Abstract

Krupuk kupang merupakan salah satu diversifikasi produk olahan kupang, kerupuk kupang merupakan salah satu komoditas yang sangat potensial untuk dikembangkan menjadi pangan bergizi tinggi dan mempunyai prospek industri yang sangat baik. Hasil dari penelitian ini dapat disimpulkan bahwa: Pemberian kaldu kupang berpengaruh nyata (p<0.05) terhadap kadar protein krupuk kupang, kadar protein krupuk kupang tertinggi sekitar 11,11%. Pemberian kaldu kupang berpengaruh sangat nyata (p<0.01) terhadap pengembangan krupuk kupang. Pengembangan krupuk kupang terbesar 115%. Pemberian kaldu kupang tidak berpengaruh nyata (p>0.05) terhadap uji sensori krupuk kupang yang meliputi bau, tekstur, dan warna. Rata-rata konsumen menyukai krupuk kupang.
