Abstract

The aims of this study was to determine the food safety of meatballs and cilok which sold around University of Jember. Ramdom sampling methods was used in this study and the collected sample were 30 samples of meatball and 13 samples of cilok. Borax, formalin and TPC test was carried out in this study. The result shows that 92% of cilok sample and 17% meatball sample were detected containing borax but none detected containing formalin. In term of the sanitation, meatballs and cilok circulating in the University of Jember was still lacking due the total plate count of most sample were out of standart, more than 105cfu/g.Keywords: food safety, meatball, borax, formalin, TPC

Abstract

Conjugated linoleic acid (CLA) exhibits anti-cancer effects; however, most studies have only investigated its free fatty acid forms (CLA-FFA). Here, we compared the anticancer effect of CLA with its lipid forms (FFA and phosphatidylcholine [PC]) on the breast cancer cell line MCF-7 with Soy-PC as a control. CLA-FFA, CLA-PC, and Soy-PC caused a dose- and time-dependent inhibition of MCF-7 growth. However, the lowest antiproliferative activity was observed with CLA-PC. These results were consistent with Hoechst staining and protein expression of apoptosis markers Bax and Bcl-2. Interestingly, CLA-PC uptake was four times lower than that of Soy-PC, which may have affected its antiproliferative effect. Many papers showing that phospholipid forms of functional compounds have superior activity than intact forms have been reported, however, our results suggest that the PC form of CLA was inferior to its FFA form in inhibiting MCF-7 cell growth. This is the first report showing that the phospholipid form is not always the superior form.

Abstract

Organic red rice has higher nutritional value compared to white rice and is increasingly favored as public awareness of healthy lifestyles grows. Kalianget Village in Situbondo is one of the regions producing organic red rice, managed by the Setia Budi Farmer Group. However, the marketing of these products is still limited due to a lack of innovation insufficient branding skills, and e-commerce utilization. This community service activity aims to provide training and assistance in revitalizing derivative products of organic red rice, namely cereal and cookies made from rice bran, while also enhancing the group's capabilities in branding and digital marketing. The program involved 20 members of the farmer group, 3 lecturers, and 4 students from the University of Jember. The stages of the activity included socialization, product-making training, branding and marketing training, packaging design assistance, and e-commerce implementation. The results showed an improvement in participants' skills in product diversification and digital marketing strategies. This training has generated promising business prospects for the group and is expected to enhance the competitiveness of their products in broader markets.

Abstract

Stunting (balita pendek) merupakan gangguan tumbuh kembang yang sering dialami anak akibat gizi buruk, infeksi berulang, dan stimulasi psikososial yang tidak memadai. Kabupaten Bondowoso merupakan salah satu daerah yang terdampak khususnya di Desa Poncogati. Pencegahan stunting salah satunya dapat dilakukan dengan pemberian pangan bergizi. Pengembangan pangan bergizi yang dilakukan berupa crackers berbahan dasar kacang hijau dan daun katuk yang selanjutnya disebut crackers Cangtuk ditujukan untuk upaya pencegahan dan mengurangi kasus stunting yang terjadi di desa Poncogati. Kandungan gizi dari crackers Cangtuk yang terdiri dari protein 9,41%; lemak 26,61%, karbohidrat 49,36% serta mineral sebesar 2,06% diharapkan mampu mengurangi dan mencegah kasus stunting di Desa Poncogati. Kegiatan pengabdian dilakukan dengan memberikan sosialisasi terkait stunting dan pencegahannya dilanjutkan dengan pengenalan produk crackers Cangtuk bagi balita dan ibu hamil sebagai upaya pencegahan stunting.

Abstract

Program Kuliah Kerja Nyata merupakan salah satu wujud konkret pengabdian mahasiswa kepada masyarakat yang diharapkan bisa membantu untuk membangun dan mengembangkan potensi yang dimiliki oleh desa setempat. Program kerja yang dijalankan oleh KKN UMD 126 mengusung tema peningkatan literasi masyarakat. Dalam menjalankan program kerja dirancang sesuai dengan potensi serta permasalahan yang sedang dihadapi oleh masyarakat di Desa Paguan, yakni banyak anak-anak sekolah yang memiliki minat membaca rendah dan tingginya angka buta huruf dikalangan lansia. Metode pelaksanaannya menggunakan metode partisipatif melalui pelibatan antara penduduk lokal, pihak sekolah, dan pemerintah desa, program ini dirancang untuk menciptakan dampak positif jangka panjang dalam hal pendidikan dan literasi dengan membuat pojok baca. Kegiatan utama program meliputi pengajaran langsung di sekolah-sekolah setempat, pelatihan bagi pendidik serta membantu warga desa Paguan dengan mengajarkan membaca khususnya anak-anak dan penderita buta huruf. Selain itu mahasiswa KKN UMD 126 juga mengadakan kegiatan les bersama anak-anak untuk membantu mereka dalam meningkatkan keterampilan dan berpikir kritis. Melalui pendekatan ini berhasil membawa dampak positif bahwa masyarakat Desa Paguan mengalami peningkatan signifikan dalam kualitas pendidikan dan literasi, yang pada gilirannya akan memberikan manfaat jangka panjang bagi perkembangan sosial, ekonomi, dan budaya di wilayah tersebut.

Abstract

Noni (Morinda citrifolia) contains bioactive compounds, but it has an unpleasant odor caused by caproic acid. Due to essential oil compounds, ginger and lemongrass can be used to reduce the unpleasant aroma of noni fruit. This research aims to evaluate the effect of ginger and lemongrass with varying concentrations of noni juice on physicochemical and sensory characteristics noni drink. The study employed a completely randomized design with six treatments and four replications. Physicochemical data were analyzed using ANOVA and Duncan's post hoc test, while sensory data were analyzed using the Chi-Square test. Results indicated that the type of ginger and concentration of noni juice significantly influenced the chemical characteristics. A concentration of 10 ml of noni juice affected the physical and sensory properties of noni juice beverage, but this was not observed at a concentration of 20 ml. The best formula resulted from treatment with a concentration of 10 ml of noni juice and the addition of 10 ml of lemongrass, with an overall score of 4.13 (liked). This was attributed to the flavonoid content of 0.290 mgQE/ml, polyphenol content of 0.3500 mgGAE/ml, vitamin C content of 0.114 mg/ml, antioxidant activity of 17.65ml, as well as satisfactory scores for taste, aroma, and aftertaste. Keywords: Caproic acid, Drink, Noni, Spice.
