Abstract

Kepiting kambu merupakan produk olahan hasil laut yang menjadi ciri khas Masyarakat di Pulau Salemo, Desa Mattiro Bombang, Kecamatan Liukang Tuppabiring Utara, Kabupaten Pangkep. Kepiting kambu ini merupakan produk yang berupa cangkang kepiting rajungan kemudian diberi isian, Adapun isian dari kepiting kambu saat ini di Pulau Salemo telah beragam seperti isian sayur, otak-otak, bakso dan isian kelapa. Pada tahun 2022 di Pulau Salemo telah dibentuk KUB yaitu KUB Salemo di Desa Mattiro Bombang yang memproduksi kepiting kambu, hanya saja proses penjualan atau pemasarannya masih sangat terbatas. Oleh sebab itu, perlu upaya untuk melakukan pendampingan terkait teknologi dan pemasaran produk kepiting kambu di Pulau Salemo. Tujuan kegiatan ini adalah untuk mengaplikasikan teknologi surimi pada isian otak-otak sebagai varian baru dari kepiting kambu di Pulau Salemo serta teknik pemasaran yang tepat terkait penjualan kepiting kambu sehingga produk yang dihasilkan memiliki pasar yang lebih luas. Kegiatan ini dilakukan dengan beberapa tahapan yaitu kordinasi dengan mitra dan persiapan pengabdian, persiapan teknologi, sosialiasi dan pendampingan, serta pelatihan pembuatan kepiting kambu. Hasil pengabdian dikatakan berhasil berdasarkan nilai pre-post test masyarakat karena ada peningkatan pengetahuan setelah sosialisasi dan pendampingan yang dilakukan. Kata kunci: Pemasaran, kepiting kambu, Desa Mattiro Bombang. ABSTRACT Kambu crab is a processed seafood product that characterizes the community on Salemo Island, Mattiro Bombang Village, North Liukang Tuppabiring District, Pangkep Regency.This kambu crab is a product in the form of a crab shell and then given a filling, the filling of kambu crabs currently on Salemo Island has varied such as vegetable filling, brain-brain, meatballs and coconut filling. In 2022 on Salemo Island, a KUB was formed, namely KUB Salemo in Mattiro Bombang Village, which produces kambu crabs, but the sales or marketing process is still very limited. Therefore, it is necessary to provide assistance related to technology and marketing of kambu crab products on Salemo Island, Mattiro Bombang Village. The purpose of this activity is to provide technology and assistance related to proper marketing related to the sale of kambu crabs so that the products produced have a wider market and are known by consumers not only in the Mattiro Bombang Village area. This activity was carried out in several stages, namely coordination with partners and preparation for service, preparation of technology, socialization and assistance, and training in making kambu crabs. The results of the service are said to be successful based on the community's pre-post test scores because there is an increase in knowledge after the socialization and assistance carried out. Abstract

Stunting merupakan masalah kesehatan di Kabupaten Pangkajene dan Kepulauan (Pangkep), Sulawesi Selatan, dengan angka prevalensi mencapai 30%. Salah satu upaya untuk mengurangi angka stunting di daerah ini adalah melalui inovasi pangan berbasis sumber daya lokal, khususnya ikan. Artikel ini membahas program pengolahan ikan menjadi surabi, jajanan tradisional yang diperkaya dengan nutrisi, untuk meningkatkan asupan gizi anak-anak di Pulau Samatellu Lompo. Program ini mencakup survei potensi bahan baku, persiapan teknologi pengolahan, pelatihan pembuatan surabi ikan, serta pendampingan dalam proses komersialisasi produk. Hasil dari program ini menunjukkan adanya peningkatan pengetahuan peserta tentang pentingnya konsumsi ikan dan keterampilan dalam pengolahan surabi. Evaluasi pre-test dan post-test menunjukkan peningkatan yang signifikan dalam pemahaman peserta terkait pengolahan pangan bergizi. Melalui kegiatan ini, diharapkan produk surabi ikan dapat membantu meningkatkan asupan gizi anak-anak, sekaligus membuka peluang ekonomi bagi masyarakat setempat. Surabi ikan diposisikan sebagai solusi inovatif untuk mengatasi masalah stunting di daerah kepulauan ini, dengan potensi komersialisasi yang besar. ABSTRACT Stunting is a health issue in Pangkajene and Kepulauan (Pangkep) Regency, South Sulawesi, with a prevalence rate reaching 30%. One of the efforts to reduce the stunting rate in this area is through food innovation based on local resources, particularly fish. This article discusses a program that processes fish into surabi, a traditional snack enriched with nutrition, to improve children's nutritional intake on Samatellu Lompo Island. The program involves a survey of raw material potential, preparation of processing technology, training on surabi fish production, and assistance in the commercialization process. The results of this program show an increase in participants' knowledge about the importance of fish consumption and skills in making surabi. Evaluations from pre-test and post-test show a significant improvement in participants' understanding of nutritious food processing. Through this activity, it is expected that surabi fish products can help improve children's nutritional intake while also providing economic opportunities for the local community. Fish surabi is positioned as an innovative solution to tackle the stunting problem in this island area, with great commercialization potential. Keywords: Fish, Pangkep, stunting, surabi.

Abstract

Silvofishery is a cultivation activity in mangrove or mangrove areas, the type of biota that can be cultivated in mangrove areas using a silvofishery system, one of which is mangrove crab (Scylla olivacea). The research was carried out in the mangrove area of ​​Mandalle Village, Mandalle District, Pangkajene and Islands Regency, South Sulawesi Province. The test animal used was a male mangrove crab (S. olivacea) weighing 146–168 g which was kept in a circular bamboo cage with a diameter of 2.25 m. The results of the Kruskal Wallis analysis show that the moon phase has a significant effect on the absolute growth and daily growth rate of mud crabs, the dark moon phase produces the highest average absolute growth of 14.53 g with a daily growth rate of 0.57%/day. Meanwhile, the full moon phase produced the lowest average absolute growth of 7.82 g with a daily growth rate of 0.32%/day. The results of the Kruskal Wallis analysis showed that differences in lunar phases had no significant effect on the survival of mud crabs.

Abstract

Blue swimming crab (Portunus pelagicus) is a sea crab that is widely found in Indonesian waters. One of the determinants of the success of crab cultivation is the availability of quality seeds. Howewer, blue swimming crab hatchery is currently experiencing problems, namely unstable seed availiability due to high mortality and growth at the larvae stage. This research aims to evaluate the effect of various colors of rearing basins of feeding rate and survival rate of blue swimming crab larvae (P. pelagicus) in zoea stage. The larvae for the study was zoea-1 stage with a stocking density of 50 ind/L. The basins used in this study was a round plastic basin with a volume of 40 L filled with 30 L of media water. The feed used was rotifer and artemia nauplius. The method used was a completely randomized design consist of 4 treatments and 3 replications. The treatments that were the use black, green, blue, and red basins colors. The results of the analysis of variance showed that the color of the basins had a significant effect on the feeding rate (p < 0,05) and very significant on survival rate (p < 0,01) for small blue swimming crab larvae were produced in black basins 90.14 and 16.60%.

Abstract

A leading commodity that has the potential to be developed as an export commodity for Indonesia is seaweed. One type of Gracilaria that has economic value and is widely cultivated is Gracilaria verrucosa. This study aims to analyze the effect of nitrogen (N) and phospor (P) concentration ratio on carbohydrate and lipid content in G. verrucosa seaweed cultivated outdoors. This research was conducted in May-June 2023 at the Hatchery FIKP, Hasanuddin University. Seaweed seedlings were reared for 44 days using 70 cm diameter conical fiber tanks filled with 100 g/150 L of water. This study used a non-parametric method Kruskal-Wallis consisting of 3 treatments and each treatment consisted of 3 replicates so that there were 9 experimental units. Based on the results of Kruskal-wallis analysis showed significant differences in carbohydrate content in seaweed G. verrucosa). The highest carbohydrate content was obtained in the treatment with a ratio of 2 ppm : 1 ppm (A), which is 33.49%, treatment with 2 ppm : 1.5 ppm (B) is 29.56% and the lowest treatment was in the ratio of 2 ppm: 2 ppm (C) which is 29.28%. The highest lipid content was at a ratio of 2 ppm: 2 ppm (C) 0.84% and the lowest at a ratio of 2 ppm: The water quality parameters observed during the study were all suitable for the growth of G. verrucosa.
