Abstract

The research aimed to identify types of forest vegetation found in anoa rumen dygesta which inhabit Tompu-Rararanggonau forest and Dungi Dungi Forest of Nasional Park using a Dygesta analysis method. The results of identification showed that there were five different types of vegetation found in the anoa rumen dygesta: pokae fruits (Ficus vasculosa Rump), pakis leaves (Scleria purpurescens), beringin shoots (Ficus sp.), knife grass (Panicum sp.) and kolonjono grass (Brachiaria mutica) which were in the proportion range of 51- 78%. The other kinds of vegetation found were Spinach (Ipomea aquatica Fordk), katimba shoots (Zingiber officianate Rose), banana leaves/shoots (Musa sp.), rock plant leaves and alang-alang leaves (Imperata cylindrica) which were in the proportion range of17 - 36%.

Abstract

In Indonesia, meat supply is much less than the demand.  The national meat production in 2006 was 2.070.234 t year-1 (DJP 2006) whereas the demand for meat was 2,957,477 t year -1.  In Central Sulawesi forest, anoa has been utilized by the people around the forest as an alternative animal meat to meet their demand for meat.  A mountainous anoa has an average body weight of 40 kg and fresh feed intake of 7-10 kg day-1 animal-1. The biological characteristics of anoa allow the anoa to be domesticated easily as a source of meat animal in the areas around the forest.  There is a lack of study in the aspect of anoa meat nutrition; as a consequence information on such aspect is limited.  Thus, information about anoas response on feed manipulation is necessary.  The present experiment was conducted to study the responses of anoas on feed manipulation.  The experiment was conducted in Palu, Province of Central Sulawesi.  Feeding trials were designed to study the effect of combination of pokae fruits and spinach levels in feed on feed intake, weight gain (WG) and feed efficiency. The treatments were allocated in a 6 x 6 Latin Square design. Analysis of variance and Duncan’s test were applied to analyze the data obtained. Feeding of 5 kg pokae and 1.5 kangkung (R4(5.0/1.5)) diet resulted in the highest intake dry matter, crude protein, Ca, P ,crude fiber, and weight gain of 1.29 kg, 0.60 kg TDN, 0.17 kg, 0.0124 kg and 0.0103 kg, 0.46 kg and 0.516 kg day-1 animal-1, and feed efficiency of 4.3%.

Abstract

Pangan siap saji merupakan istilah makanan yang dapat disiapkan dengan cepat dan tidak perlu menunggu proses pemasakan yang lama. Makanan tersebut secara umum mudah didapatkan dan tersedia di supermarket, restoran dan sejenisnya, atau usaha jasaboga. Permasalahan yang dihadapi adalah bahan pangan tersebut sudah tersimpan lama di prizer yang secara otomatis menggunakan bahan pengawet. Bahan tersebut yang berbahaya bagi tubuh apabila dalam jangka waktu yang lama dikonsumsi oleh anak-anak. Tujuan kegiatan pengabdian ini adalah memperkenalkan kepada masyarakat inovasi teknologi tentang diversifikasi produk olahan daging itik menjadi pangan siap saji yang langsung bisa dikonsumsi dengan tidak menggunakan bahan pengawet dan dapat disimpan dalam bentuk beku di frizer. Metode yang digunakan adalah pendidikan dan pelatihan yang dilakukan sebagai usaha untuk meningkatkan skill Sumber Daya Manusia (SDM). Jenis pangan siap saji yang diproduksi adalah nugget dan sempol berbahan dasar daging itik. Tahapan pelaksanaan yaitu memperkenalkan peralatan dan bahan yang digunakan, proses pengolahan daging itik sebagai bahan dasar, pencampuran bahan lain sesuai produk target yang dibuat yaitu nugget dan sempol, yang selanjutnya dilakukan uji kesukaan (organoleptik) dari produk yang dihasilkan, dengan menggunakan panelis dari peserta pelatihan. Hasil kegiatan menunjukkan bahwa masyarakat sasaran (peserta pelatihan) dapat mengadopsi inovasi yang telah diberikan dan 100% menyukai produk olahan daging itik dalam bentuk nugget dan sempol. Peserta pelatihan dari tingkat kelurahan dan ibu-ibu PKK sangat antusias dalam mengikuti kegiatan diversifikasi produk olahan daging itik menjadi pangan siap saji (nugget dan sempol) dan berharap kegiatan yang sama dilakukan secara terprogram di Kelurahan Layana. Kesimpulan dari hasil kegiatan pengabdian ini bahwa masyarakat sasaran dapat melakukan pengolahan diversifikasi produk daging itik menjadi pangan siap saji nugget dan sempol dan inovasi teknologi dari perguruan tinggi mendapat respon yang baik dari mitra sasaran.

Abstract

Introduction: Diabetes mellitus is a disease caused by disorders related to the insulin hormone. This study aims to determine the results of fasting blood glucose levels in Type II Diabetes Mellitus sufferers who consume carbohydrates and cholesterol in the outpatient Universitas Indonesia Timur Wisata Hospital, Makassar City.Methods: The type of research used is observational with a cross-sectional approach. The sample was 10 outpatients with type II diabetes mellitus at the Wisata Hospital of the Universitas Indonesia Timur. Data were collected using purposive sampling. The research results are made in tabular form and narrated.Results: The average fasting blood glucose (FBG) level is 129.3 mg/dl, which was included in the diabetes category. The average 2-hour post-prandial blood glucose level (BG2PP) value was 244.1 mg/dl, which was also included in the diabetes category. Carbohydrate and cholesterol consumption had an average value of 255.6 grams and 223.9 mg, respectively.Conclusion: The average fasting blood glucose and 2-hour post-prandial blood glucose values are included in the diabetes category. Impaired FBG increases the patient's risk of developing diabetes in the future compared to if the patient has impaired blood glucose tolerance.Keywords: Blood glucose levels, carbohydrate intake, cholesterol intake
