Abstract

Red dragon (Hylocereus polyrhizus) fruit peel as household waste was still underutilized although it was high in bioactive compounds with antioxidant and antidiabetic properties. The oil extract of freshwater fish, such as catfish (Pangasius sp.) was high in monounsaturated fatty acids with reported antihyperglycemia properties. The objectives of this study were to encapsulate catfish oil extract, determine the most liked formulation of gummy candy with dragon fruit peel extract and encapsulated fish oil beads content, and analyze the proximate content and in vitro α-amylase inhibition activity of the most liked gummy candy formulation. The methods consisted of dragon fruit peel extraction, encapsulation of catfish oil extract using sodium alginate, gummy candy formulation, sensory evaluation, and analysis of color, proximate, and α-amylase inhibition activity. Twenty five percent w/w of the gummy candy ingredients were composed of the extracts and encapsulation beads at 1:1, 1:3, and 3:1 weight ratios. Encapsulation of the fish oil could mask the fishy odor in the gummy candy. All formulation could be molded into gummy candy perfectly and showed chewy texture. The addition of dragon fruit peel extract could increase the yellowness value, while the fish oil beads decreased the lightness value of the candy. The most liked gummy candy formulation was F3 (ratio 3:1). It was composed of 54.47% water, 1.59% db ash, 5.77% db fat, 1.82% db protein, 36.36% db carbohydrates and showed 46.49% α-amylase inhibition activity.

Abstract

The objectives of this study were to develop a functional beverage containing Germinated Red Rice (GRR) and tempeh powders and analyze the total soluble phenolic content, phenolics profile, in vitro antioxidant activity, and sensory evaluation. A mixture of GRR and tempeh powder at 1:2, 1:1, and 2:1 w/w ratios were mixed with water at 6% w/v concentration. The total soluble phenolic content and the antioxidant activity of the samples increased significantly (p<0.05) with the increasing level of GRR powder and the decreasing level of tempeh powder, whereas 2:1 w/w ratio of GRR and tempeh powder showed the highest total soluble phenolic content (79.79±12.10 ìg/ml GAE) and in vitro antioxidant activity (68.84±1.56%). However, a control beverage containing only GRR powder and only tempeh powder had the highest and lowest total soluble phenolic content and antioxidant activity, respectively. Ferulic acid was detected in all samples containing GRR, while daidzein was not detected and genistein was only detected in 1:2 and 1:1 sample ratios. All formulated samples in lemongrass sugar solution were accepted by the panelists (score 5 out of 7). In conclusion, GRR was responsible to increase the total soluble phenolic content and antioxidant activity of the beverage. A loss of isoflavone in the tempeh-containing beverage samples suggested that optimizing the dose and processing method were important to achieve the optimum health benefits of the ingredients.

Abstract

Blue cheese is a semi-soft ripened cheese that involves the growth of Penicillium roqueforti in the ripening process. Cheese has a longer shelf life compared to raw milk and the production of cheese will give added value to the finished product, which, therefore, can benefit local dairy farmers in Indonesia. The objective of this study was to produce a new variant of blue cheese which was made from a mixture of fresh cow's milk (Frisian Holstein cow) and skimmed milk powder and which had a high vitamin B12, folic acid, and iron content. Blue cheeses for this study were made by milk fermentation with the addition of a nonpathogenic strain of Klebsiella pneumoniae in the cheese preparation and fortification of folic acid and iron. This study showed that blue cheeses had been successfully made from a mixture of fresh cow's milk and skimmed milk at a ratio of 1:1 and acceptable by 42 untrained panelists. Compared to the commercial blue cheese, the addition of K. pneumoniae (0.8% v/v) and fortification (0.08 g L-1 of premix) had positive effects in increasing the amount of vitamin B12, folic acid, and iron up to 2.7, 13.64, and 102.86 ppm on dry-weight basis, respectively. However, blue cheese made without K. pneumoniae was the most preferred and had the highest scores for texture, taste and aroma.

Abstract

COVID-19, a source of distress in most countries, has encouraged world leaders to issue necessary policies to resolve this global pandemic. An alarming rate of infections in the community has pushed the Indonesian government to come up with the Large-Scale Social Restriction (Pembatasan Sosial Berskala Besar/PSBB). The faculty of Biotechnology of Atma Jaya Catholic University of Indonesia has since initiated a community service to halt the spread of COVID-19 by supplying simple hand washing facilities around Pasar Genteng Traditional market in Suradita, Cisauk. Prior to the installations, the traditional market lacked proper sanitizing facilities. Clean water sources such as taps are commonly situated far away from the marketplace. Traders and visitors crowd these areas each day, exponentially increasing the risk of spreading COVID-19. The crowded populations of the traditional market are a motivating factor for this community service, which aims to increase the public awareness in the prevention of COVID-19. Activities of this community service includes installations of hand washing facilities along with educational infographics of proper sanitizing procedures. A total of 21 participants attended the community service while maintaining physical distancing conditions and were encouraged to use the hand wash facilities at the end of the service. The community service was successful, providing impactful benefits towards the traders and visitors, with a raised community awareness of the importance of personal hygiene. The facilities are well maintained after 4 weeks and exemplary community awareness is displayed from their initiative that showed from the monitoring and evaluation results.  ABSTRAK:COVID-19, yang merupakan sumber penyebab keresahan berbagai negara di dunia telah menyebabkan pemerintah dunia mengeluarkan kebijakan untuk mengatasi pandemi yang terjadi secara global ini. Data di Indonesia menunjukkan angka terinfeksi yang terus meningkat sehingga pemerintah mengeluarkan kebijakan berupa Pembatasan Sosial Berskala Besar (PSBB). Oleh karena itu, Fakultas Teknobiologi Universitas Katolik Indonesia Atma Jaya berinisiatif melakukan kegiatan pengabdian masyarakat untuk menghambat tingkat penyebaran COVID-19 melalui penyediaan sarana cuci tangan sederhana di Pasar Genteng. Pasar tradisional ini terletak di kompleks Suradita, Cisauk. Sebelum kegiatan pemasangan, pasar ini kekurangan fasilitas sanitasi yang layak. Sumber air bersih seperti air sumur terletak jauh dari pasar dan belum ada akses air ledeng. Setiap hari pedagang dan pengunjung memadati pasar sehingga meningkatkan risiko penyebaran COVID-19. Oleh karena itu, kegiatan pengabdian masyarakat ini difokuskan pada pembuatan dan pemasangan fasilitas cuci tangan sederhana yang dilengkapi dengan infografis tentang cara mencuci tangan yang benar serta pembagian masker kain. Serah terima perangkat cuci tangan dan acara pembukaan dihadiri oleh 21 orang peserta dengan tetap memperhatikan protokol kesehatan. Kegiatan pengabdian masyarakat melalui penyediaan sarana cuci tangan sederhana di Pasar Genteng, Cisauk telah berlangsung dengan baik dan dirasakan manfaatnya oleh para pedagang dan pengunjung pasar. Sarana cuci tangan sederhana ini diharapkan dapat meningkatkan kesadaran masyarakat tentang pentingnya menjaga kebersihan diri dalam rangka pencegahan penyebaran COVID-19. Sarana cuci tangan tersebut masih dalam kondisi baik setelah empat minggu dan kesadaran masyarakat juga cukup baik yang terlihat dari hasil monitoring dan evaluasi.

Abstract

Kombucha is a health drink made from fermented tea with Symbiotic Culture of Bacteria and Yeast (SCOBY), which can help consumers to maintain their immune systems. Due to the health benefits of Kombucha products, the Faculty of Biotechnology, Atma Jaya Catholic University of Indonesia, and the National Research and Innovation Agency (BRIN) conducted community service activities by training in making kombucha combined with butterfly tea extract. The purpose of this activity is to train the manufacture of kombucha food product-butterfly tea extract and explain the business potential of the kombucha product-butterfly tea extract to the residents of Pagedangan Village. To measure the increase in residents' knowledge, the service team conducted pre-test and post-test sessions using the quizizz application on each resident's cellphone. The results of the kombucha training in the village of Padegangan have had a positive and influential impact on increasing the knowledge of the residents who were tested using the Wilcoxon Rank Test analysis of the results of the pre-test and post-test. The material delivered to the four speakers showed positive results, which were judged by the results of filling out the event feedback link via platform forms. Overall, the training held was considered to have run smoothly.   Abstrak: Kombucha merupakan minuman kesehatan hasil fermentasi teh dengan Symbiotic Culture of Bacteria and Yeast (SCOBY) yang dapat membantu konsumennya untuk menjaga sistem imun. Dikarenakan manfaat kesehatan dari produk Kombucha, Fakultas Teknobiologi, Universitas Katolik Indonesia Atma Jaya dan Badan Riset dan Inovasi Nasional (BRIN) melakukan kegiatan pengabdian masyarakat dengan pelatihan pembuatan kombucha yang dipadukan dengan ekstrak bunga telang. Tujuan kegiatan ini adalah untuk melatih pembuatan produk pangan kombucha-ekstrak bunga telang dan memaparkan potensi usaha dari produk kombucha-ekstrak bunga telang kepada warga Desa Pagedangan. Untuk mengukur peningkatan pengetahuan warga, tim pengabdi melakukan sesi pre-test dan post-test menggunakan aplikasi quizizz pada handphone masing-masing warga. Hasil pelatihan kombucha di desa Padegangan sudah berdampak positif dan berpengaruh pada peningkatan pengetahuan warga yang diuji dengan menggunakan analisis Wilcoxon Rank Test terhadap hasil pre-test dan post-test. Penyampaian materi yang dilakukan pada keempat pembicara menunjukkan hasil yang positif yang dinilai dengan hasil pengisian link feedback acara melalui platform forms. Secara keseluruhan pelatihan yang diadakan sudah dinilai berjalan dengan lancar.

Abstract

Prospective students were included in the 12 to 18 years old age category of people who are permitted to obtain Covid-19 vaccine starting on June 2021. Face-to-face learning has been implemented soon after most students received full dose of vaccination. The objective of this program was to provide social campaign activities to high school students, particularly those who have enrolled in the Faculty of Biotechnology, Atma Jaya Catholic University of Indonesia as new students in 2022, so that they could understand the importance of maintaining healthy lifestyle and following the recommended health protocols, obtain the right fact about Covid-19 vaccine, and act smart to reduce masks waste in order to prevent the transmission and infection of Covid-19 virus. The campaign “Biotech Talk” was performed virtually and in an asynchronous mode using an official social media account of the faculty, such as Instagram and YouTube. It was held for 6 weeks, starting on October 1st to November 16th, 2021, in the form of infographics and mini talk show videos. The same video content in Instagram received higher numbers of viewers and likes as compared to that in YouTube. Viewers were also encouraged to fill in the post-test and questionnaire of each episode as a method of evaluating the social engagement and interest of the video. The mean score of all episodes’ post-test was high (minimum 77 out of 100) and 60% of the respondents stated that the contents were clearly explained and relevant to the theme. Biotech Talk has been held in a timely manner and able to improve the viewer’s knowledge on healthy and smart lifestyle in the pandemic era as a preparation of face-to-face learning in the university.

Abstract

Taman pembelajaran merupakan sarana rekreasi yang dapat menjadi wadah pembelajaran, khususnya mata pelajaran Biologi. Pelatihan hidroponik dilakukan kepada guru-guru Sekolah Athalia. Sekolah Athalia sudah memiliki perangkat hidroponik yang dapat dimanfaatkan oleh guru dan siswa/i untuk pembelajaran. Namun, selama masa pandemi COVID-19 fasilitas ini tidak digunakan secara maksimal karena mayoritas pembelajaran dilakukan secara daring dan tidak ada guru yang memiliki pengetahuan teknik hidroponik yang cukup untuk ditugaskan menjadi penanggung jawab. Perangkat hidroponik yang dimiliki Sekolah Athalia memiliki sistem DFT dengan dua ratus lubang dan diberikan dua buah perangkat wick yang dapat dimanfaatkan kembali. Pelatihan dilaksanakan secara luring yang meliputi teori dan praktik teknik hidroponik yang diharapkan dapat memaksimalkan pemanfaatan fasilitas hidroponik yang telah ada. Hasil dimonitor selama empat minggu di grup whatsapp dan juga dilakukan pengamatan pertumbuhan tanaman selama dua bulan setelah pelatihan mulai dari tinggi daun tanaman dalam cm, jumlah daun dihitung dalam helai, dan bobot tanaman dalam gram. Data tumbuhan diolah menggunakan IBM SPSS. Evaluasi dilakukan dalam bentuk microsoft forms. Terdapat hasil pertumbuhan yang signifikan terhadap tinggi dan jumlah daun pada setiap baki. Ada juga bobot penambahan tanaman, tetapi tidak sesignifikan tinggi tanaman. Dari evaluasi, peserta merasa cukup puas dan memahami pelatihan meskipun tempat, waktu, serta minat peserta mendapat nilai yang tidak begitu tinggi.

Abstract

Previous clinical trials using virgin coconut oil (VCO) showed a potential anti-obesity effect, including for human, by reducing the waist circumference. However, there was not discovered any research that examined its anti-obesity effect in relation with gut microbiota parameters as one of current approaches of obesity parameters, for example Firmicutes and Bacteroidetes. This research was conducted to examine the effect of VCO supplementation on the change of Firmicutes and Bacteroidetes in comparison to the anthropometrical parameters. The experiment was done using 14 days obese-induced female Sprague-Dawley rats supplemented with 0.01% w/w and 0.02% w/w VCO for 28 days. The anthropometric data collection consisted of body weight (BW), body mass index (BMI), abdominal circumference (AC), and body length (BL). Ratio changes in –fold increase between Day 28 and Day 0 of Bacteroidetes and Firmicutes were retrieved by using relative quantification normalized against unit mass calculation, using the cycle threshold values from real-time polymerase chain reaction (RT-PCR) method with SYBR Green fluorescence and standard curve derived from tenfold 5 points dilution series of recombinant plasmid for efficiency calculation. VCO supplementation stimulated significant increase on anthropometric parameters on BW and AC (p<0.05), while insignificant changes were shown on Bacteroidetes and Firmicutes ratio with tendency of increasing and decreasing respectfully, with no significance. The result indicated that VCO supplementation in the given doses promoted pro-obesity effect on key anthropometric parameters, while showed potential anti-obesity effect on the gut microbiota parameter. Further researches were needed especially in determining the effective dose to promote the anti-obesity effect of VCO and revealing any possible cellular and molecular mechanisms.
