Abstract

The toddler years are the most important period, where children need adequate nutrition to support their physical growth. This study aims to determine the description of parenting patterns, mothers’ knowledge level, and parents' economic status for toddlers with problem nutritional status in the city center and outskirts of the city in the work area of ​​the Gambok Health Center, Sijunjung Regency in 2022. This research is a descriptive study with a cross-sectional study design. The population in this study was toddlers with problematic nutritional status (undernutrition and overnutrition) totaling 60 people. Collecting data using a questionnaire and direct measurement of the height and weight of children under five. The research results were analyzed univariately and displayed in the form of a frequency distribution table. The results of this study indicate that more than half of the bad parenting patterns (75%) in toddlers are found in the outskirts of the city, while in the city center, the parenting patterns are good (100%). More than half of the mothers (82.5%) have a good level of knowledge living in the city center, while more than half of the mothers (60%) have a low level of knowledge living in the Outskirts of the City. The economic status of parents in the City Center (95%) and Outskirts of the City (50%) already have sufficient economic status. Based on this, it can be concluded that parenting patterns, mothers’ level of knowledge, and parents' economic status are some of the factors that cause toddlers to have problematic nutritional status. This research can be developed by adding other factors that can affect the nutritional status of toddlers.

Abstract

The prevalence of diabetes mellitus (DM) in Indonesia is predicted to increase from 10.7 million in 2019 to 13.7 million by 2030. If not properly managed, DM can lead to various complications, making proper management essential. One such approach is to provide foods with a low glycemic index and high soluble fiber content. This study aims to examine the organoleptic properties and fiber content of modified baked sagun (Jagurah). The research design was an experiment using a completely randomized design (CRD) with three treatments, conducted in the Food Technology Laboratory, Department of Nutrition, Padang. Organoleptic testing involved 25 trained panelists using a 7-point scale, while proximate analysis was performed at the BSPJI Laboratory in Padang. Data analysis was conducted using the Mann-Whitney test for normal data and Kruskal-Wallis test for non-normal data. The results showed no significant differences in color, texture, aroma, and overall acceptability (p > 0.05), but there was a significant difference in taste (p = 0.00). The best formula was F3. The best Jagurah contains 327 kcal, 12.07 g protein, 11.5 g fat, 43.8 g carbohydrates, and 6.75 g fiber per 100 g. The price for a 60 g serving is Rp 4,000.

Abstract

Data dari hasil Riset Kesehatan Dasar 2013 menunjukkan bahwa penduduk berumur ≥10 tahun yang kurang mengkonsumsi buah dan sayur di Indonesia adalah 93,5% sementara Sumatera Barat sebesar 97,0%, berdasarkan Riskesdas tahun 2018 di Indonesia sebanyak 95,5% serta Sumatera Barat masih di atas angka rata-rata Indonesia. Penelitian ini bertujuan untuk mengetahui efektivitas model pemberdayaan ibu rumah tangga dan anak sekolah dalam meningkatkan konsumsi sayur. Penelitian dilakukan di kelurahan Korong Gadang Kecamatan Kuranji. Populasi anak SMPN, sampel diambil secara purposive sebanyak 35 orang. Instrumen yang digunakan adalah timbangan makanan digital dengan ketelitian  0,1 gram dan kuesiner. Data dianalisis secara deskriptif.Porsi sayur sedang, urutan tertinggi yaitu pempek wortel sebanyak 88,6%,  skotel vegeta 80%, dan yang lainnya diatas 50 dan kebanyakan sampel suka terhadap model sayuran yaitu tertinggi bakwan sayuran (74,3%) sedangkan yang lainnya diatas 50 dan tidak ada sampel yang menyatakan tidak suka sayur. Jumlah sayur yang terdapat dalam model sayur yang dimodifikasi untuk satu kali penyajian berkisar antara 35gr–50gr. Sehingga dengan pemberian satu jenis model sayur sudah dapat meningkatkan konsumsi sayur sekitar 35gr –50gr. Perlu sosialisasi kepada masyarakat agar memproduksi model masakan sayur yang telah tersedia dan kerjasama dengan sekolah untuk penyediaan model masakan sayur agar tersedia di kantin sekolah.Kata Kunci : Pemberdayaan; Ibu dan Anak; Konsumsi Sayur

Abstract

Yogurt is a functional food that contains probiotic bacteria beneficial for health. The addition of inulin fiber is considered to increase the fiber content of the product, thereby enhancing its benefits. The purpose of this study was to determine the effect of inulin addition on the organoleptic quality, fiber content, and acceptability of yogurt. The study used a completely randomized design (CRD) with one control, three treatments, and two repetitions. The amounts of inulin added were 7.5, 10, and 12.5 grams per portion. Data were analyzed using the Kruskal-Wallis test at the 5% level. Organoleptic test results showed that the average level of panelists' preference for taste, aroma, color, and texture was highest in treatment F2, with the addition of 7.5 grams of inulin. The test results indicated that the best treatment in terms of sensory taste, aroma, color, and texture was treatment F2, with the addition of 10 grams of inulin. There was a significant effect of inulin addition on the texture and taste of yogurt (p<0.05). The acceptability of yogurt with inulin addition was 92.8%. The fiber content test revealed a fiber content of 12.78%. It can be concluded that the addition of inulin to yogurt affects the organoleptic qualities of texture and taste and increases fiber content and product acceptability. The best results were obtained with the addition of 10 grams per portion. Further research is recommended to evaluate the number of bacteria and the shelf life of yogurt with added inulin.
