determines to content of bioactive compounds from the ethanol extract of seahorses on qualitatively. The sample of this study is seahorses obtained from nature. Prviously, seahorses were morphometric identified, subsequently, seahorses were made of the powder, hydrolyzate, and ethanol extract. Several analyzes used were qualitative analysis of proximate, amino acid, and phytochemical analysis. Morphometric identification results indicate that the type is Hippocampus comes. The proximate composition is water content is 66.16 ± 0.33% (wet) and 10.33 ± 0.16% (dry), ash content of 9.55 ± 0.15% (wet) and 9.65 ± 0.16% (dry), lipid content 1.18 ± 0.23% (wet) and 4.89 ± 0.37% (dry), protein content of 22.73 ± 0.17% (wet) and 69.83 ± 0.31% (dry), carbohydrate 0.39 ± 0.23 (wet) and 5.50 ± 0.34 (dry). The amino acid composition both on hydrolyzate and powder comprising 9 essential amino acids are lysine, leucine, isoleucine, phenylalaline, valine, methionine, histidine, arginine, and threonine and 6 non essential amino acids are tyrosine, alanine, glycine, serine, glutamic acid, and aspartic acid. The results of identification of bioactive compounds is flavonoids, triterpenoids, steroids, saponins, and phenol of hydroquinone. Keywords: Hippocampus comes, proximate analysis, amino acid, and bioactive compounds

Abstract

Sea horse Hippocampus spp. is a group of unique marine biota and its distribution is spread all over the world. This study aims to determine the characteristics of seahorse Hippocampus comes from North Bintan waters by looking at the yield and degree of hydrolysis (DH) of the protein hydrolyzate sample. This samples obtained from the catch of fishermen in the North Waters of Bintan Island. The analysis is the measurement of the yield and the degree of hydrolysis. The results obtained from the study that the horse of sea H. comes from the North waters of Bintan shows that the highest yield in the sea horse body is bone that is equal to 43.69%. This proves that the seahorse is one of the ingredients that can be utilized as a further processed dry feed such as in the manufacture of flour and dried products (such as ginseng). As for the degree of hydrolysis generated from the substrate of H. comes a sea horse protein derived from meat and bone have a high value compared to the substrate of sea horse bone meal. Abstract

Ikan patin merupakan salah satu ikan asli perairan Indonesia. Pengembangan dalam usaha perikanan budidaya yaitu adalah dengan dilakukan pengolahan sebagai produk usaha agroindustri. Salah satu produk olahan hasil perikanan yang bahan baku utamanya merupakan ikan patin adalah ikan asap (salai). Ikan salai merupakan proses pengawetan ikan dengan menggunakan media asap (pengasapan) yang berasal dari pembakaran kayu atau bahan organik lainnya. Tujuan dari penelitian ini adalah untuk mengetahui metode pembuatan ikan asap (salai) patin di Sentra Pengolahan Hasil Perikanan. Lokasi penelitian yaitu bertempat di UPT. Pengolahan Dinas Perikanan Kota Kampar, Kabupaten Kampar, Provinsi Riau. Waktu penelitian dilaksanakan selama 3 bulan yaitu pada bulan Agustus sampai Oktober Tahun 2021. Jenis data yang digunakan dalam penelitian adalah data kualitatif. Sedangkan sumber data yang digunakan adalah data primer dan data sekunder. Data primer diperoleh melalui wawancara dan observasi langsung di lapangan. Analisis data yang digunakan dalam penelitian adalah analisis deskriptif kualitatif. Salai ikan patin adalah olahan tradisional yang dilakukan secara pengasapan menggunakan tungku. Sebelum ikan diasapi, ikan melewati beberapa tahap, penangkapan, pemetakan, pem-filletan yang menggunakan jenis butterfly, penyiangan, pencucian, penataan, memasukkan ikan dalam tungku, pengemasan, selanjutnya adalah pemasaran.

Abstract

Pada kurikulum merdeka, Agribisnis Pengolahan Hasil Perikanan termasuk dalam konsentrasi keahlian di program keahlian Agriteknologi Pengolahan Hasil Pertanian. Diversifkasi hasil perikanan merupakan salah satu elemen pada mata pelajaran agribisnis pengolahan hasil perikanan yang mempelajari tentang produk olahan diversifikasi yang berbahan dasar ikan. Dalam proses pembelajaran, diharapkan peserta didik mampu menguasai pengetahuan, keterampilan, dan sikap yang diperlukan untuk mengembangkan produksi diversifikasi produk hasil perikanan. Pembelajaran mengenai diversifikasi pengolahan hasil perikanan dapat mengadopsi beragam model pembelajaran, termasuk salah satunya yaitu teaching factory. Teaching Factory adalah model pembelajaran yang diharapkan mampu meningkatkan kompetensi guru dan peserta didik Kesimpulan dari artikel ini adalah penerapan (1) Teaching factory pada elemen diversifikasi hasil perikanan dapat meningkatkan kompetensi peserta didik karena peserta dapat terlibat aktif dalam pembelajaran dan suasana pembelajaran dibuat seperti di industri sehingga peserta didik mendapatkan banyak pengalaman secara nyata dalam segi pengetahuan maupun praktik. (2) Penerapan teaching factory dalam pembelajaran diversifikasi hasil perikanan dapat memberikan manfaat yang signifikan. Peserta didik dapat mengembangkan pemahaman mendalam tentang berbagai produk perikanan, keterampilan praktis dalam pengolahan ikan, dan kreativitas dalam merancang produk-produk baru. Selain itu, hal ini juga membantu peserta didik mempersiapkan diri untuk berkontribusi dalam industri perikanan dengan beragam keterampilan yang relevan. (3) Pada penerapan teaching factory dalam pembelajaran diversifikasi hasil perikanan dibutuhkan fasilitas dan peralatan yang sesuai, kolaborasi dengan industri perikanan lokal, serta pelatihan guru yang relevan.

Abstract

The increasing demand for high-value fishery products necessitates the development of safe and quality-processed seafood to support economic growth and vocational education. This study aims to develop Spanish mackerel fish cake (odeng) through the Teaching Factory program at the Fisheries Vocational High School of Riau Province, focusing on evaluating food safety. The odeng product was designed and produced by students as an effort to enhance practical skills while meeting local market demands. Food safety analysis included the measurement of moisture and ash content, as well as the detection of hazardous substances such as borax and synthetic dyes (rhodamine B and methanil yellow), to ensure product quality. The results showed a moisture content of 23.13% and an ash content of 2.33%, which complies with fish processed product standards. Tests for hazardous substances were negative, indicating that the product is safe for consumption and meets national food safety standards. This study highlights the potential of vocational education-based production systems in generating value-added fishery products with assured quality and safety. Further development and optimization are recommended to improve self-life and consumer acceptance. These findings offer valuable insights for the integration of education and industry in sustainable fishery product innovation.

Abstract

The activities of capture fisheries at The Natural Sanctuary in the Waters (SAP) area of ​​Raja Ampat Regency are mostly small-scale fisheries. The development of business the hand-line fishing gear is very important for the sustainable use of small-scale capture fisheries activities in conservation areas. The purpose of this study is to assess the feasibility of hand-line fishery business from the financial aspect and the risk of its development in the SAP area of ​​the Raja Ampat Islands and the surrounding sea. The types of data needed in this study are primary and secondary data. Data analysis used in this study includes analysis of financial parameters, investment criteria, and business risk analysis. The results showed that handline fishery business in the SAP area of ​​Raja Ampat Regency and the surrounding sea is profitable and feasible to develop. This result is seen from the analysis of the financial feasibility of the business with a profit of Rp. 9,003,171.00, the R / C ratio value of 1.11, and the payback period (PP) value of 2.95 years. In addition, it is also seen from the feasibility of investment that the value of NPV> 0, net B / C> 1, and IRR> the prevailing interest rate is 5.25%. Judging from the risk, the hand-line fishing business is categorized as not at risk to be developed. This result is seen from the value of CV (0.2) ≤ 0.5, then the value of L (8,428,400) ≥ 0, which means that the company will always profit or break even and do not experience the risk of loss.
