Abstract

The purpose of this study was to determine the effect of glycemic load diet on blood glucose levels of adolescent soccer athletes. This study used a type of quasi-experimental research with one group pretest-posttest design. The subjects in this study were 20 soccer athletes aged 15-18 years at PPLP West Sumatra. Subjects were given 4 treatments with a one-week washout period. The diet given is in the form of setting a High IG diet with High BG. High IG with Low BG, Low IG with High BG, and Low IG with Low BG. The data taken were blood glucose levels before the intervention, blood glucose 2 hours postpandrial, and blood glucose shortly after exercise. Blood glucose levels were analyzed using repeated measures ANOVA test and one way ANOVA test (p<0,05). Based on the one way ANOVA test, there was no difference in blood glucose levels in the four groups (p>0,05). Fluctuations in blood glucose levels occurred stably in the treatment of low glycemic load diets. Low glycemic load diets are able to maintain blood glucose levels during exercise. Tujuan penelitian ini adalah untuk mengetahui pengaruh diet beban glikemik terhadap kadar glukosa darah atlet sepak bola remaja. Penelitian ini menggunakan jenis penelitian quasi experimental dengan desain one group pretest-posttest dengan subjek sebanyak 20 orang atlet sepak bola berusia 15-18 tahun di PPLP Sumatera Barat. Subjek diberikan 4 perlakuan dengan waktu satu minggu. Diet yang diberikan berupa pengaturan diet Indeks Glikemik (IG) Tinggi dengan Beban Glikemik (BG) Tinggi (TT), IG Tinggi dengan BG Rendah (TR), IG Rendah dengan BG Tinggi (RT), dan IG Rendah dengan BG Rendah (RR). Data yang diambil yaitu kadar glukosa darah sebelum intervensi (KGD1), glukosa darah 2 jam postpandrial (KGD 2), dan glukosa darah sesaat setelah latihan (KGD 3). Kadar glukosa darah dianalisis menggunakan uji repeated measures ANOVA dan uji one way ANOVA. Berdasarkan uji repeated measures ANOVA, terdapat perbedaan kadar glukosa darah 2 jam postpandrial dengan sesaat setelah latihan lari pada perlakuan TT dan RT (p<0,05). Berdasarkan uji one way ANOVA tidak terdapat perbedaan kadar glukosa darah pada keempat kelompok (p>0,05). Fluktuasi kadar glukosa darah terjadi secara stabil pada perlakuan diet beban glikemik rendah. Diet beban glikemik rendah mampu mempertahankan kadar glukosa darah saat latihan.

Abstract

Malnutrition in infants will cause growth and development problems, if not addressed early can continue into adulthood. Age 0-24 months is a period of rapid growth and development, or also known as the golden period as well as a critical period. The golden period can be realized if during this time infants and children obtain appropriate nutritional intake for optimal growth and development.1 Provision of nutrient-dense and safe food for infants as complementary foods (AS-ASI) should be given from the age of six months. Babies need additional energy by 24-30% because the nutritional content of milk is not sufficient. One of the local food sources of protein that can be used as MP-ASI material is catfish (Clarias gariepinus). Catfish is a freshwater fish that is easily found and has a protein content of 68.6%. The purpose of this study is to determine the nutrient content, both in mocrobiology and chemistry as well as the shelf life of MP-ASI instant baby porridge with the substitution of catfish flour and pumpkin flour. This research is a continuation of previous research. Type of experimental research, descriptive data processing. Results: The best assessment results in the first stage of 2018 were Formula A, namely substitution of 15% catfish flour, 10% Pumpkin flour. The results of the quality and microbiology tests obtained were tests of water content, ash content, metal contamination and microbiological tests of MPASI pulp substituted with catfish flour and yellow pumpkin flour were within the standard limits of the instant MPASI SNI set by the Government. The nutritional value of MPASI is in the range of SNI 01-7111-1-2005 and the shelf life of MPASI has been up to five months. There are no signs of organoleptic damage to the color, taste, aroma of the porridge both stored at room temperature and stored in the refregerator. It can be concluded that MPASI porridge substituted with catfish flour and pumpkin flour is safe for consumption by babies 6-12 months, has good nutritional value and can be used as an alternative food to prevent malnutrition and stunting. It is recommended that this MPASI be used for handling infants who are experiencing acute malnutrition both at the Posyandu and at the Puskesmas as Supplementary food to Babies from local food. Further research needs to be given to infants aged 6-12 months, and see changes in body weight.

Abstract

Noodles are one of the foods that are accepted not only by adult but also by children. Wet noodles are one type of noodle that contains high carbohydrates but low protein. There is a gap in the minimum protein content in the type of wet noodles commonly sold on the market, which is 8,4 grams. Therefore, it is necessary to add a protein source in the form of dry rebon shrimp flour. The purpose of this research was to determine the best treatment and organoleptic quality of nutrient dense noodles substituted with dried rebon shrimp flour. This research is experimental research in the field of food technology with a completely randomized design with one control, three treatment, and two repetitions. The organoleptic test was carried out at the Food Science Laboratory, Department of Nutrition at Polytechnic Health of Padang. The research was conducted from March 2020 to April 2021. Data analysis using the Kruskal Wallis test was followed by the Mann Whitney test if there were significant differences. The results of the Kruskal Wallis test showed significant differences in the colour, scent, flavor, and texture of wet noodles. The result found that the best treatment was a ratio of 75:25 grams. It is recommended to use substitution of 25 grams of dry rebon shrimp flour in making wet noodles.

Abstract

Yogurt is a functional food that contains probiotic bacteria beneficial for health. The addition of inulin fiber is considered to increase the fiber content of the product, thereby enhancing its benefits. The purpose of this study was to determine the effect of inulin addition on the organoleptic quality, fiber content, and acceptability of yogurt. The study used a completely randomized design (CRD) with one control, three treatments, and two repetitions. The amounts of inulin added were 7.5, 10, and 12.5 grams per portion. Data were analyzed using the Kruskal-Wallis test at the 5% level. Organoleptic test results showed that the average level of panelists' preference for taste, aroma, color, and texture was highest in treatment F2, with the addition of 7.5 grams of inulin. The test results indicated that the best treatment in terms of sensory taste, aroma, color, and texture was treatment F2, with the addition of 10 grams of inulin. There was a significant effect of inulin addition on the texture and taste of yogurt (p<0.05). The acceptability of yogurt with inulin addition was 92.8%. The fiber content test revealed a fiber content of 12.78%. It can be concluded that the addition of inulin to yogurt affects the organoleptic qualities of texture and taste and increases fiber content and product acceptability. The best results were obtained with the addition of 10 grams per portion. Further research is recommended to evaluate the number of bacteria and the shelf life of yogurt with added inulin.

Abstract

Background: Psychobiotics, including probiotics, prebiotics, and synbiotics, have been proposed to improve mental health through modulation of the gut–brain axis. However, findings from randomized controlled trials (RCTs) remain inconsistent, Objectives: To systematically review and synthesize evidence on the effects of probiotics, prebiotics, and synbiotics on depression, stress, and mood in adult populations. Methods: A comprehensive search was conducted in PubMed, yielding 531 articles, of which 14 RCTs met the inclusion criteria. Risk of bias was assessed using the Cochrane Risk of Bias Tool. Meta-analyses were performed using both fixed- and random-effects models in RevMan. The study protocol was registered in PROSPERO (CRD420251103338). Discussions: Ten RCTs (n = 881) assessing depression did not show consistent benefits (SMD = –0.72; 95% CI: –1.42 to –0.01; p-value = 0.05; I² = 96%). Six RCTs (n = 444) evaluating stress also showed non-significant effects (MD = –1.35; 95% CI: –3.70 to 1.01; p-value = 0.26; I² = 73%). Conversely, six RCTs (n = 376) demonstrated significant improvements in mood (MD = 0.73; 95% CI: 0.25 to 1.20; p-value = 0.003; I² = 75%). Meta-regression indicated that larger sample sizes were associated with more consistent improvements in mood (p-value = 0.04). Sensitivity analyses confirmed the stability of the findings, and no evidence of publication bias was detected. Conclusions: Probiotic, prebiotic, and synbiotic supplementation may provide beneficial effects on mood and could serve as a potential nutritional intervention to enhance psychological health. However, effects on depression and stress inconsistent.
