Abstract

Perbaikan sistem distribusi ikan segar perlu terus ditingkatkan sehingga kualitas ikan terjamin, salah satunya ialah penggunaan alat transportasi ikan segar berpendingin (Altis-2). Penelitian terdahulu telah membuktikan bahwa Altis-2 sangat membantu pedagang ikan segar keliling dalam menjaga mutu ikan dagangannya. Penelitian ini difokuskan pada uji penerimaan Altis-2 oleh pedagang ikan segar di 6 lokasi melalui pendekatan technology acceptance models (TAM). Tujuannya adalah untuk mengetahui faktor yang paling mempengaruhi penerimaan Altis-2. Variabel yang digunakan ialah kemudahan, kegunaan dan penerimaan alat tersebut. Hasil analisa membuktikan bahwa kemudahan pengoperasian Altis-2 menjadi faktor paling berpengaruh pada penerimaan pedagang. Salah satu tahapan operasional penggunaan Altis-2 yang memerlukan perbaikan ialah proses pelepasan rangka dari motor dan ukuran lebar dari Altis-2.

Abstract

The surimi industry plays a substantial role in bolstering Indonesia’s fishing sector. The collapse of the majority of surimi companies can be attributed to the                   government limitation on trawling, which served as the primary source of demersal fish utilized in surimi processing. This restriction resulted in a significant shortage of raw material for industry. Therefore, it is imperative to explore alternate fish species that can serve as viable raw materials for the production of surimi.  Alternative fish species are needed as raw materials for surimi. The objective of this work was to investigate the physicochemical characteristics and microstructure of surimi produced from two distinct Indonesian fish species: Decapterus sp., a pelagic species, and Priacanthus sp., a demersal species. Five ratios of Decapterus sp and Priacanthus sp; 1:0 (F1: control 1),  3:1 (F2), 1:1 (F3), 1:3 (F4), and 0:1 (F5: control 2) were tested. The proximate composition showed that the addition of Decapterus sp. to the formula increased the protein and fat content of mixed surimi. The formula F4 showed the highest value for almost all textural profile parameters; there were springiness, cohesiveness, gumminess, chewiness, and resilience. The same result also presented in the gel strength, F4 also has the highest value. The Water Holding Capacity value was low, and it showed no difference between all formulas. The whiteness value was in the range of 66-68, and it showed no difference between all formulas. Protein patterns showed no myosin heavy chain in all formulas. Microstructure analysis showed that only F5 (control 2) was compact and denser, but the other formulas (F1, F2, F3, and F4) showed a large number of loose and porous structures. In the microbial analysis, all formulas showed the Total Plate Count value ( 6 x 105 cfu/g) was under the maximum acceptable value (107 cfu/g). The findings of the study indicated that the mixed-surimi, consisting of Decapterus sp and Priacanthus sp at a ratio of 1:3, exhibited the highest level of gel strength. In conclusion, Decapterus sp has the potential to serve as a viable raw material when combined with Priacanthus sp.

Abstract

Aktivitas pengeringan teripang     menjadi salah satu fokus permasalahan produksi dikarenakan kegiatan pengeringan dilakukan pada lingkungan yang terbuka dan lama yaitu waktu pengeringan berlangsung selama 3 sampai dengan 5 hari. Tujuan dari penelitian ini adalah merancang dan  melakukan percobaan terhadap alat pengering teripang tipe kabinet agar dapat menghasilkan produk dengan kadar air maksimal 15% dengan waktu yang  lebih cepat. Analisis yang digunakan yaitu deskriptif yaitu dimulai dengan rancangan pembuatan alat pengering hingga melakukan kegiatan pengujian terhadap produk akhir yang dihasilkan. Perlakuan pada penelitian ini adalah pengeringan dengan suhu 600 C, 900C dan pemanfaatan matahari. Hasil penelitian      menunjukkan bahwa untuk memperoleh kadar air maksimal 15%, metode pengeringan dengan menggunakan suhu 900 C dapat menghasilkan waktu pengeringan lebih cepat yaitu selama 23 jam. Mutu yang dihasilkan yaitu nilai organoleptik sebesar 7,67 dan kadar air 12,59%.

Abstract

The spread of the Coronavirus outbreak has had an impact on the fisheries sector. The spread of the Corona Virus has brought new challenges and risks in social life, including capture fisheries products. Disruption of supply chain between business actors and consumers due to restrictions on human mobility that were implemented to overcome the Covid-19 outbreak. This reserach aims to analyze the fisheries risk management case study in pandemic Covid-19. This research was conducted in April - September 2020. The data used are primary and secondary data. Primary data obtained by taking non-probability sampling techniques to 50 respondents of capture fisheries business actors, using health protocols. Secondary data were obtained using literature studies. The analytical tool used in this research is descriptive analysis. Based on the results of research, the risks received by capture fisheries business actors include the risk of the capture fisheries production process during the Covid-19 pandemic, the risk of collaborating with capture fisheries production during the Covid-19 pandemic, the risk of decision making during the Covid-19 pandemic, the risk of product market capture fisheries during a pandemic. Adaptation strategies should be done undertaken by fishery business actors by optimizing the function and role of fishery cooperatives, strengthening marine and fisheries financial institutions, strategies for adapting fisheries marketing through a warehouse receipt system.

Abstract

Relasi patron–klien dalam tata niaga garam rakyat Madura masih menjadi penghambat utama kesejahteraan petambak. Patron berperan sebagai pemberi modal dan pengendali distribusi, sementara negara belum hadir secara efektif untuk melindungi petambak. Akibatnya, petambak bergantung pada patron untuk modal dan akses pasar, sehingga sulit menentukan harga secara mandiri. Kajian ini dilakukan di Kabupaten Sampang dan Pamekasan menggunakan pendekatan studi kasus kualitatif. Hasil menunjukkan bahwa kebijakan teknis pemerintah yang bersifat top-down tidak mampu menjawab realitas sosial ekonomi di tingkat lokal. Meski begitu, muncul inisiatif perlawanan sosial berupa pembentukan koperasi dan jaringan distribusi alternatif yang menunjukkan arah baru menuju kemandirian ekonomi petambak. Policy brief ini menegaskan pentingnya membangun kelembagaan distribusi garam berbasis komunitas, memperkuat koperasi melalui dukungan regulasi dan pembiayaan, serta mendorong transparansi harga dan informasi melalui digitalisasi. Dengan langkah-langkah ini, negara dapat berperan sebagai fasilitator yang memastikan keadilan ekonomi bagi petambak garam rakyat.
