Abstract

Status gizi remaja merupakan aspek penting yang perlu diperhatikan karena memengaruhi pertumbuhan dan perkembangan. Masalah gizi yang umum terjadi pada remaja meliputi kekurangan berat badan, kelebihan berat badan, dan anemia. Lingkungan dan tempat tinggal dapat mempengaruhi status gizi remaja. Penelitian ini bertujuan untuk mengetahui perbedaan status gizi dan kadar hemoglobin remaja putri yang tinggal di pondok pesantren dan di rumah. Penelitian ini menggunakan metode observasional dengan desain potong lintang yang dilakukan di Pondok Pesantren Al-Barokah Malangbong, Garut. Penelitian ini melibatkan 70 remaja putri yang dipilih melalui teknik purposive sampling. Analisis data menggunakan uji t-independen dan uji Mann-Whitney, dengan uji normalitas terlebih dahulu menggunakan uji Kolmogorov-Smirnov. Hasil analisis menunjukkan adanya perbedaan signifikan pada status gizi remaja putri yang tinggal di pondok pesantren dibandingkan dengan yang tinggal di rumah (p=0.020). Namun, tidak terdapat perbedaan signifikan pada kadar hemoglobin antara kedua kelompok (p=0.467). Diharapkan adanya penelitian lebih lanjut untuk melihat perbedaan asupan gizi dan kebiasaan konsumsi remaja putri yang tinggal di pondok pesantren dan di rumah. Bagi pihak pondok pesantren, disarankan untuk melakukan pemantauan serta upaya promotif, preventif, dan kuratif guna mengatasi permasalahan gizi yang terjadi pada remaja.

Abstract

Severe acute malnutrition (SAM) is a global health concern that affects children and leads to delayed growth. The aim of this study was to compare the impact of F100 milk and Bregas Nutriroll, a local ready-to-use therapeutic food (RUTF), on SAM children. An unmasked, non-blinded, two-group, and simple randomized controlled trial was conducted. Indonesian children aged 12–59 months with SAM were randomly assigned to receive either F100 milk or Bregas Nutriroll. After eight weeks, the increase in the mean weight gain in both groups was assessed. The Bregas Nutriroll group (n=19) had a mean weight gain of 1.07±0.09 kg, while the F100 group (n=17) had a mean weight gain of 1.05±0.11 kg. The Bregas Nutriroll group had a slightly higher gain of mid-upper arm circumference (MUAC) than the F100 group (0.62±0.34 cm vs 0.50±0.37 cm). The gain of children’s height of the Bregas Nutriroll group was 0.96±0.42 cm, while the F100 group was shorter at a mean of 0.81±0.44 cm. Statistically significant differences (p<0.001) in nutritional status were observed based on weight, MUAC, and height/length after F100 and Bregas Nutriroll interventions. The intervention with F100 increased hemoglobin (Hb) levels of 0.71±1.25 mg/dL, while the Bregas Nutriroll intervention led to an increase of 0.11±1.39 mg/dL. In conclusion, our study showed that community-based treatment with F100 milk or Bregas Nutriroll resulted in nutritional status in children with SAM. These findings suggested that both treatments could be effective in treating SAM in improving nutritional status and child health outcomes.

Abstract

Globalisasi dan integrasi ekonomi regional seperti Masyarakat Ekonomi ASEAN (MEA) meningkatkan urgensi penguasaan Bahasa Inggris bagi sumber daya manusia Indonesia, terutama di sektor jasa seperti perhotelan dan restoran. Mahasiswa Tata Boga dari Jurusan Pendidikan Kesejahteraan Keluarga (PKK), sebagai calon tenaga kerja di industri ini, sering menghadapi ketidaksesuaian antara kemampuan Bahasa Inggris umum dengan kebutuhan komunikasi spesifik di lingkungan kerja profesional. Riset mengindikasikan adanya kebutuhan krusial akan program English for Specific Purposes (ESP) yang berfokus pada pengembangan keterampilan lisan (berbicara dan menyimak), penguasaan kosakata khusus kuliner, serta fungsi komunikatif yang relevan dalam konteks restoran. Menanggapi kebutuhan tersebut, dilaksanakan kegiatan Pengabdian kepada Masyarakat (PkM) yang bertujuan meningkatkan pemahaman kosakata/ungkapan kunci, keterampilan komunikasi lisan melalui simulasi, dan kepercayaan diri mahasiswa Tata Boga PKK dalam menggunakan Bahasa Inggris profesional. Pelatihan ini mengadopsi pendekatan ESP dan Communicative Language Teaching (CLT), diimplementasikan melalui teknik role-playing, simulasi situasi kerja, diskusi kelompok, dan materi terfokus. Evaluasi menggunakan pre-test, post-test, observasi, dan kuesioner menunjukkan peningkatan signifikan pemahaman materi (terbukti dari kenaikan rerata skor post-test). Data kualitatif juga mengonfirmasi peningkatan partisipasi aktif dan kepercayaan diri berkomunikasi, meskipun pemahaman aksen asing masih menjadi tantangan. Pelatihan ini dinilai efektif dalam meningkatkan kesiapan mahasiswa menghadapi tuntutan komunikasi Bahasa Inggris di industri tata boga.

Abstract

This study investigates the effects of incorporating varying concentrations of carrot puree (0%, 25%, 50%, and 75%) into pukis, a traditional Indonesian snack, on its organoleptic properties. The objective is to enhance the nutritional value of pukis without compromising its sensory attributes, such as color, aroma, texture, taste, and overall acceptability. A hedonic test was conducted to assess consumer preferences for the different formulations. The results indicated that the addition of carrot puree significantly influenced the color, with higher concentrations resulting in a more vibrant orange hue. Aroma and taste were also affected, with the 25% carrot puree formulation being most preferred for maintaining the traditional flavor while offering enhanced sweetness. Texture analysis showed that the 50% carrot puree formulation provided a desirable balance between moisture retention and the light, spongy texture typical of pukis. Overall, the study found that a moderate level of carrot puree (25% to 50%) successfully enhanced the nutritional profile of pukis while preserving its sensory qualities. These findings suggest that carrot puree can be a viable ingredient for fortifying traditional snacks, offering a healthier alternative without compromising consumer acceptance.

Abstract

Acute malnutrition in children under five remains a complex and multidimensional global public health issue. This study aims to identify and analyze the key risk factors of acute malnutrition based on a review of 10 primary research articles from various developing countries published between 2016 and 2024. A narrative literature review method was used, guided by the UNICEF conceptual framework that categorizes the causes of malnutrition into immediate, underlying, and basic levels. The findings reveal that inadequate feeding practices, recurrent infectious diseases, low maternal education, household poverty, food insecurity, and poor sanitation are the most consistently associated factors with wasting and SAM. Thematic analysis also highlights the interplay between socioeconomic status and poor caregiving as major determinants. The study concludes that nutrition interventions must be integrated with maternal education, improved sanitation, and household economic empowerment. These findings have important implications for evidence-based policy formulation at national and international levels.

Abstract

Childhood obesity is a critical global health concern with a rising prevalence in both developed and developing countries and is associated with substantial short- and long-term consequences, including metabolic, cardiovascular, and psychosocial disorders. This narrative review synthesizes recent evidence on the behavioral, familial, and socioeconomic determinants of childhood obesity to inform prevention strategies. Ten peer-reviewed articles published between 2015 and 2025 were reviewed, encompassing diverse populations from Asia, Europe, South America and Oceania. Studies met the inclusion criteria if they targeted children aged 2–18 years, defined overweight/obesity using standardized anthropometric measurements, and reported one or more risk factors. The extracted data were thematically analyzed into five domains: sociodemographic and family characteristics, dietary behaviors, physical activity and sedentary lifestyle, breastfeeding and early life exposures, and socioeconomic disparities. Across the included studies, unhealthy dietary patterns and insufficient physical activity were the most frequently cited modifiable risk factors, appearing in more than half of the studies. Maternal obesity, low parental education, and limited household income were consistently linked to higher obesity risk through both biological and environmental pathways, while short breastfeeding duration and cesarean delivery were recurrent early-life factors associated with increased prevalence. Socioeconomic disparities amplify exposure to obesogenic environments, particularly in disadvantaged communities. The findings indicate that childhood obesity is a multifactorial condition shaped by interdependent behavioral, familial, and structural determinants. Effective prevention requires equity-focused multisectoral strategies that integrate healthy eating promotion, physical activity encouragement, maternal and child health support, and interventions targeting the social determinants of health.

Abstract

Permasalahan konsumsi sayur yang masih rendah di masyarakat menjadi tantangan dalam upaya peningkatan gizi. Wortel (Daucus carota L.) merupakan sayuran kaya vitamin A dan serat yang berpotensi diolah menjadi bahan pangan fungsional. Penelitian ini bertujuan untuk mengetahui pengaruh penambahan puree wortel terhadap komposisi gizi makro produk pukis melalui analisis proksimat. Penelitian ini menggunakan desain eksperimen dengan empat formulasi, yaitu F0 (tanpa puree wortel), F1 (25%), F2 (50%), dan F3 (75%), yang dianalisis menggunakan metode proksimat berdasarkan standar AOAC. Hasil penelitian menunjukkan bahwa penambahan puree wortel memberikan pengaruh signifikan terhadap kandungan zat gizi makro produk pukis. Terdapat tren penurunan kandungan energi (298 –110 kkal), protein (4,49–1,98 g), lemak (12,97–3,68 g), karbohidrat (33,10–17,31 g), dan abu (1,07–0,70 g) dari F0 hingga F3, serta peningkatan kadar air secara konsisten (38,64–75,67 g). Penurunan nilai gizi tersebut disebabkan oleh tingginya kadar air dan rendahnya kandungan makronutrien wortel dibandingkan bahan utama seperti tepung terigu, telur, dan margarin. Sementara itu, peningkatan kadar air dapat memengaruhi daya simpan produk. Penelitian ini menunjukkan bahwa produk pukis dengan penambahan puree wortel memiliki potensi sebagai pangan fungsional rendah energi dan lemak, tetapi memerlukan perhatian terhadap stabilitas dan keseimbangan nilai gizinya. Diperlukan kajian lanjutan terkait pengaruhnya terhadap mutu sensorik dan daya simpan untuk mendukung pengembangan produk secara komprehensif. Carrot (Daucus carota L.) is a vegetable rich in vitamin A and dietary fiber, with potential for use as a functional food ingredient. This study aimed to investigate the effect of adding carrot puree on the macronutrient composition of pukis products through proximate analysis. An experimental design with four formulations was employed: F0 (without carrot puree), F1 (25% puree), F2 (50% puree), and F3 (75% puree). Proximate analysis was conducted following AOAC standard methods. Results indicated that the addition of carrot puree significantly affected the macronutrient content of the pukis. There was a decreasing trend in energy content (298.75 to 110.22 kcal), protein (4.49 to 1.98 g), fat (12.97 to 3.68 g), carbohydrate (33.10 to 17.31 g), and ash (1.07 to 0.70 g) from F0 to F3, alongside a consistent increase in moisture content (38.64 to 75.67 g). The reduction in nutritional values was attributed to the high moisture content and lower macronutrient concentration of carrot puree compared to primary ingredients such as wheat flour, eggs, and margarine. Meanwhile, the increased moisture may influence product shelf life. In conclusion, pukis products enriched with carrot puree have potential as low-energy, low-fat functional foods but require careful consideration of nutritional balance and product stability. Abstract

Pemenuhan gizi keluarga dapat tercapai melalui pemanfaatan lahan pekarangan untuk budidaya sayur, buah dan obat herbal sehingga terwujud masyarakat sehat serta peningkatan pangan bergizi di tingkat keluarga. Tujuan dari pengabdian ini adalah memberi edukasi kepada masyarakat tentang pentingnya gizi seimbang dan pemanfaatan lahan pekarangan sebagai upaya pemenuhan gizi keluarga. Metode yang digunakan yaitu penyuluhan, pemeriksaan kesehatan dan konseling gizi. Setelah dilakukan pemeriksaan kesehatan diperoleh bahwa sebagian besar masyarakat yang hadir berada pada rentan usia 40-60 tahun (73,91%). Berdasarkan pemeriksaan tekanan darah diperoleh bahwa sebanyak 16 orang (69,56 %) tergolong kategori hipertensi. Berdasarkan perhitungan IMT diperoleh hasil bahwa sebanyak 12 orang (52,17%) tergolong katergori status gizi normal. Dan diakhir kegiatan dilakukan konseling gizi untuk memberikan edukasi lebih terperinci mengenai keadaan kesehatan masyarakat secara umum dan diharapkan masyarakat yang hadir dalam kegiatan pengabdian kepada masyarakat ini dapat mengaplikasikan informasi yang di peroleh dari kegiatan ini sehingga dapat membantu masyarakat dalam perbaikan status gizi secara khusus dan status kesehatan keluarga secara umum.
