Abstract

Tanaman karet kebo (Ficus elastica L.) adalah tanaman hias yang jarang dimanfaatkan untuk dikonsumsi. Penelitian ini menjadi inovasi pembuatan minuman fungsional ekstrak daun karet kebo dan ekstrak serai. Metode penelitian ini menggunakan Rancangan Blok Lengkap (RBL) dengan duafaktor yaitu rasio ekstrak karet kebo dan ekstrak serai (70%:30% w/w; 50%:50% w/w; 30%:70% w/w), selain itu juga rasio ekstrak stevia dan larutan gula (0:100%, 50%:50%, 100%:0), yang memiliki 2 pengulangan dan dihasilkan 18 sampel. Minuman fungsional ini diuji dengan analisisflavonoid, tanin, uji padatan terlarut, gula reduksi, gula total, dan organoleptik. Analisis flavonoid memiliki sampel terbaik pada formulasi H1T3 dengan kadar 10,99 mg/100g. Analisis tanin memiliki sampel terbaik pada H3T2 dengan kadar 4,56 mgTAE/g. Sedangkan pada uji padatan terlarut memiliki sampel terbaik pada H1T1 sebanyak 157 mg/L. Berdasarkan uji organoleptik hedonik rasa, aroma, dan warna formulasi terbaik adalah H1T2. Analisis gula reduksi memiliki sampel terbaik padaH3T3 dengan nilai 18,6710%. Sedangkan analisis gula total memiliki sampel terbaik pada H2T3 dengan nilai 30,1584%. Dari hasil parameter dapat disimpulkan bahwa minuman fungsional ekstrak daun karet kebo dan ekstrak serai memiliki sampel terbaik pada formulasi  ekstrak karet kebo dan serai (70:30%) serta ekstrak stevia dan larutan gula (100:0%) , berdasarkan uji organoleptik ekstrak karet kebo dan serai (70:30%) serta ekstrak stevia dan larutan gula (50:50%).  Kata Kunci : ekstrak karet kebo , ekstrak serai , ekstrak stevia, minuman fungsional

Abstract

This qualitative study analyzes the adaptive strategy of the innovative culinary product Lep One Desert, a modified version of the traditional Klepon cake. Facing the challenges of modernization, Lep One Desert maintains the visual identity of Klepon (green color and shredded coconut) while making a radical innovation by replacing the traditional palm sugar filling with a blend of caramel and chocolate. Using a descriptive case study approach, the research identifies conserved cultural values and examines how this flavor innovation serves as a key modernization strategy. Findings show that adopting global flavors (caramel and chocolate) successfully generates new appeal, aligning with contemporary trends. This tactic effectively preserves the core cultural identity while making the local culinary heritage competitive and relevant in the current market.

Abstract

Footwork patterns play a critical role in athletic performance, particularly in sports requiring rapid directional changes and agility. This single-case A-B experimental design study investigated the effectiveness of artificial intelligence-based footwork pattern detection systems in improving response time among athletes. The study involved one elite athlete participant engaged in a controlled environment over 12 weeks, comprising 6 weeks of baseline (A) assessment and 6 weeks of intervention (B) with AI-supported real-time feedback. Response time was measured using photographic timing systems, while footwork patterns were analyzed through computer vision algorithms. Results indicated a mean reduction in response time of 8.7% during the intervention phase compared to baseline, with visual analysis suggesting clinically meaningful improvement in pattern consistency. The findings suggest that AI-based footwork detection systems may serve as effective tools for enhancing athletic performance and response time through real-time biomechanical feedback. However, the single-case design limits generalizability, indicating the need for larger-scale studies to corroborate these findings. This research contributes to the growing literature on artificial intelligence applications in sports science and performance optimization.
