Abstract

Rembiga satay is an indigenous processed beef product from West Nusa Tenggara. It undergoes marination with distinctive spices before grilling, contributing to its unique flavor profile. The product's specialty lies in its sensory attributes, distinctly reflecting the characteristic traits of the Lombok region, making it irreplaceable by comparable products from other regions. This study's objective was to thoroughly examine the sensory profile attributes of Rembiga satay using Quantitative Descriptive Analysis. Two methods, namely Rate All That Apply and Flash Profile, were employed for this evaluation. The research involved the engagement of 100 consumer panelists assigned to evaluate the sensory characteristics of four different Rembiga satay products, considering aspects such as taste, aroma, flavor, and texture. Results from the Flash Profile and Rate All That Apply methods consistently indicated that panelists discerned analogous sensory attributes in Rembiga satay. Specifically, Rembiga satay Ririn showed a sensory profile characterized by grilled meat flavor, Rembiga satay Lomboku featured grilled meat flavor, grilled meat aroma, and smoky aroma, and Rembiga satay Napisah presented attributes such as fibrous texture, sweetness, juiciness, spicy aroma, and meat flavor. Meanwhile, Rembiga satay Sinasih exhibited a sensory profile inclusive of umami, chili spiciness, black pepper spiciness, smoky flavor, grilled meat aroma, and chewiness

Abstract

Granulated palm sugar is a natural sweetener product that is gaining popularity due to its low glycemic index and its beneficial health effects. There are two primary methods of producing palm sugar: direct production from fresh sap and reprocessing of molded palm sugar. This study aims to investigate the impact of various production methods on the physicochemical and organoleptic properties of granulated palm sugar. The research employed a Completely Randomized Design (CRD) with one factor, namely the cooking method, consisting of direct production from fresh sap (PL) and production through reprocessing molded sugar (PC). The observed parametersincluded moisture content, ash content, yield, reducing sugar content, and organoleptic tests covering color, aroma, taste, and texture. The analysis results showed significant differences in all tested physicochemical parameters. The PC granulated palm sugar had a lower moisture content, yield, reducing sugar content compared to PL and higher ash content. In the organoleptic tests, PC palm sugar scored significantly higher in terms of color, aroma, taste, and texture. This study concludes that the production method using molded sugar is more recommended, as it produces palm sugar with a more stable quality, meets the standard, and is more preferred by consumers. This research is expected to serve as a basis for determining the appropriate method for producing high-quality granulated palm sugar.

Abstract

Shrimp anchovy paste is a traditional fermented condiment widely consumed in Asia. Regional variation in raw material selection and processing practice may affect physicochemical composition and microbial ecology, with implications for quality and safety. This study characterized the physicochemical and microbiological properties of shrimp anchovy paste produced in Sumbawa, East Lombok, and Central Lombok. Samples were analysed for proximate composition, texture, colour, amino acid profile, total plate count, lactic acid bacteria enumeration, and cell morphology. Statistical differences were evaluated by one way analysis of variance and Duncan multiple range test using SPSS version 26. Moisture content increased from Sumbawa (37.83%) to East Lombok (43.25%) and Central Lombok (46.17%). Ash content was highest in Sumbawa (28.09%) and lowest in Central Lombok (18.27%). Protein was substantially lower in East Lombok (12.96%) compared with Sumbawa (23.23%) and Central Lombok (23.05%). Fat and instrumental hardness did not differ significantly among regions. Amino acid analysis identified glutamic acid as the dominant free amino acid, most abundant in Central Lombok (25685 ppm) and Sumbawa (23560 ppm). Microbiological profiling indicated the highest total plate count in Sumbawa (2.79 log CFU/mL) and the highest lactic acid bacteria count in East Lombok (2.57 log CFU/mL). Cell morphology revealed Gram negative bacilli in Sumbawa and Gram positive bacilli in East and Central Lombok. Regional differences in raw material ratio, salt application, drying regime, and microbial succession drive variation in composition and microbiology of shrimp anchovy paste.
