Abstract

Tujuan dari penelitian ini adalah untuk membandingkan pengaruh teknologi proses fermentasi biji kakao (Theobroma cacao L) dengan pre-conditioning terhadap derajat fermentasi dan derajat keasaman selama proses fermentasi. Penelitian ini dilakukan dengan menggunakan rancangan acak lengkap faktor tunggal yaitu: teknologi (T): (T1 = teknologi fermentasi tanpa pre-conditioning; T2 = teknologi fermentasi dengan teknologi pre-conditioning I dan T3 = fermentasi dengan pre-conditioning II) dengan fermentasi waktu: 3, 4 dan 5 hari. Parameter yang dianalisis adalah derajat fermentasi dengan nilai indeks fermentasi dan derajat keasaman dengan pH. Hasil penelitian menunjukkan bahwa waktu fermentasi berpengaruh sangat signifikan terhadap derajat keasaman namun tidak berpengaruh nyata terhadap derajat fermentasi.

Abstract

Community service is carried out as part of the implementation of the Tri Dharma of Higher Education which aims to assist the community in increasing knowledge and skills in the field of making brown sugar that utilizes the sap of palm oil stems. Oil palm stem sap can be processed into brown sugar which is an alternative for processing palm oil waste in Sei Musam Village, Sei Batang Serangan District, Langkat Regency. The method of implementing this community service activity is in the form of assistance to brown sugar producers in the form of technology transfer, management, and equipment support. Assistance activities carried out for 2 (two) days. The result of the mentoring activities is an increase in palm sap processing skills, and an increased understanding of business management, especially in financial governance with simple bookkeeping. Assistance to brown sugar artisans needs to be done considering the quality of brown sugar produced so far is still low and the shape of the brown sugar produced is not uniform. The assistance team provided equipment in the form of a brown sugar molding tool to produce a uniform brown sugar mold so that when it is packaged it looks neat for marketing. From the community service activities that have been carried out, it shows that the craftsmen are able and successful in making brown sugar uniform shapes and are able to calculate the cost of producing brown sugar from palm oil stem sap.

Abstract

Kegiatan pengabdian kepada masyarakat dilaksanakan secara kolaborasi oleh Universitas Medan Area, Institut Teknologi Sawit Indonesia, dan Politeknik MBP. Latar belakang kegiatan adalah kondisi dan potensi yang terdapat di Desa Patumbak I dengan mitra kegiatan adalah anggota pemberdayaan dan kesejahteraan keluarga. Tujuan dari kegiatan ini adalah untuk meningkatkan kapasitas anggota pemberdayaan dan kesejahteraan keluarga melalui penyuluhan dan pelatihan serta demonstrasi pembuatan sabun souvenir. Demonstrasi menghasilkan produk sabun souvenir dan bersifat soap base. Kegiatan pengabdian diikuti oleh 31 orang peserta dan berhasil; meningkatkan antusias dan motivasi peserta; meningkatnya pengetahuan, pemahaman dan keterampilan membuat sabun. Nilai pemahaman sebelum dilakukan pelatihan sebesar 8,06% dan setelah kegiatan berakhir meningkat menjadi 97,31%.

Abstract

The utilization of coffee husk waste (cascara) as a functional drink still faces obstacles due to low consumer acceptance because of its less favored taste and aroma. This study aimed to determine the effect of cascara tea formulation with the addition of ginger and roselle on physicochemical quality and consumer acceptance. The study used a Completely Randomized Design (CRD) non-factorial with four treatments and three replications, namely C0 (100% cascara), C1 (50% cascara + 50% ginger), C2 (50% cascara + 50% roselle), and C3 (40% cascara + 30% ginger + 30% roselle). Parameters observed included moisture content, pH, organoleptic characteristics (aroma, color, taste), and total phenols in the best treatment. The results showed that the formulation had a significant effect on pH (P<0.05), aroma, and taste (P<0.01), but no significant effect on moisture content and color (P>0.05).. The best treatment was obtained in C3 with an aroma score of 3.84 and a color score of 4.50. Analysis of total phenols in the best treatment showed a value of 44.39%. The combination of cascara, ginger, and rosella can improve consumer acceptance and produce an herbal drink that has the potential as a source of natural antioxidants.

Abstract

Crude Palm Oil (CPO) contains abundant natural beta-carotene compounds, but under heat and oxygen exposure during storage, these antioxidant compounds can change into pro-oxidants that accelerate oil rancidity. The bleaching process using the adsorption method is an effective way to reduce these pigments, thereby increasing the oxidative stability of CPO. This study aims to compare the effectiveness of environmentally friendly granular adsorbents prepared from a combination of solid waste (palm oil mill boiler ash, bottom ash) activated with HCl and Aquades. Polypropylene was used to adsorb beta-carotene via the column method. The experimental design used a non-factorial Completely Randomized Design (CRD) by varying the ratio of the polymer mixture to the boiler ash, namely S0 (1:1), S1 (1:3), and S2 (3:1), using a column flow rate of 0.125 ml/second at an oil temperature of 60°C. The CPO quality parameters evaluated included beta carotene content, Deterioration of Bleachability Index (DOBI) value, Free Fatty Acid (FFA) content, and water content. Based on statistical results from the One-Way ANOVA test, variations in adsorbent composition had a significant effect on the reduction in beta-carotene content and the DOBI value. Conversely, variations in the ratio did not significantly affect the FFA and water content parameters. Treatment S1 (ratio 1:3) was identified as the optimal composition, producing the highest absorption effectiveness and reducing beta-carotene levels and DOBI values. All treatments after the adsorption process were shown to maintain CPO quality parameters at acceptable standards without compromising the oil's chemical stability. Based on these findings, increasing the silica content of boiler ash was empirically shown to increase porosity and the number of active sites for the adsorption of non-polar organic compounds in CPO.

Abstract

Crude Palm Oil (CPO) still contains various impurities that can lower the quality of the oil, thus requiring a refining process to improve its quality. This study aimed to evaluate the effectiveness of palm shell activated carbon modified with sodium alginate as an adsorbent in CPO refining. The study employed a non-factorial Completely Randomized Design (CRD) with five levels of sodium alginate concentration (0%, 1%, 2%, 3%, and 4%) and three replications. The observed parameters included water content, impurities, free fatty acids (FFA), and the Deterioration of Bleachability Index (DOBI) value. Data were analyzed using ANOVA at a 95% confidence level. The results showed that the treatment had a significant effect (P<0.05) on all parameters. The lowest moisture content was seen in treatment N3 at 0.085%, while the lowest impurity content was in treatment N1 at 0.384%. The lowest free fatty acid value was in treatment N0 at 45.590%, and the highest DOBI value was also in treatment N0 at 0.57. The study shows that activated carbon made from palm oil shells with added sodium alginate could be a good alternative adsorbent for the CPO purification process because it can really help improve the quality of crude palm oil.
