Abstract

Anemia in pregnant women is a public health problem with a high prevalence in Indonesia, one of the main causes of which is low iron intake. This study aimed to analyze the iron content of dim sum formulated with moringa leaf and tempeh flour substitution as a food product to prevent anemia in pregnant women. This was an experimental study with a completely randomized design (CRD) consisting of a single factor and three ratio variations of moringa leaf to tempeh flours such as F0 (control, without substitution), F1 (ratio 1:2), F2 (ratio 1:1), and F3 (ratio 2:1). The iron content was analyzed using the visible spectrophotometer. The results showed significant differences in iron content among the treatments (p ≤ 0.001). F0, F1, F2, and F3 had an iron content of 2.54±0.21; 3.37±0.37; 3.81±0.06; and 4.63±0.26 mg 100 g-1, respectively. The F3 treatment had the highest iron content and significantly differed from the F0 control formula. Based on the results, moringa leaf flour contains iron, which plays a role in hemoglobin formation. At the same time, tempeh, rich in protein, helps support the production of red blood cells and prevents anemia. This modified dim sum can potentially be a source of iron-rich food that can help prevent anemia, especially in pregnant women.

Abstract

ABSTRAK Hipertensi merupakan salah satu penyakit tidak menular yang prevalensinya terus meningkat dan banyak dikaitkan dengan status gizi. Penelitian ini bertujuan untuk menganalisis hubungan antara status gizi dengan kejadian hipertensi pada masyarakat dewasa usia 19–59 tahun di wilayah kerja Puskesmas Wonosari II, Kabupaten Gunungkidul. Desain penelitian menggunakan metode observasional analitik dengan pendekatan potong lintang (cross-sectional) dan melibatkan 138 responden yang dipilih melalui teknik simple random sampling. Data dikumpulkan melalui wawancara menggunakan kuesioner, pengukuran antropometri (berat badan, tinggi badan, lingkar perut, indeks massa tubuh), serta pengukuran tekanan darah menggunakan tensimeter digital. Analisis data dilakukan menggunakan uji normalitas Kolmogorov–Smirnov, dilanjutkan uji korelasi Pearson Product Moment untuk data berdistribusi normal, dan uji Spearman Rho untuk data tidak berdistribusi normal. Hasil penelitian menunjukkan adanya hubungan signifikan antara status gizi (indeks massa tubuh) dengan hipertensi (p=0,001; r=0,452), serta hubungan signifikan antara lingkar perut dengan hipertensi (p=0,003; r=0,391). Temuan ini memperkuat bukti bahwa obesitas, terutama obesitas sentral, merupakan faktor penting yang memengaruhi peningkatan tekanan darah. Penelitian ini menyarankan perlunya intervensi gizi seimbang dan pengendalian berat badan sebagai strategi promotif dan preventif dalam menurunkan prevalensi hipertensi di masyarakat. Keywords: hipertensi, status gizi, indeks massa tubuh.    ABSTRACT Hypertension is one of the major non-communicable diseases with a rising prevalence and is strongly associated with nutritional status. This study aimed to analyze the relationship between nutritional status and hypertension among adults aged 19–59 years in the working area of Wonosari II Primary Health Center, Gunungkidul District. This research employed an analytic observational design with a cross-sectional approach and involved 138 respondents selected through simple random sampling. Data were collected using questionnaires, anthropometric measurements (weight, height, waist circumference, body mass index), and blood pressure assessment with a digital sphygmomanometer. Data analysis was performed using the Kolmogorov–Smirnov normality test, followed by Pearson Product Moment correlation for normally distributed data, and Spearman’s Rho test for non-normally distributed data. The results revealed a significant correlation between nutritional status (body mass index) and hypertension (p=0.001; r=0.452), as well as between waist circumference and hypertension (p=0.003; r=0.391). These findings support evidence that obesity, particularly central obesity, plays a crucial role in increasing blood pressure. The study recommends implementing balanced nutrition interventions and body weight control as promotive and preventive strategies to reduce the prevalence of hypertension in the community.
