Abstract

This study aims to determine the description of the condition of the Magelang Duck Farms in its origin area which surrounded by Volcanoes. The data were collected by purposive sampling. Data consists of primary data and secondary data. Primary data collection through a combination of observation techniques and interviews while secondary data obtained by recording existing data and statistics derived from relevant agencies. Data were analyzed by descriptive analysis method descriptive analysis. The results showed that the prospect of re-developing Magelang ducks were met at good opportunity by looking at the condition of the Strategic District of Secang; Environmental and Humidity Conditions of Secang Subdistrict supports the development of Magelang ducks; Magelang duck housing system, feeding system is still very simple and can still be used; Magelang duck farmer human resources are still not much and have not processed yet magelang duck eggs or meat. The conclution is needed special attention so that Magelang duck farmers don't go out of business.Keywords: Magelang duck, Volcanic area condition, Sempu, Indonesia

Abstract

Penelitian ini bertujuan untuk mengetahui gambaran kondisi wilayah dan jalur tata niaga susu kambing di Kabupaten Sleman. Pengambilan data dilakukan secara purposive sampling. Data terdiri atas data primer dan data sekunder. Pengumpulan data primer dilakukan melalui kombinasi teknik observasi dan wawancara sedangkan data sekunder diperoleh dengan cara mencatat data serta statistik yang telah ada yang berasal dari instansi maupun lembaga terkait. Analisis data yang digunakan dalam penelitian adalah analisis deskriptif. Hasil penelitian menunjukkan bahwa kecamatan Turi, Pakem dan Kalasan merupakan daerah sentra peternakan kambing perah dan pengolahan susu kambing bubuk. Pihak yang terlibat dalam tata niaga susu kambing di Kabupaten Sleman terdiri dari industri pengolahan susu yang bertindak sebagai industri inti; peternak, kelompok, dan koperasi susu sebagai pemasok. Jenis olahan yang dilakukan oleh pelaku industri olahan susu mayoritas adalah susu bubuk. Kata kunci: Kabupaten Sleman, Susu Kambing, Tata Niaga

Abstract

Milk density and fat content are used as indicators of milk production from dairy farmer by Milk Proccessing Industry (MPI). Some MPI determines the price of milk based on fat and milk lactose content. This research was aimed to study the correlation of fat content, lactose content, and milk density. The material used were 90 of lactation FH cows in the II – III lactation periode and month of lactation are 2 – 3. The analysis method used was simple linear correlation regresion. The results showed that during increased milk fat and lactose contents, will increased milk density. Fat and lactose content are significantly correlated with milk density (P<0.01). The overall calculation shows that there was a relationship between fat content and lactose content to milk density, each 70.8 and 68.7%. Fat content with milk density, and lactose content with milk density showed a strong positive correlations. In conclusion, there was a correlation between fat content and lactose content with milk density. The correlation of fat content and lactose content with milk density were the higher fat and lactose content, higher milk density.

Abstract

Salah satu kecamatan di Kabupaten Magelang, Jawa Tengah dengan populasi kambing cukup tinggi berada di Kecamatan Srumbung dengan populasi kambing sekitar 1.344 ekor. Jumlah populasi tersebut termasuk kambing potong dan kambing perah. Hingga saat ini belum ada informasi pendukung terkait tentang lokasi dan kondisi ternak kambing perah di Kecamatan Srumbung, khususnya di Desa Mranggen. Penelitian ini bertujuan untuk mengidentifikasi lokasi peternakan dan performa fisik kambing perah di Desa Mranggen. Pengambilan sampel objek penelitian menggunakan purposive sampling. Kriteria sampel kambing perah yang digunakan dalam penelitian ini yaitu kambing perah betina dengan umur di atas 1 tahun sebanyak 48 ekor. Data yang diperoleh dianalisis secara deskriptif.  Didapatkan hasil bahwa lokasi peternakan kambing perah berada pada ketinggian +539 mdpl, suhu 24,5oC, kelembapan 70.7% dan THI 73,43. Terdapat dua jenis kambing perah yaitu kambing Peranakan Ettawah (PE) dan Sapera dengan performa fisik yang diamati panjang kepala, lebar kepala, panjang telinga, tinggi gumba, lebar telinga, lingkar dada dan panjang badan. Kesimpulan dari penelitian Desa Mranggen memiliki kondisi lingkungan yang mendukung untuk pemeliharaan kambing perah. Ketinggian tempat, suhu dan kelembapan serta THI berada pada zona nyaman untuk ternak (comfort zone) hidup. Ukuran tubuh kambing PE masuk dalam standar Stdanadr Nasional Indonesia (SNI) yaitu panjang badan, lingkar dada dan panjang telinga kecuali tinggi pundak yang belum sesuai syarat minimal SNI. Sedangkan performa fisik kambing Sapera memiliki ukuran tubuh dan kepala yang hampir sama seperti kambing PE namun untuk ukuran telinga lebih kecil dan pendek.

Abstract

Cheese coagulants from plant origin have emerged as promising alternatives to animal rennet in cheese production. Among them, latex from Ficus carica L. has shown potential as a natural milk-clotting agent for goat cheese production. This study aims to determine the optimal incubation time and fig tree latex extract concentration on the quality of goat cheese. The optimization of the production process of the goat cheese was carried out using Response Surface Methodology (RSM) with Central Composite Design (CCD). The independent variables were the concentration of the Ficus carica L. latex extract (0.2-0.5 mL/100 mL of milk) and the time of incubation (60-120 min). The goal was to achieve maximum protein content (%), ash content (%), and calcium content (%). The results of this study showed that the Ficus carica L. latex extract used in the study could coagulate milk with a strength of 354.69 MCU and a dominant protein molecular weight of about 20 kDa. The optimization results using RSM method with CCD design showed that the goat cheese was produced optimally in 0.5 mL/100 mL of milk for the concentration of Ficus carica L. latex extract, with 120 min incubation time. These optimal conditions resulted in a cheese with protein content of 18.56%, ash content of 2.32%, calcium content of 803.93 mg/100g, and desirability level of 0.93.

Abstract

Kegiatan pengabdian kepada masyarakat ini dilakukan untuk meningkatkan kemampuan anggota Kelompok Ternak Trajumas di Desa Kalirejo, Kecamatan Salaman, Kabupaten Magelang, dalam mengolah susu kambing Sapera menjadi produk olahan bernilai tambah berupa keju mozzarella. Selama ini, peternak menghadapi persoalan harga jual susu segar yang cenderung rendah dan belum memiliki pengetahuan mengenai teknik pengolahan hasil ternak. Melalui kegiatan ini, peserta mendapat penyuluhan dan pelatihan dengan praktik langsung pembuatan keju mozzarella, mulai dari proses pemanasan, pembekuan susu (koagulasi), pemisahan curd dan whey, hingga tahap peregangan dan perendaman keju. Pendekatan interaktif dipilih agar peserta lebih mudah memahami dan mampu menerapkan secara mandiri. Dari hasil pengamatan, terlihat peningkatan pemahaman serta keterampilan peternak dalam mengolah susu menjadi produk bernilai ekonomi tinggi. Antusiasme peserta juga cukup tinggi untuk menjadikan keju mozzarella sebagai peluang usaha baru .Secara keseluruhan, kegiatan ini menunjukkan bahwa pelatihan berbasis praktik dapat mendorong peningkatan pengetahuan dan ketrampilan peternak dan membuka potensi pengembangan ekonomi melalui inovasi produk pascapanen.
