Abstract

This study aims to analyze the business model applied by UMKM Torani Sumber Makmur through the Business Model Canvas approach and analyze the added value of processed fish products at UMKM Torani Sumber Makmur. This research has been conducted at UMKM Torani Sumber Makmur, Cirebon City in August 2024 - April 2025. The research method used is a case study method with a quantitative and qualitative approach. Data collection was carried out by observation, interviews, questionnaires, and documentation. The sampling method used was purposive sampling, and the snowball sampling method. Data analysis used is business model canvas analysis and added value. The research results from the business model canvas analysis show that the application of the business model at UMKM Torani Sumber Makmur can contribute to the success of the business being run. The results of the added value analysis show that processed fish products at UMKM Torani Sumber Makmur have added value with the highest added value being ekado products amounting to Rp.219,025 / kg with a percentage ratio of added value to product value of 78.22%. Fish roll products amounted to Rp.135,194 / kg with a percentage ratio of added value to product value of 72.82%. Salmon fish dumplings products amounted to Rp.112,227 / kg with a percentage ratio of added value to product value of 53.44%. Salmon fish meatball products amounted to Rp.88,717 / kg with a percentage ratio of added value to product value of 47.96%

Abstract

Penelitian ini bertujuan untuk menentukan tingkat penambahan sukun pada abon ikan tongkol yang paling disukai panelis berdasarkan karakteristik organoleptik. Penelitian ini dilaksanakan pada bulan Februari hingga April 2024 di Laboratorium Pengolahan Hasil Perikanan, Fakultas Perikanan dan Ilmu Kelautan, Universitas Padjadjaran. Pengujian proksimat dan kadar serat kasar dilakukan di Laboratorium Teknologi Pangan, Fakultas Teknik, Universitas Pasundan. Metode penelitian yang digunakan yaitu eksperimental dengan 4 perlakuan penambahan sukun sebesar 0%, 10%, 20%, dan 30% dengan 20 orang panelis semi terlatih sebagai ulangannya. Parameter yang diamati adalah tingkat kesukaan berdasarkan karakteristik organoleptik (kenampakan, aroma, tekstur, dan rasa), uji proksimat (kadar air, kadar abu, kadar protein, kadar lemak, dan kadar karbohidrat) dan kadar serat kasar. Data yang dihasilkan dari uji hedonik dianalisis menggunakan uji Friedman dan untuk menentukan karakteristik yang paling penting menggunakan uji Bayes. Hasil penelitian menunjukkan bahwa penambahan sukun sebesar 10% menghasilkan abon ikan tongkol yang paling disukai panelis dibandingkan perlakuan lainnya dengan nilai rata-rata kriteria kenampakan 7,4; aroma 6; tekstur 8,4; dan rasa 6,7. Hasil uji proksimat dan kadar serat kasar yang dihasilkan yaitu kadar air 11,65%, kadar abu 4,26%, kadar protein 26,99%, kadar lemak 9,58%, kadar karbohidrat 42,69%, dan kadar serat kasar 4,68%.

Abstract

Fisheries management policy regulations are a fundamental pillar in addressing the problem of fisheries resource utilization, including overfishing, by providing controlled limits for fishermen and the industry. This study aims to analyze glass eel catches in the Cimandiri River Estuary, Palabuhanratu, Sukabumi, West Java, after the implementation of Ministerial Decree No. 80 of 2020. This study was conducted in February - March 2025 using a survey method with a quantitative approach and descriptive analysis of the data. The determination of respondents was carried out using a purposive sampling technique with a total of 30 people. The results of the study indicate that this policy is not fully effective. Fisherman compliance is still low due to a lack of understanding, economic factors, and minimal supervision.

Abstract

Riset dilaksanakan di CV. Olahan Berkah Sadayana pada bulan Juni sampai Agustus 2023 untuk memberikan informasi terkait manajemen industri dan nilai tambah bakso ikan tuna di CV. Olahan Berkah Sadayana. Metode yang digunakan studi kasus. Teknik pengumpulan data menggunakan hasil pengamatan lapangan, wawancara, dan kuisioner. Metode pengambilan sampel  yang digunakan menggunakan teknik sampel dengan kriteria responden. Hasil riset menunjukkan bahwa manajemen Indutri CV. Olahan Berkah Sadayana terdiri dari pengadaan bahan baku yaitu tetelan ikan tuna yang berasal dari Pelabuhan Muara Baru. Proses pengolahan bakso ikan menggunakan Alat-alat semi modern. Pemasaran yang dilakukan dengan segmentasi pasar secara statis, penjualan dilakukan secara langsung ke pasar tradisional yang telah mencangkup wilayah Garut dan Jakarta. CV. Olahan Berkah Sadayana memberikan nilai tambah sebanyak Rp15.024,-/kg dengan rasio sebesar 23% sehingga berada pada kategori nilai tambah yang positif. Keuntungan yang diterima perusahaan sebanyak Rp10.357,-/kg dengan tingkat keuntungan sebesar 16%.

Abstract

This research aims to analyze the marketing channels for koi fish at the UPTD Freshwater Ornamental Fish Promotion Center in Rawalumbu District, Bekasi City. This research was carried out from March 2024 to April 2024 using the snowball sampling method or snowball technique. The parameters analyzed are marketing channels, marketing margins, revenue and cost balance (BCR), and transportation techniques for koi fish. This koi fish marketing channel analysis was carried out at the UPTD Freshwater Ornamental Fish Promotion Center in Rawalumbu District, Bekasi City. Based on the research results, the results showed that the koi fish marketing channel pattern at the UPTD Freshwater Ornamental Fish Promotion Center in Rawalumbu District, Bekasi City has two fish marketing channel patterns. In the channel I pattern, it consists of (cultivators, collectors, wholesalers, retailers and final consumers), channel II (cultivators, collectors, retailers and final consumers). The most efficient marketing channel of the two existing channels is channel II, seen from its revenue and cost balance (BCR) value of 1.3, It is recommended that further research be carried out in this research using a different problem approach method so that information about koi fish marketing can be used better.

Abstract

Indonesia is the world’s largest producer of seaweed, contributing 16.2% to the global market, yet most of its seaweed is still exported in raw form. This limits added value creation and hinders the growth of micro, small, and medium enterprises (MSMEs). NORIbet, a seaweed-processed MSME based in Bandung, West Java, aims to address this gap by developing value-added seaweed products. However, the business still faces challenges in cost management, marketing, and technology access. This research was conducted from June to October 2024 to analyze NORIbet's business profile using the Business Model Canvas (BMC) and evaluate its financial feasibility. A descriptive case study approach combining qualitative and quantitative methods was used, with data collected through observations and interviews involving two business owners and two production staff, selected using purposive sampling. Financial feasibility was analyzed through indicators such as profit, revenue cost ratio (R/C), break even point (BEP), payback periods (PP), and sensitivity analysis. Findings indicate that NORIbet successfully implements the 9 BMC elements in a well-structured manner. The business earned an annual profit of IDR 766,334,100 with a profitability rate of 56.1% and an R/C ratio of 2.28. Payback period is estimated at 4.6 months, and each product packaging type has its own BEP unit. Sensitivity analysis showed that a 10% increase in cost reduced profitability to 51.7%, while a 10% cost reduction increased it to 60%, indicating strong cost efficiency and operational resilience. These results confirm that NORIbet is highly feasible and has strong development potential.
