Abstract

Dental caries is an infectious disease that results from bacterial interactions with teeth. One of the preventive effort against dental caries is consuming foods containing a bioactive compound called casein phosphopeptide (CPP). Cheese is one of the food products that contain CPP. This study aimed to measure the potential of CPP compounds obtained from cheese protein as a preventative for dental caries. This research was conducted from April to July 2019. The method used in this study was measuring the inhibition power on the growth of bacteria causing dental caries (Streptococcus mutans) and measure the process of teeth remineralization in vitro. The results showed that the yield of crude CPP isolates obtained from commercial parmesan cheese was 16.65 ± 2.97 %. CPP isolates inhibited the growth of S. mutans at concentrations of 10 %, 15 %, and 20 % with inhibitory zone values of 1.22 ± 0.04 cm, 1.30 ± 0.00 cm, and 1.36 ± 0.08 cm, respectively. The application of 0.1 g CPP isolates on tooth surface for 10 days was shown to increase tooth hardness by 28.36 %.

Abstract

Red fruits’ oil contains 12,000 ppm carotenoid compounds and among them β-karoten was found as the major carotenoid compound. However, the application of red fruits’ oil as the food ingredient is rarely investigated due to its low solubility in aqua-phase, phenolic aroma and bitter aftertaste. Therefore , emulsification of red fruits’ oil in water (oil in water, o/w emulsion) using CMC (carboxymethyl cellulose) as the emulsifier and stabilizer agent considered as alternative to overcome those limitations. In the present work, the optimum concentration of red fruits’ oil emulsion added into Java tea-based functional drink increased the total carotenoid content, gave red color and might enhanced its antioxidant activity. The optimum formula was performed by Response Surface Methodology approach utilizing Design Expert 10.0.7® (DX10) Trial software whereas the emulsion concentration of red fruits’ oil as the variable factor. Red fruits’ oil emulsion which has been prepared from 20% red fruits’ oil and 1.50% CMC as emulsifier and stabilizer was having total carotenoid content of 72.93±1.33 ppm. The optimum concentration of red fruits’ oil emulsion added to Java-tea based functional drink was 5.86%. The addition of red fruits’ oil emulsion increased the total carotenoid content from 0.37±0.13 ppm to5.28±0.05 ppm. The results showed that red fruits’ oil emulsion could be used as red colorant agent in the functional drink while increasing the total carotenoid content, however, reduced the flavor sensory acceptance in high amount

Abstract

Dalam pengelolaan produk pupuk dan non-pupuk di PT Petrokimia Gresik, salah satu elemen terpentingnya adalah pengelolaan bahan baku yang didukung oleh utilitas berupa mesin penukar panas (Heat exchanger). Keberhasilan selama rangkaian proses produksi pupuk di Petrokimia Gresik didukung oleh peranan dari heat exchanger. Agar dapat mendukung operasional suatu unit produksi dan memperoleh hasil yang diharapkan, maka heat exchanger harus berada dalam performa terbaiknya. Karakteristik dalam menentukan performa dari kinerja suatu heat exchanger dapat dilihat dari keefektivannya dalam menukar panas.Pengolahan data menggunakan metode Log Mean Temperature Difference (LMTD), dengan membandingkan temperatur fluida disetiap akhir perpindahan panas. Pendekatan menggunakan metode LMTD dapat digunakan jika diketahui temperatur fluid saat masuk dan keluar, sehingga dapat ditentukan koefisien dari perpindahan panas. Evaluasi heat exchanger menggunakan metode LMTD meliputi fouling factor (Rd), dan penurunan tekanan (ΔP). Analisa kinerja heat exchanger dilakukan dengan metode (LMTD), memperoleh hasil dengan nilai untuk koefisien perpindahan kalor keseluruhan (Ud) sebesar 0,018, koefisien perpindahan kalor menyeluruh (Uc) sebesar 0,068 , Faktor Pengotoran (fouling factor/Rd) sebesar 40,32 , serta pressure drop (ΔP) pada sisi shell sebesar 0,16 kPa dan pada sisi tube sebesar 1,56 kPa, dengan efisiensi dari efektifitas heat exchanger (ɳ) sebesar 96%.Berdasarkan hasil perhitungan rata-rata nilai yang dihasilkan masih berada pada batas nilai yang diizinkan, kecuali pada perhitungan pressure drop (ΔP) sisi shell yang memiliki nilai 8% lebih besar dari nilai yang diizinkan. Hal ini menunjukan jika heat exchanger masih layak dioperasikan tapi membutuhkan perawatan pembersihan.

Abstract

The increase in motorbike vehicles continues to occur every year. This is because aggressive driving behavior in late adolescents in Makassar City. The subjects of this research consisted of 260 people aged 18-22 years who rode motorbikes in Makassar City. This research uses an aggressive driving scale and an empathy scale. The sampling technique used accidental sampling technique with data analysis using the Spearman Rho technique using SPSS IBM 24.0 for Windows. The results show that the R coefficient value is -0.375 and the p value = 0.000 <0.05, meaning that there is a negative relationship between empathy and aggressive driving behavior in late teens. The higher the empathy, the lower the aggressive driving behavior, and vice versa. The effective contribution (R Squaredmotorbikes make it very easy for individuals to carry out daily activities. However, teenagers' involvement in aggressive driving has the potential to cause accidents. The need for empathy to position oneself so as to reduce the level of aggressiveness when driving. This research aims to determine the relationship between empathy and) of the empathy variable to aggressive driving behavior is 19.6%. The implications of this research provide an overview of the relationship between empathy and aggressive driving behavior, a scientific basis for related parties in taking management policies related to driving, as a reference in providing education so that they can be empathetic when driving.

Abstract

Tujuan dari penelitian ini adalah untuk menguji pengaruh organizational commitment dan work motivation terhadap employee performance PT Breadseason Boga Rasa. Employee performance merupakan aset yang penting bagi perusahaan, hal ini dikarenakan karyawan merupakan kunci sukses bagi setiap perusahaan maka dari itu, setiap perusahaan bergantung pada employee performance mereka. Penelitian ini menggunakan metode non-probability sampling dengan jumlah sampel yang diperoleh yaitu sebanyak 46 responden dari karyawan PT Breadseason Boga Rasa dan pengolahan data dilakukan menggunakan software Smart-PLS. Hasil penelitian menunjukkan bahwa organizational commitment memiliki pengaruh yang signifikan terhadap employee performance. Work motivation juga memiliki pengaruh yang signifikan terhadap employee performance. The purpose of this study is to examine the effect of organizational commitment and work motivation on employee performance at PT Breadseason Boga Rasa. Employee performance is an important asset for a company, this is because employees are the key to success for every company, therefore, every company depends on their employee performance. This study uses a non-probability sampling method with a sample size of 46 respondents from PT Breadseason Boga Rasa employees and data processing is carried out using Smart-PLS software. The results of the study indicate that organizational commitment has a significant effect on employee performance. Work motivation also has a significant effect on employee performance.

Abstract

In Indonesia, only a limited number of logistics providers have obtained halal certification, even though halal logistics plays a crucial role in preserving product integrity and preventing cross-contamination. This study analyzes the implementation of halal logistics by identifying key variables that influence the availability of halal products in the Indonesian market. Using a quantitative research approach, data were collected through surveys of 108 companies, including 35 logistics service providers and 73 halal-certified MSMEs, as well as semi-structured interviews with logistics service providers and MSME business actors in the food sector. The data were analyzed using multiple regression analysis to determine the most influential factors affecting halal product availability. The findings indicate that halal product information availability, consistent worker training, and corporate environmental responsibility are the primary variables influencing halal product availability. These insights provide a foundation for policymakers to develop regulations that strengthen halal logistics while enabling logistics providers and MSMEs to allocate resources more effectively to maintain halal product availability in the market. As one of the few studies examining halal logistics in Indonesia’s food sector, this research contributes to the broader discourse on halal supply chain management and policy development. This study emphasizes the need for stronger stakeholder collaboration to enhance halal logistics sustainability in Indonesia.

Abstract

Background: Breast cancer is the leading cause of death and the most frequently diagnosed in women worldwide. A person who has a mother, sister, or daughter with breast cancer has a twofold risk of developing breast cancer. Public and individual awareness play an essential role in health promotion, early diagnosis, and treatment of breast cancer. Objective: To describe breast cancer awareness among high-risk women in Yogyakarta. Methods: This survey asked 100 breast cancer high-risk women to answer 36-item Breast Cancer Awareness Scale in Indonesian (BCAS-I) questionnaire, from November 2019 to January 2020. Results: The average age of the respondents in this study was 31.38 years (SD = 13.016). Most respondents are high school graduates, are married, do not work, have no income, and have health insurance. Only 56% of respondents have a high level of breast cancer awareness. 62% of respondents in this study know risk factors, and 53% of respondents have high signs of symptoms. And 52% of respondents have low barriers to breast cancer screening. However, respondents who have attitudes towards breast cancer prevention and health behaviors related to breast cancer awareness are still low, 62% and 54%, respectively. Most high-risk women who experience low breast cancer awareness are in the elderly age group (65 years and over), have higher education (high school and college), have no income, and do not work but have health insurance. Conclusion: Most respondents have a high knowledge of risk factors and signs and symptoms and low barriers to breast cancer screening. However, breast cancer prevention attitudes and health behaviors related to breast cancer awareness are still low.

Abstract

Abstract This study aims to analyze the influence of price, product variation, and service quality on purchasing decisions at Dapur Cece Wulan in Jombang Regency. Using a quantitative approach, data were collected through questionnaires distributed to 65 respondents. Data analysis was conducted using multiple linear regression to test the simultaneous and partial effects of the independent variables on the dependent variable. The results show that simultaneously, price, product variation, and service quality significantly affect purchasing decisions. Partially, price and product variation have a significant influence, while service quality does not show a significant effect. These findings indicate that appropriate pricing strategies and improvements in service quality are key factors in encouraging consumers to make purchases at Dapur Cece Wulan. Keywords: Price, Product Variation, Service Quality, Purchasing Decision, Dapur Cece Wulan
