Abstract

Catfish is one of the leading commodities in aquaculture in Indonesia. Catfish derivative products are currently very much developed, one of them was smoked catfish. The characteristics of smoked fish are influenced by several factors, including the type of firewood used. This study aims to examine the chemical and physical characteristics of smoked catfish with different burners. The smoking method used is heat fumigation. The parameters observed were proximate, pH value, phenol content, formaldehyde content, characteristics of color, texture and aroma. The results obtained, protein content, water content, ash content and fat content using laban wood are higher than rambutan wood 60.6%:58.8%; 6.65%:5.54%; 7.97%:7.29%; 20.4%;14.6% repectively. The phenol value of smoked fish using laban wood is higher than that of rambutan wood 0.2401ppm:0.2204ppm respectively. Formaldehyde levels in both types of wood are negative. The characteristics of the two smoked fish are the same in texture, aroma, pH and temperature parameters were solid texture, typical aroma of smoked fish, pH value 6.7 with a temperature of 80-100oC respectively. But the color of smoked fish by burning laban wood is bright brown while the rambutan wood is shiny brown.

Abstract

Shark liver by-product has potential to be reprocessed into valuable products. The aim of this study was to utilize byproduct of shark in West Aceh to become fish oil. The oil was extracted using an oven with different temperatures (40, 50, and 60°C) for 8 hours. The results of proximate analysis showed that the protein content was 15.71 ± 0.13%, fat was 14.70 ± 1.66%, moisture was 58.11 ± 0.57%, ash was 1.19 ± 0.006, and carbohydrate was 10.30 ± 2.12%. The yield of liver oil reached 90% and contained omega-3 fatty acids including EPA and DHA. The heavy metal residue of shark liver oil was still below the threshold set by BSN, with an exception for Cd with 0.892 ppm. Saturated fatty acid (SFA) was 34.75% with palmitic acid as the dominant. Mono unsaturated fatty acid (MUFA) content was 12.86% with oleic acid was the dominant. Poly unsaturated fatty acid (PUFA) content was 17.29% with DHA as the main component. The highest yield of shark liver oil was obtained from extraction at 60°C (49.4%). The heavy metal residue of the oil was still below the threshold, except for Cu. The 50°C extraction temperature was considered as the best treatment resulting fish oil with 41.67% SFA, 14.37% MUFA, and 21.82% PUFA. Abstract

Pesatnya pertumbuhan industri di wilayah pesisir Aceh Barat diduga menjadi sumber pencemaran logam berat di perairan dan terakumulasi pada biota laut, salah satunya yaitu kerang lokan (Geloina erosa). Penelitian ini bertujuan untuk menganalisis kandungan logam berat Hg, Cd, Pb, Cu, As, dan Zn pada kerang lokan mentah dan rebus, serta menentukan batas toleransi konsumsi kerang lokan yang mengandung logam berat. Pengambilan sampel kerang lokan dilakukan di 3 stasiun, yaitu perairan Peunaga Rayeuk, Ujong Baroh, dan Kuala Bubon. Sampel dikelompokkan menjadi dua perlakuan, yaitu P1 (mentah) dan P2 (rebus). Analisis kandungan logam berat menggunakan Atomic Absorbtion Spectrophotometry (AAS). Hasil analisis kandungan logam Hg pada stasiun 2 yaitu P1 13,2754 mg/kg dan P2 sebesar 12,5491 mg/kg, pada stasiun 3 yaitu P1 1,2418 mg/kg dan P2 0,1956 mg/kg. Kandungan logam Cd hanya terdeteksi pada stasiun 2 yaitu P1 0,0058 mg/kg. Kandungan logam Cu pada stasiun 1 yaitu P1 sebesar 0,0686 mg/kg dan P2 0,0541 mg/kg, pada stasiun 2 yaitu P1 0,1381 mg/kg dan P2 sebesar 0,0999 mg/kg, dan pada stasiun 3 yaitu P1 sebesar 0,1062 mg/kg dan P2 sebesar 0.022 mg/kg. Kandungan logam Zn pada stasiun 1 yaitu P1 3,4883 mg/kg dan P2 s 3,3229 mg/kg, pada stasiun 2 yaitu P1 sebesar 2,7643 dan P2 sebesar 2,6225 mg/kg, dan pada stasiun 3 yaitu P1 4,2511 mg/kg dan P2 2,8687 mg/kg. Batas maksimum berat daging kerang lokan yang boleh dikonsumsi untuk orang dewasa (50 kg bb) yaitu 0,131 kg daging per minggu.

Abstract

Gel peel off face mask is one type of facial mask that can increase the comfort of use and is expected to increase antioxidant activity on the skin. The mask is shaped like a paste, with a thick texture. Water hyacinths (Eichhornia crassipes) is an aquatic plant that lives wild in the waters of West Aceh. The purpose of this study was to determine the yield of methanolic crude extract of water hyacinths’s leaves and to find out the best formulation of gel peel off face mask from methanol crude extract of water hyacinths’s leaf based on the physical characteristics of the mask. The extraction method used was maceration using methanol as a solvent. The differences in the composition of the extracts used were concentrations of 0%, 2%, 4% and 6%. Exploration of bioactive compounds in crude extract using phytochemical test. Assessment of the physical characteristics of the mask preparation included organoleptic tests, homogeneity, adhesion, dispersibility, pH, and drying time. The crude extract contains flavonoid compounds, tannins, steroids, terpenoids, and saponins. Formulation 3 for making gel peel off masks was the best mask with an assessment of its homogeneity being stable and no change, adhesion for 5.30 seconds, dispersion of 5.9 cm, pH 6.4, and drying in 27.48 minutes. The formula has DPPH inhibition (% inhibition) of 76.54%.

Abstract

Yellow fin tuna (Thunnus albacares) is one type of high economic value fish. The tuna fillet processing itself produces some byproducts including fish bones. The byproduct can be reused as a product and food material. This study aimed to know the chemical quality of the yellow fin tuna bone powder with different drying temperature. The method used were experimental with 3 treatments and descriptive analysis. The treatment of temperature drying (90oC, 105oC, and 120oC), and the method of proximate analyzed refers to SNI. The parameters observed were yield, moisture, ash, protein, fat and calcium content. The result showed that yellow fin tuna bone powder with different drying temperature was best at treatment with value moisture content of P1 = 10.99 %,  ash content of  P3 = 59.95 %, protein content of P1 = 15.84 %, fat content of  P3 = 7.05 %, calcium content of P3 = 20.75%  and yield of P1 = 22.92 %.

Abstract

Cathepsin was proteolytic enzyme which is found animal tissues included fish. Cathepsin found in fish muscle tissue, cathepsin and other hydrolyzing enzymes were place in subcellular organelles and divided into two places,  that was in muscle fibers and extracellular matrix. The aimed of this study was to the characterization of cathepsin enzyme especially catfish. So that in enviromental condition that can increased the activity of cathepsin enzyme an approtiate handling process can be carried out. The method of analyze enzyme activity, while the measurement of protein concentration refered to Bradford (1976). The treatments in this study was determination temperature (30oC, 40oC, 50oC, dan 60oC) and substrate (1.5% 2%, 2.5%). The result showed of enzyme activity with detrmination temperature very influential and fluctuating, the optimum temperature was 30oC where the activity reaches 0.38 U/ml. The best activity treatment of substrate was 1.5% where the activity reaches 0.42 U/ml. Abstract

Catfish was a suitable alternative for the main raw material for making surimi, because it has a high protein content, easy to found and than has good prospective to be made surimi product. The aimed of this study to analyze effect of defatting, washing cycle, and frozen storage was add cryoprotectant. This research was conducted three step that is deffating, washing, and made surimi. The concentration of the selected for defatting processed was NaH2PO4 2% during 10 minutes and the result fat content was 0.15%. The best washing was one time of made kamaboko and has gel strength (510.35 g.cm), and the best quality (PLG : 0%; pH : 6.53; water content : 76.6%; folding test : 3.22; bite test : 3,77) when compared with washing cycle two times and three times. The best cryoprotectant addition was 4% trehalose and result of gel strength was 354.15 g.cm for three weeks of frozen storage.

Abstract

Fish handling and preservation  techniques are important things that must be applied in the fisheries industry. The purpose of this handling and preservation is to maintain the quality of the fish until it reaches the consumer. Handling activities must be carried out from upstream and downstream, namely from fishing activities to processing into products. Proper and good handling and preservation could produce prime commodities, high selling value, and expand market   access.  This  indirectly   has  the  potential   to  increase  fishermen’s   income.  The socialization  activity  was carried  out in the hall of the Department  of Marine  Affairs  and Fisheries (DKP) of West Aceh Regency. The purpose of this activity is to provide fishermen with an understanding of how to properly handle fish on board and preservation techniques that can be applied on board. The socialization  was held in two sessions. The first session presented  onboard handling technology  and the second session preservation  technology  on board. The socialization activity was closed with a discussion session with the fishermen, in this session a lot of information was received from fishermen regarding conditions in the field, so that it could be input in finding the best solution for fishermen in West Aceh. One solution given is to redesign the hatch space by adding aluminum foil to the insulator of the hatch so that it can be used optimally and pay more attention to the ratio of the amount of ice and fish during storage on the boat so that it can maintain the quality of the fish until the fish is landed.

Abstract

Mitigation of climate change is a business activity to reduce the risk of increasing greenhouse gas emissions in the atmosphere, gases can occur naturally in the environment and can also arise due to human activities. Mangroves are carbon-rich ecosystems and have an important role in climate regulation, namely by their ability to store large amounts of carbon as an effort to offset anthropogenic CO2 emissions. Mangrove ecosystems are able to store high carbon which is useful in reducing greenhouse gas emissions, mangrove ecosystems are also able to store carbon three to four times greater than ordinary tropical forests. The activity was carried out in Lhok Bubon Village, Samatiga District, West Aceh District. This activity was attended by the academic community of FPIK UTU with 50 participants. The method of implementing community service activities used was counseling and demonstration methods with students through planting 100 mangrove stems, namely Rhizopora sp. Protecting the mangrove ecosystem is our common awareness, especially students as the next generation of the nation, one of which is by not cutting down mangrove trees to be used as firewood or charcoal, opening up ponds and destroying the original habitat of mangrove ecosystems that can disrupt coastal aquatic biota. Students are given education (counseling) about the importance of conserving mangrove ecosystems from the threat of climate change mitigation. Students are very enthusiastic and active, it can be seen from the seriousness in participating in mangrove planting activities through discussions, questions and answers, and hands-on practice. Sustainability of a program like this is needed and efforts are made to become a routine program of gampong activities, NGO activities and also academic activities, because with sustainability it will be faster to see the results that have been expected together.
