Abstract

Red snapper processing industry (Lutjanus malabaricus) produces more than 50% solid waste and by-products, so the by-product of red snapper processing, viz., the fish head is a potential source of omega-3. This study aimed to determine the rendering method and extraction time, producing the best quality fish oil that is rich in omega-3 from the red snapper head. The samples were taken from a fish fillet industry in Pasuruan, East Java, Indonesia. Randomized Block Design (RBD) with two factors has been used to evaluate different rendering methods (wet and dry rendering) and extraction time (1, 2, and 3 hours) in triplicate. The results showed that the best fish oil was produced by wet rendering method in 1 hour of extraction time, achieving peroxide number 0.98 meq/kg, free fatty acid 1.02%, acid number 2.02%, extraction yield 9.02%, water content 4.22% (wb), brightness (L) 43.5, redness level (a) -0.9, and yellowish level (b) 2.7. The fish oil consisted of 31 types of fatty acids with palmitic acid as the major fatty acid. Additionally, the oil also contained omega-3 (14.02%) as well as AA, DHA, and EPA.

Abstract

Trehalosa sebagai krioprotektan dalam adonan beku berfungsi untuk mencegah kerusakan adonan roti saat penyimpanan beku dengan cara melindungi membran ragi dan mencegah melemahnya jaringan gluten. Penelitian ini bertujuan untuk mengetahui konsentrasi penambahan trehalosa yang efektif untuk mempertahankan karakteristik roti manis selama pembekuan. Rancangan percobaan yang digunakan yaitu Rancangan Tersarang (Nested) dengan 2 faktor yaitu penambahan trehalosa (0; 0,1; 0,15 dan 0,2% b/b) dan waktu pembekuan (0, 15, 30, 45, dan 60 hari). Hasil penelitian menunjukkan bahwa penambahan trehalosa efektif mempertahankan yeast yang hidup sebanyak 4,29%, dimana pada hari ke-0 ragi yang hidup sebanyak 33x10 6 CFU/g dan pada hari ke-60 ragi yang hidup sebanyak 141,5x10 6 CFU/g, selain itu juga dapat mempertahankan spread ratio sebanyak 2,4 cm, volume spesifik sebesar 1%, volume pengembangan sebesar 1,6%, dan menurunkan daya tekan sebanyak 0,6 N sehingga roti menjadi semakin lembut. Skor organoleptik untuk rasa agak enak, aroma agak harum, tekstur agak lembut dan warna agak menarik.

Abstract

Sourdough adalah campuran terigu, air, dan atau komponen lain yang difermentasi dengan starter alami yang mengandung bakteri asam laktat (BAL) dan yeast. Campuran tersebut digunakan sebagai agen pengembang dalam produksi roti manis. Sourdough dalam penelitian ini menggunakan fermentasi air rendaman apel manalagi sebagai raginya. Sourdough dapat mengubah ketersediaan fraksi serat, protein, dan meningkatkan kandungan mineral pada tepung. Tujuan dari penelitian ini adalah untuk mengetahui pengaruh penambahan sourdough starter terhadap karakteristik kimiawi roti manis. Percobaan terdiri atas 6 level perlakuan yaitu perbedaan konsentrasi penambahan sourdough starter pada adonan yaitu 0% sebagai kontrol, 10%, 15%, 20%, 25%, 30%. Parameter pengamatan yang digunakan meliputi kadar air, abu, protein, lemak, karbohidrat, dan serat pangan total. Hasil penelitian menunjukan bahwa perlakuan penambahan proporsi sourdough starter yang berbeda berpengaruh nyata terhadap kadar air dengan kisaran 25,09-31,20% (basis basah), kadar abu dengan kisaran 1,29-1,82%, protein dengan kisaran 6,57-18,22%, lemak dengan kisaran 1,85-8,39%, karbohidrat dengan kisaran 45,4458,67%, dan serat pangan total dengan kisaran 7,48-14,02%. Terjadi peningkatan kadar serat sebesar 2,4 kali lipat pada roti sourdough dibandingkan roti manis.

Abstract

Analysis of the relationship between physical properties and consumer acceptance, which is commonly influenced by sensory properties is crucial in delivering a high-quality food product. Therefore, this study aimed to analyze the effect of physical properties, including hardness, adhesiveness, dough expansion, specific volume, color intensity (L*, a*, b*, and °hue), browning index, and analysis of consumer acceptance by employing Partial Least Squares (PLS) regression. The analysis focused on high-fiber white bread made by substituting coconut dregs and avocado seed flour with different ratios, denoted as P0 (control), P1 (90% wheat flour: 5% coconut dregs flour: 5% avocado seed flour), P2 (85% wheat flour: 10% coconut dregs flour: 5% avocado seed flour), P3 (80% wheat flour: 15% coconut dregs flour: 5% avocado seed flour), P4 (75% wheat flour: 20% coconut dregs flour: 5% avocado seed flour), and P5 (70% wheat flour: 25% coconut dregs flour: 5% avocado seed flour). The results showed that consumer preferences had a positive correlation with the physical properties of white bread, including hardness, adhesiveness, dough expansion, specific volume, as well as colors L*, and °hue, while, a*, b*, and had a negative correlation with the browning index. The circular correlation analysis between physical properties and consumer acceptance indicated that the substitution of 25% coconut dregs flour and 5% avocado seed flour in white bread was accepted by consumers.
