Abstract

Omega-3, omega-6, omega-9 fatty acids and Squalene are active components of fish oil that arebeneficial to human health. Squalene is mostly contained in shark liver oil (Centrophorus sp.). The aimof this research was to determine the quality and characteristics of shark fish oil of household productionin Pelabuhan Ratu. The analyses performed were to determine fatty acid profile, primary and secondaryoxidation and characteristics of squalene contained in the shark liver oil. The fatty acid profile showedthat the dominant fatty acids of shark liver oil were oleic acid (28.22%), Eicosapentaenoic Acid (1.54%)and Docosahexaenoic Acid (4.78%). The results of primary and secondary oxidation measurement showedshark liver oil contained a high oxidation value of PV (17.73 mEg/kg), p-AV (29.32 mEg/kg), TOTOX(64.78 mEg/kg) and FFA (4.65%). The values of density and viscosity of the shark liver oil 0.91 g/cm3 and38.18 cPs. Clarity of shark liver oil at a wavelength of 450 nm was 84.98%. GC-MS chromatogram showedthat squalene peak appears at the retention time of 23.357 with a total area of 12.49% and its molecularweight was 410.391 g/mol.

Abstract

Kecamatan Kuala Pesisir merupakan wilayah barat selatan Provinsi Aceh yang mempunyai keragaman hayati (bio-diversity) potensi ikan hasil tangkapan sangat tinggi (KKP Aceh 2015). Ikan-ikan demersal yang telah mulai di lakukan pengolahan ikan asin antara lain ikan kembung, ikan kambing-kambing, ikan kakap. Selain itu pada penelitian Riski et al. (2017) melaporkan bahwa pada sentral pengolahan ikan asin daerah Leupung Aceh Besar sebanyak 50% sampel yang diuji melebihi ambang batas SNI 8273:2016. Maka dari itu perlu dilakukan pengabdian kepada masyarakat terutama pada pelaku UMKM pengoalahan ikan asin guna untuk memberi pelatihan sehingga harapannya dengan adanya pengabdian ini bisa menambah pengetahuan lebih baik dalam proses pengolahan ikan. Pengabdian ini dilakukan dalam beberapa tahap yakni, melakukan sosialisasi Sosialisasi dalam bentuk Focus Group Discussion (FGD), Pelatihan Pembuatan Para-para, Pelatihan Penggaraman Ikan Asin Lumi-lumi dan Pelatihan Penggaraman Ikan Asin Lumi-lumi. Hasil pengabdian ini menunjukan bahwa, adanya peningkatan ketrampilan pelaku UMKM Ikan Asin terkait dengan teknik pembuatan para-para sebagai media penjemuran ikan asin. Adanya peningkatan pengetahuan teknik penggaraman dan pembuatan ikan asin lumi-lumi. Adanya antusias pelaku UMKM dan masyarakat Desa Langkak untuk melanjukan pembuatan ikan asin lumi-lumi.

Abstract

The nutritional content of fish is very high in protein and omega 3 fatty acids, but there is still little interest in eating fish among children. The government is trying to prevent stunting by launching the GEMARIKAN (Gemar Makan Ikan/Fond of eating fish) program to fulfill nutrition sourced from fish. Fish are generally less popular because their shape makes them uninteresting and boring, so interest in eating fish decreases. Housewives are encouraged to play a role in fulfilling children's nutrition through fish intake using various techniques, one of which is processing fish into a variety fish-based food. Alternative fish-based food is made to attract families to consume it by empowering groups of housewives and young women. This training aimed to educate about alternative fish-based food and recommend business opportunities to support additional family income. Training activities were carried out through mentoring and counseling for 20 housewives and young women from Gampong Blang Padang, by forming small groups and providing education regarding techniques for processing fish into dimsum products, fish sticks and fish nuggets. The results of the training showed that housewives and young women were able to make more varied fish preparations. Apart from that, participants received counseling about the benefits of fish for health, not only as an ingredient in making various types of processed fish food that have nutritional and economic value.

Abstract

The downstream fishing industry in the form of fish processing has great potential to improve community welfare. In addition to providing added value to fishery products, fish processing is one solution if there is an overproduction of fishery catches. Salted fish processing producers at MSMEs Jaya Salted Fish in Langkak Village, Kuala Pesisir District, Nagan Raya Regency are currently continuing to improve production efficiency for production optimization. There are technical limitations in terms of production efficiency by partners so that counseling and training on improving production efficiency are needed. The methods used in this service are counseling and training. This activity was carried out at the MSME Jaya Ikan Asin unit in Langkak Village, District. Kuala Pesisir Nagan Raya Regency on October 1-2, 2022. This activity began with the manufacture of fishery products in the form of Bombay Duck salted fish. In this activity, there are several stages of activities, namely surveys, salted fish processing processes, and salted fish drying. This activity is carried out well so that it can increase the number of types of Bombay Duck salted fish production in MSMEs jaya salted fish

Abstract

Ikan kambing-kambing (Canthidermis maculata) merupakan ikan demersal yang potensial. Salah satu produk olahan dari ikan kambing-kambing adalah ikan asin. Tujuan dari penelitian ini adalah menentukan perubahan mutu ikan asin selama penyimpanan. Perlakuan pada penelitian ini adalah pengemasan vakum dan tanpa vakum, serta penyimpanan selama 3 bulan. Pengolahan data peanyimpanan ikan asin menggunakan sample t-test. Parameter yang diamati adalah kadar air, aktivitas air (aw) dan total mikroba (TPC) selama 3 bulan. Pada bulan ke 0, nilai kadar air, Aw dan TPC pada kemasan vakum masing-masing 32.30±0.39%; 0.723±0.00; 3.34±0.00 log cfu/g dan nilai kadar air, Aw dan TPC pada kemasan tanpa vakum masing-masing 32.30±0.39%; 0.723±0.00; 3.34±0.00 log cfu/g. Pada bulan ke 3, nilai kadar air, Aw dan TPC pada kemasan vakum masing-masing 31.95±0.18% , 0.710±0.00 dan negatife, serta nilai kadar air, Aw dan TPC pada kemasan tanpa vakum masing-masing 31.29±0.41%; 0.702±0.02; 4.14±0.00 log cfu/g. Setelah penyimpanan selama 3 bulan, nilai ketiga parameter mengalami fluktuasi, namun tidak signifikan

Abstract

Ikan tuna merupakan salah satu jenis ikan pelagis  yang memiliki nilai ekonomis penting dan tersebar hampir di seluruh wilayah laut Indonesia. Nilai ekonomis ikan tuna menjadikannya sebagai komoditas utama yang berguna untuk konsumsi ikan skala local maupun ekspor. Ekspor ikan tuna segar salah satunya pada PT yakin pasifik Tuna Banda Aceh memiliki tujuan ekspor ke negara Amerika. Penelitian ini bertujuan untuk mengetahui pengaruh harga ekspor, jumlah produksi ikan tuna, nilai tukar rupiah (kurs) terhadap volume ekspor ikan tuna Indonesia pada PT yakin Pasifik Tuna. Hasil penelitian menunjukkan tingkat Pengaruh nilai ekspor ikan tuna segar di PT. Yakin Pasifik Tuna ke Negara Amerika Serikat sangat berhubungan erat dengan Volume Ekspor Ikan Tuna Segar ke Negara Amerika Serikat. Faktor-faktor yang mempengaruhi tingkat variabel Jumlah Produksi Ikan Tuan Segar (X1), Harga Riil Ikan Tuna Segar (X2) dan Nilai Tukar Riil Rp/US (X3) terhadap Volume Ekspor Ikan Tuna Segar ke Negara Amerika Serikat. Tingkat faktor-faktor yang mempengaruhi nilai ekspor ikan tuna segar di PT. Yakin Pasifik Tuna ke negara Amerika Serikat tahun 2022 sebesar 4,34 dan t tabel sebesar 1,833 maka nilai t hitung > t tabel (4,345 >1,833) dengan tingkat signifikan sebesar 5% yang memiliki arti pengaruh nilai ekspor ikan tuna segar di PT. Yakin Pasifik Tuna ke Negara Amerika Serikat yaitu jumlah produksi ikan tuan segar, harga riil ikan tuna segar dan nilai tukar riil Rp/US sangat berhubungan erat dengan meningkatnya volume ekspor ikan Tuna Segar ke Negara Amerika Serikat. Berdasarkan hasil yang diperoleh faktor mempengaruhi volume Ekspor Ikan Tuna Segar ke Negara Amerika Serikat di PT. Yakin Pasifik Tuna yaitu variabel harga riil Ikan Tuna Segar yang paling dominan, hal ini dilihat dari hasil nilai regresi linear berganda terbesar yaitu 8,197 pada atribut Harga Riil Ikan Tuna Segar ini memiliki tingkat kepentingan yang tinggi

Abstract

This research aims to analyze and determine the effect of providing probiotics on the dynamics of water quality in several intensive system vannamei shrimp ponds. The research method uses a survey method, namely taking samples directly in the field. The results of the research obtained optimal water quality parameters for the survival of vannamei shrimp in ponds A and B, namely salinity, temperature, depth, brightness, DO, pH, alkalinity, nitrite, nitrate and total hardness, while in pond C the optimal parameters were salinity, temperature, depth, brightness, DO, pH, alkalinity and total hardness. The best water quality for the growth of vannamei shrimp is found in pond A, because with a stocking density of 168 thousand fish and giving probiotics twice a week, it can produce good water quality compared to ponds B and C with probiotics given three times a week, so it can benefit farmers because of reduced use probiotics. The results of observations of phytoplankton in ponds A, B and C obtained the species Chatoceros, Dinobryon, Lauderia, Lingulodinium, Nodularia, Oscillatoria, Planktothrix, Proboscia. Meanwhile, zooplankton in ponds A, B, C were obtained by Acartia, Amphipleura pellucida, Boeckella triarticulata, Nematodes genus.

Abstract

Protein from fish is needed by the human body because it is relatively easy to digest. Policies to support the availability of marine resources as a source of animal protein play an important role in improving diets so as to prevent disruption of children's growth. Children are the forerunners of the nation's next generation. The formation of children's qualities since school will influence the quality of Human Resources (HR) when they reach productive age. School-aged children are a group that requires attention when consuming food and nutrients. Optimal growth and development of school-aged children depends on providing nutrition with good quality and quantity. The level of fish consumption in fishing families is influenced by several things, namely income, number of family members, perception of the price of fish, tastes, and also the level of education, or perhaps also the level of knowledge regarding the benefits of consuming fish. It is hoped that various types of interesting processed fish products can increase fish consumption patterns in the community, especially among children who are growing up. On this basis, it is necessary to hold a GEMARIKAN campaign (Movement to Promote Fish Eating) in schools, especially elementary schools. This activity aims to provide education about the benefits of consuming fish, and shift snacks to processed fish products, which are healthy and beneficial for children's growth and development.

Abstract

Ikan merupakan hasil tangkapan harus segera ditangani untuk menghambat penurunan mutu dan penurunan harga jualnya. Namun demikian, nelayan sebagai pelaku utamanya tidak mempertimbangkan apakah upaya yang dilakukan tersebut layak secara teknis atau ekonomis. Penelitian ini bertujuan untuk mengetahui proses penanganan ikan di TPI Higienis di PPN Sibolga dan mengetahui fasilitas dan peralatan pendukung yang terdapat di TPI Higienis di PPN Sibolga dalam mempertahankan mutu ikan. Penelitian ini menggunakan metode survei dan pengumpulan data dilakukan dengan cara wawancara dan observasi. Analisis data yang digunakan dalam penelitian ini adalah analisis deskriptif kualitatif. Hasil penelitian menunjukan bahwa proses penanganan ikan di TPI Higienis di PPN Sibolga sudah baik karena sudah menggunakan konveyor dan dilengkapi dengan kanopi untuk menjaga mutu ikan tetap baik. Selanjutnya fasilitas TPI Higienis di PPN Sibolga sudah lengkap untuk menerapkan standar yang tinggi dalam pengelolaan hasil perikanan dan pengelolaan lingkungan pelabuhan
