Abstract

Background: Posyandu stands for integrated service post as a place of service from and by the community with community targets managed by the community with support from health workers, especially for toddlers and pregnant women.Research Methods: The design used is correlational analytic with a cross-sectional approach. A population of as many as 63 mothers of toddlers with a stratified sectional sampling technique obtained a sample of 41 respondents. The instrument used Questionnaire data analysis using Spearman Rank Correlation Statistical Test Independent and dependent variables with the Simple Random Sampling method. Research Result: Knowledge of mothers of toddlers about posyandu based on the results of filling out the Questionnaire has good criteria (12.2%), enough (17.1%), and less (70.7%). The activeness of the visit of mothers of toddlers coming to Poland in Sambirejo Village, Pare District, Kediri Regency, the results obtained 63.4% had a good level of activeness, and 36.6% had not good activeness. Conclusion: The results of data analysis with the Spearman rank test obtained a P-value = 0.123>0.05, which means there is no relationship between maternal knowledge and the activeness of mothers of toddlers in Sambirejo Village, Pare District, Kediri Regency.

Abstract

Background: Tempeh is a fermented product that has earned the nickname "the miracle food" because of its nutritional content, especially amino acids and fatty acids, which are good for health. Moringa leaves, which are also called "the miracle leaves," have complete nutritional content, especially iron, and vitamin C. Vitamin C plays a significant role in the absorption and metabolism of ironObjectives: Was to increase absorption of iron, which can increase hemoglobin blood and body weight  of ratsMethods: There were 4 groups, each consisting of 6 rats. The rats were kept in animal laboratories at room temperature (25–27°C) for 21 days. This research was conducted from 7 to 27 October 2020 in the Pharmacology Laboratory of Medicine, Faculty of Medicine Universitas Muhammadiyah Malang. This study used a Completely Randomized Design, used 24 Rattus norvegicus with treatment conditioned with anemia. The four groups were divided into control anemia rats, control non-anemia rats, anemia rats that consumed tempeh, and anemia rats that consumed tempeh with moringa leaves of 4%. The rats body weight was weighed daily and the blood Hb was taken at the end of the treatment. Statistical test used One-way Analysis of Variance (α = 0,01).Results: The results of statistical tests with ANOVA show not significant influence. The results of the hemoglobin and body weight rats had no significant effect.Conclusion: The value was not significant between groups in the hemoglobin assessment, but the treatment group that was given moringa leaves tempeh was higher than the anemia control group and the pure tempeh group.

Abstract

Oyster mushroom nuggets with tempeh were processed food products that were processed from the basic ingredients of chicken, oyster mushrooms, tempeh, shallots, garlic, onion, wheat flour, and bread flour, tapioca flour, and eggs. Oyster mushroom nuggets are processed products using the addition of 0%, 10%, and 15% tempeh. This type of research uses experimental research. This study aims to determine the effect of adding tempeh on the acceptance and water content of oyster mushroom nuggets. This study uses a hedonic scale test for acceptance or organoleptic tests and a thermogravimetric test for water content. Organoleptic test using Friedman Test analysis with sig = 0. 05 and water content test using One Way Anova test with sig = 0. 01. If H0 was rejected, the Duncan test was continued. The results showed the effect of adding tempeh on color (sig 0. 00), aroma (sig 0. 00), taste (sig 0. 00), and there was no effect on texture (sig 0. 186) and water content (sig 0. 461). The percentage of panelists' acceptance of the most preferred color parameter was P0 with an acceptable value of 87%, the most preferred aroma was P0 of 88%, the most preferred texture was P0 of 89% and the most preferred taste was P1 of 89%. While the highest water content was found in P2 with a value of 37. 25%. It was suggested that further research needs to be carried out to test the shelf life and product innovation with natural ingredients in the nuggets.

Abstract

Atherosklerosis merupakan suatu penyakit degeneratif. Proses Atherosklerosis terjadi melalui beberapa tahap. Kejadian awal yang berperan pada proses atherosklerosis adalah kerusakan atau disfungsi endotel karena kadar lemak LDL. LDL Lipoprotein) adalah kolesterol “jahat” yang potensial menyumbat pembuluh darah. Akan tetapi, hal tersebut dapat dicegah dengan pemberian antioksidan. Oleh karena itu, perlu adanya altermatif pengobatan yang bersifat preventif yang bahannya berasal dari buah-buahan. Quersetin adalah salah satu zat aktif kelas flavonoid yang secara biologis amat kuat. Antioksidan ini dapat mencegah kerusakan sel sel endotel atau jaringan pembuluh darah. Pada saat bersamaan, antioksidan akan meningkatkan koesterol “baik” (High Density Lipoprotein / HDL) yang bermanfaat untuk mencegah penyakit jantung dan pembuluh darah. Penelitian ini bertujuan mengetahui peranan quercetin sebagai antioksidan dalam mencegah penurunan jumlah sel endotel aorta tikus yang diberi diet aterogenik. Jenis penelitian ini menggunakan experimental laboratorik pada hewan coba tikus dengan menggunakan desain penelitian Control Group Post Test Design. Variabel penelitian ini adalah jumlah sel endotel aorta. Hasil uji statistik One Way Anova menunjukkan bahwa terdapat perubahan jumlah sel endotel aorta tiap taraf perlakuan yang signifikan. Kesimpulan dari penelitian ini adalah pemberian quercetin dengan dosis 56 mg paling potensial dalam pencegahan penurunan jumlah sel endotel aorta tikus.

Abstract

Diabetes mellitus (DM) menjadi suatu masalah dalam kesehatan. Dalam penelitian global di tahun 2011 pasien DM sudah mencapai 366 juta jiwa dan sejumlah 13 jiwa tidak menyadarinya jika mereka telah terdiagnosis DM. Pola makan memiliki hubungan yang erat dengan penyakit degeneratif Diabetes Mellitus Tipe II. Rekomendasi asupan yang rendah dari karbohidrat dengan jenis yang sederhana dapat mempenggaruhi level gula dalam darah. Buah-buahan yang dianjurkan untuk dimakan adalah buah yang kurang manis yang sering digolongkan menjadi golongan buah B (pada umumnya memiliki indeks glikemiks sedang). Berdasarkan uraian diatas maka perlu adanya penelitian untuk mengidentifikasi perubahan kadar glukosa darah pada konsumsi buah dengan indeks glikemik medium yang sering tersedia di pasaran yaitu salah satunya adalah buah semangka. Tujuan penelitian ini adalah untuk mengetahui seberapa besar buah semangka meningkatkan gula darah. jenis penelitian ini adalah eksperimental dengan metode Pretest and Posttest. Subjek penelitian ini adalah pasien rawat jalan dengan diagnosis DM tipe 2 tanpa komplikasi sebanyak 15 pasien. Data dianalisis secara dekriptif dan statistik menggunakan uji Paired Sample T Test. Perubahan Kadar gula darah adalah variabel dalam penelitian ini. Pemberian buah semangka diberikan dalam bentuk potongan dan jus (tanpa gula) dengan kalori sebesar 170 kkal yang diberikan pada waktu pagi hari sebelum beraktifitas dapat meningkatkan glukosa darah dengan rata-rata kenaikan sebesar 50 mg/dl.

Abstract

Pegagan (Centella Asiatica L. Urban) is a plant that belongs to the Umbelliferae or Apiaceae tribe. It is an herbal plant that grows on the ground, with a wide distribution area, especially in the tropics and subtropics. Currently, there is a scarcity of innovations for healthy and nutritious sticks, making it essential to explore new avenues in product development. Sticks are widelypopularamong people of all ages, from teenagers to adults. This study aims to analyze the moisture content and acceptability of gotu kola leaves sticks. The study employe a Completely Randomized Design (RAL) with one control and three treatments, namely 4%, 6% and 8%.  Organoleptic tests and water content tests were cconducted on June 15, 2022, at the Chemical Laboratory of the Karya Husada Nutrition Academy, Kediri, Indonesia. The study results revealed a significance level of  <0.05, indicating no difference in the acceptability of the color, aroma, texture and taste of pegagan leaves sticks. In the  color acceptability test, 100% of panelists most favored sticks P1 and P2., in the aroma stick acceptance test the panelists most liked sticks P1 and P2 by 100%, For stick texture acceptance, 100% of panelists favored sticks P2., In the stickiness test, the preferred sticks weres P1 by 100%. The llowestt water content, with the addition of pegagan leaves, was found in treatment 1 with a  4% addition of pegagan leaves at 2.63%. further research is needed to explore the antioxidant content and the expiration of pegagan sticks.

Abstract

Purworejo Hamlet, Bringin Village or better known as Honey Village is located in Badas District. One of the people's livelihoods is as a honey beekeeper. But unfortunately the honey produced by the community has not been utilized optimally, only used as personal consumption and sold in the form of pure honey. From the problems that arise, alternatives are arranged to solve the problem. Furthermore, the alternative was carried out by conducting training in making cookies with PKK mothers and utilizing honey produced by the community. This training also increases the knowledge and skills of PKK mothers regarding the use of honey into other products that are more useful and have more selling value. High interest from partners has a positive impact on the implementation of the program. The output that has been achieved from this training activity is in the form of cookies products that are given additional honey and zinc or named CODUZINC "Zinc Honey Cookies" produced by PKK mothers in Purworejo hamlet, Badas District, Kediri Regency and is expected to help in overcoming stunting problems.

Abstract

Nasi pecel tumpang merupakan makanan asli Kediri yang tersebar merata di seluruh wilayah Kediri. Makanan tradisional ini selayaknya perlu mendapatkan perhatian bagi para penjual dan pembeli, terutama dari sisi kesehatan. Karena sambel tumpang tidak selalu habis disajikan dan harus dihangatkan berkali-kali. Keberadaan mikroorganisme dalam sambel tumpang bisa menjadi penyebab timbulnya keracunan makanan (food poisoning). Masuknya mikroba ke dalam makanan dapat terjadi pada tahap pemilihan bahan makanan, pengolahan dan penyajian makanan yang kurang tepat. Penelitian dilaksanakan di Kampung Inggris Pare, terhadap 15 penjual nasi pecel tumpang dengan desain crossectional. Tujuan penelitian adalah untuk menganalisis pengaruh penyimpanan terhadap kualitas mikrobiologis sambel tumpang, dengan empat parameter, yaitu APN Coiform, APM Eschericia coli, Salmonella sp., dan kapang. Pembuktian hypotesis dilakukan dengan menghubungkan skor inspeksi sanitasi dengan kualitas mikrobiologis sambel tumpang dengan menggunakan dengan uji coefisien contingensi (α:5%), menggunakan bantuan software statistik. Kesimpulan hasil penelitian adalah peralatan dan perlakuan penyimpanan tidak berpengaruh terhadap kualitas sambel tumpang, namun lingkungan penyimpanan berpengaruh secara nyata terhadap kualitas sambel tumpang (p value : 0,050). Dari empat parameter mikrobiologis, APM coliform adalah parameter yang dipengaruhi oleh lingkungan penyimpanan. Dari kesimpulan tersebut maka disarankan kepada pedagang untuk selalu membersihkan lingkunganya dari sampah dan menutup rapat wadah sambel tumpangnya.

Abstract

Degenerative diseases, such as stroke or cerebrovascular accident (CVA), have increased in prevalence in Indonesia. Risk factors such as hypertension, diabetes, and unhealthy eating habits are major contributors. Proper nutritional management, including a low-salt and high-potassium diet, plays a crucial role in the rehabilitation of stroke patients. This study aims to evaluate the effectiveness of the diet provided to CVA patients at Baptis Kediri Hospital. A descriptive study with a case study approach was used. The study was conducted on Mr. A, a 49-year-old male patient diagnosed with intracerebral hemorrhage. Data were collected through four-day physical examinations, clinical data, and nutritional care. The results showed that the patient's blood pressure decreased after implementing a low-salt and high-potassium diet, although blood pressure remained fluctuating. The patient's energy and nutrient intake were calculated based on their daily energy needs adjusted to their physical condition. Providing a proper diet according to nutritional needs improved the patient's intake and potentially accelerated recovery. The study concludes that proper nutritional management plays a significant role in stroke rehabilitation by meeting the patient's calorie, protein, fat, and carbohydrate requirements.

Abstract

Pemberdayaan orang tua dalam meningkatkan nafsu makan balita melalui akupresur pada titik Zhongwan (CV12) merupakan upaya untuk mendukung tumbuh kembang anak dan mencegah stunting. Program pengabdian masyarakat ini bertujuan untuk meningkatkan pengetahuan orang tua di Desa Tunjung, Kecamatan Udanawu, Kabupaten Blitar, mengenai manfaat akupresur dalam meningkatkan nafsu makan balita. Kegiatan dimulai dengan survei awal, dilanjutkan dengan sosialisasi dan pelatihan teori serta praktik langsung. Evaluasi dilakukan melalui pre-test dan post-test untuk mengukur perubahan pemahaman orang tua setelah pelatihan. Hasil menunjukkan peningkatan signifikan dalam pemahaman orang tua mengenai teknik akupresur; sebelum pelatihan, 80% peserta memiliki pemahaman "Kurang", sementara setelah pelatihan, 90% peserta menunjukkan pemahaman "Baik". Program ini berhasil meningkatkan keterampilan orang tua dalam mengaplikasikan teknik akupresur di rumah, yang diharapkan dapat mendukung peningkatan nafsu makan balita secara alami. Evaluasi lebih lanjut diperlukan untuk menilai dampak jangka panjang dari penerapan teknik ini terhadap kesehatan balita dan keberlanjutan program pengabdian masyarakat ini.
