Abstract

The prevalence of stunting in children under five is influenced by genetic factors and nutritional status originating from direct nutritional intake. This study aims to determine the contribution of genetic factors and food intake to the occurrence of stunting in toddlers in the Rajapolah Community Health Center area. This research used an observational methodology with a case-control design involving a total of 66 toddler participants. Among them, 33 people were identified as having stunting (with height-for-age Z-score < -2 SD), while 33 people had normal nutritional status (height-for-age Z-score => -2 SD). The participants were selected using purposive sampling. Data analysis includes applying the unpaired T test for normally distributed data, as well as the Mann-Whitney test for non-normally distributed data. The results of this investigation highlight significant differences in genetic aspects of height (both father and mother) between the stunted and non-stunting toddler groups (with p values of 0,029 and 0.046, respectively). In addition, nutritional intake, including energy (p-value<0,001), protein (p-value<0,001), fat (p-value=0,01), and carbohydrates (p<0,001), was between the two groups. Based on these findings, it can be concluded that genetic factors (in the form of parental height) and nutritional intake (including energy, protein, fat and carbohydrates) have a significant influence on the occurrence of stunting in toddlers. Therefore, this research is a basis for designing interventions aimed at mitigating the problem of stunting within the operational scope of the Rajapolah Community Health Center.

Abstract

In Indonesia, stunting continues to be a significant nutritional issue, particularly for young children. Failure to give children the nourishment they need during their crucial early growth and development stages is one of the causes. The activity aims to help mothers and cadres create local food processing to meet their nutritional needs and stop and lessen stunting. Community service occurs in Karanganyar Village, Kawalu District, Tasikmalaya City. The distribution of questionnaires to gauge the level of community knowledge before and following the exercise is one of the activities, along with counseling and training on regional food processing. Following this practice, the posyandu cadres' expertise and abilities changed, making them more equipped to prepare tasty and nutrient-dense snacks from local food sources.

Abstract

ABSTRACTBackground: Access to food differs between school-age children in rural and urban areas which is thought to have an impact on differences in the eating patterns and nutritional status of school-age children. The purpose of this study was to analyse differences in food pattern and nutritional status of school-age children in rural and urban areas.Methods: This research is a cross-sectional design. SDN I Benda which is located in Tasikmalaya City represents an urban area and SDN 3 Sukasari in Ciamis represents a rural area. The number of subjects in rural areas is 38 students and in urban areas is 40 students. Differences in eating patterns in rural and urban areas were analysed using independent t-test and Mann-Whitney at significance (p0.05).Results: The average food diversity of school-age children in rural areas (4) is less than in urban areas (4.5). The intake of energy (1636.8 vs 1526.1 kcal), protein (47.2 vs 43 g), fat (71 vs 62.8 g) and carbohydrates (214.1 vs 120.8 g) of school-age children in rural areas is slightly higher than in urban areas. This study showed that there were differences in the food diversity of school-age children in rural and urban areas (p=0.003); but there was no difference in energy (p=0.280), protein (p=0.593), fat (p=0.154), and carbohydrate (p=0.308) intake of school-age children in rural and urban areas.Conclusion: The food diversity of school-age children in rural areas is less than in urban areas, therefore efforts are needed to increase food diversity in rural areas

Abstract

Selain rasa yang lezat, salah satu hal yang penting dalam pengembangan produk biskuit yaitu kandungan nutrisinya. Ikan gabus merupakan ikan air tawar yang banyak dimanfaatkan sebagai bahan baku pangan karena mengandung protein cukup tinggi. Umbi ganyong diketahui mengandung karbohidrat yang tinggi, sehingga baik digunakan untuk bahan utama produk pangan yang tinggi energi. Tujuan dari penelitian ini adalah untuk mengetahui karakteristik sensori dan nilai gizi biskuit substitusi tepung ikan gabus dan tepung umbi ganyong sebagai camilan sehat balita. Pada penelitian ini terdapat 3 formulasi perlakuan dengan persentase berdasarkan jumlah tepung ikan gabus dan tepung umbi ganyong yaitu F1 (tepung ikan gabus 15% : tepung umbi ganyong 25%), F2 (20% : 20%), dan F3 (25% : 15%). Sedangkan untuk perlakuan kontrol (F0) menggunakan persentase 100% tepung terigu. Data hasil penelitian dianalisis menggunakan sidik ragam (ANOVA) dilanjutkan uji Duncan’s Multiple Range Test (DMRT) pada taraf kepercayaan 95% (α=0,05). Hasil uji organoleptik biskuit substitusi tepung ikan gabus dan tepung umbi ganyong memiliki rata-rata kesukaan aspek warna sebesar 3,00 – 4,20, aroma sebesar 2,29 – 4,37, rasa sebesar 2,46 – 3,94, dan tekstur sebesar 2,80 – 3,89. Biskuit dengan perlakuan terbaik mengandung kadar air 7,25%, kadar abu 5,44%, kadar lemak 19,65%, kadar protein 13,06%, kadar karbohidrat 52,66%, kadar serat kasar 1,94% yang sudah memenuhi standar SNI SNI 01-7111.2-2005. Hasil penelitian menunjukkan bahwa biskuit yang dibuat dapat dijadikan sebagai camilan sehat balita
