Abstract

This research was conducted to study the viability of the probiotic L. casei in yoghurt from goat’s milk during frozen storage. Yoghurts were made with L. casei as a probiotic starter, stored in freezer for 0, 2, 4, and 6 days and also evaluated for pH, acidity, and probiotic count. The result showed that probiotic growth was decreased just on the 2nd day of storage significantly, and it was marked with the decreasing of acidity, probiotic count, and the increasing of pH. The probiotic seemed to be adaptive with the freezing condition after the 2 nd day of storage until the 6 day of storage. It was marked with the increasing of probiotic count, acidity, and the decreasing of pH. The probiotic count at the end of frozen storage were 7.96 log CFU/mL, wich fullfilled the Codex Allimentarius requirement for fermented milk consumption.

Abstract

Adanya pigmen karoten pada labu kuning dapat menjadikan tepung memiliki warna yang menarik. Akan tetapi, tingginya kandungan serat kasar dalam labu kuning dapat menyebabkan rendahnya nilai kecernaan, yang berdampak pada penyerapan zat gizi. Untuk mengatasi permasalahan tersebut perlu adanya teknologi fermentasi. Proses fermentasi dapat meningkatkan nilai nutrisi produk dengan penurunan senyawa antinutrisi, meningkatkan daya cerna dan ketersediaan makronutrisi. Tujuan dari penelitian ini adalah menganalisis karakteristik warna, karoten, serat kasar, kadar air, karbohidrat dan protein tepung labu kuning dengan variasi lama waktu fermentasi Saccharomyces cerevisiae; serta menentukan lama waktu fermentasi terbaik dalam pembuatan tepung labu kuning. Penelitian menggunakan metode rancangan acak kelompok satu faktor yaitu lama waktu fermentasi. Terdapat 6 perlakuan (0, 1, 2, 3, 4, dan 5 hari) dengan 4 kali pengulangan. Parameter yang dianalisis meliputi warna, karoten, serat kasar, kadar air, karbohidrat dan protein. Hasil penelitian menunjukkan bahwa lama waktu fermentasi meningkatkan kecerahan warna, warna kekuningan, kadar karoten dan karbohidrat; namun menurunkan warna kemerahan, serat kasar, kadar air dan protein tepung labu kuning. Lama waktu fermentasi terbaik dalam pembuatan tepung labu kuning adalah 3 hari. Tepung labu kuning terfermentasi 3 hari berpotensi sebagai tepung dengan warna menarik, tinggi akan kandungan karoten, protein dan karbohidrat, rendah serat dan kadar air sehingga memudahkan dalam proses penyerapan zat gizi dan memiliki umur simpan panjang.

Abstract

Soygurt sinbiotik dengan komponen fungsionalnya dapat memenuhi kebutuhan berbagai macam pangan nabati bagi konsumen yang menerapkan pola makan nabati untuk meningkatkan imunitas, kesehatan dan pengendalian penyakit. Nilai akseptabilitas dapat ditingkatkan dengan menggunakan ekstrak rempah-rempah. Telah dilakukan penelitian tentang penggunaan ekstrak rempah-rempah pada soygurt nangka melalui fermentasi laktat mikrobal menggunakan kultur backslope yang mengandung probiotik, dengan tujuan untuk mengetahui pengaruh konsentrasi ekstrak rempah-rempah (campuran jahe-kayu manis-cengkeh) terhadap total bakteri asam laktat, pH, aktivitas antioksidan dan sifat sensoris (rasa dan aroma). Rancangan Acak Lengkap (RAL) satu faktor digunakan, dengan perlakuan konsentrasi ekstrak rempah-rempah (jahe-kayu manis-cengkeh) 0%, 5%, 10%, 15%, 20% dan diulang sebanyak 4 kali. Data dianalisis secara statistik dengan ANOVA dan dilanjutkan dengan Uji Jarak Berganda Duncan. Peningkatan konsentrasi campuran ekstrak rempah tidak berpengaruh nyata terhadap total bakteri asam laktat dan skor preferensi aroma pada soygurt nangka. Namun, hal tersebut menurunkan pH secara signifikan, serta meningkatkan aktivitas antioksidan dan skor preferensi rasa secara signifikan. Data variabel pengamatan yang diperoleh adalah total bakteri asam laktat (log CFU/ml) 8,24-8,45; pH 3,71-3,80; aktivitas antioksidan (%DPPH) 15,75-31,63; skor preferensi aroma 2,56-3,30 dan skor preferensi rasa 2,36-3,33.

Abstract

Indonesia possesses a diverse array of local fruits and indigenous lactic acid bacteria (LAB) derived from traditional fermented foods, which hold potential for development into synbiotic fermented beverages. Nevertheless, research findings on the integration of local fruits and indigenous LAB remain dispersed across various individual publications and have not been systematically synthesized. Objective: This study seeks to map the combinations of local Indonesian fruits and indigenous LAB that have been investigated, synthesize the characteristics of probiotic viability and the physicochemical-functional properties of the resulting products, and identify challenges and directions for future research. Methods: A systematic literature review was conducted in accordance with the PRISMA guidelines, utilizing databases such as Scopus, Google Scholar, Scimago Journal Rank, and Garuda/Sinta, with a focus on primary literature from 2020 to 2026 and references to pertinent foundational concepts. Results: At least 15 types of local Indonesian fruits, including Manalagi apple, mango, soursop, snake fruit, tamarillo, guava, eggplant, and pineapple, were combined with native LAB and selected starter cultures to produce synbiotic beverages with viability ranging from 10^8 to 10^10 CFU/mL and a final pH of 3.8 to 4.9, which were generally sensorially acceptable. This study also identified research gaps in storage stability, probiotic encapsulation, and human clinical trials. Conclusion: Local Indonesian fruits and native LAB exhibit significant potential as raw materials for functional synbiotic beverages; however, further translational research is necessary to facilitate product downstreaming.

Abstract

Cheese whey is a significant dairy by-product, presents an environmental challenge due to its high organic load. However, its rich nutritional profile offers potential for valorization through microbial fermentation. Fermentation of cheese whey has been demonstrated to produce or enhance several bioactive metabolites, such as gamma-aminobutyric acid (GABA), tryptophan, and short-chain fatty acids (SCFAs), which are present in negligible amounts in the unfermented substrate. These metabolites are mechanistically linked to the modulation of the central nervous system and the gut-brain axis. This structured narrative review synthesizes evidence on the fermentation-driven bioconversion pathways responsible for the production of GABA, tryptophan, and SCFAs in whey-based matrices. It also examines the proposed biological pathways, including hypothalamic-pituitary-adrenal (HPA) axis regulation, serotonin-GABA neurotransmitter modulation, and attenuation of gut-brain neuroinflammation, through which these compounds may influence stress-related physiological outcomes. The review further assesses the extent and limitations of current evidence linking these mechanisms to gut-brain-axis health. Reported yields vary significantly across studies and units, with GABA concentrations ranging from 19.55-55.35 mg/100 mL to 365.6 mg/100 mL, most often achieved with supplementation of exogenous glutamic acid or monosodium glutamate, tryptophan concentrations ranging from 12,93-13,87 mg/g protein. These findings suggest that whey fermentation can significantly increase selected neuroactive metabolites under specific strain- and process-dependent conditions, providing biological plausibility for fermented cheese whey as a functional food candidate for gut-brain-axis modulation. However, direct clinical evidence for whole fermented whey products in managing stress-related symptoms remains limited. The findings summarized here should serve as a foundation for standardized production and controlled human trials, rather than as evidence of established therapeutic efficacy.
