Abstract

Produk daging ASUH (Aman, Sehat, Utuh, dan Halal) menjadi kebutuhan mendesak dan penting yang tidak dapat dipisahkan dari kebutuhan pangan di Indonesia. Rumah Potong Hewan (RPH) merupakan bagian yang tidak dapat diabaikan dalam rantai produk asal ternak khususnya daging. Standarisasi infrastruktur RPH akan mendukung peningkatan mutu pelayanan, operasional, dan produksi sehingga peningkatan kualitas pada seluruh aspek RPH perlu dikaji sesuai dengan persyaratan yang ditetapkan secara nasional. Penelitian dilakukan di kabupaten Jember pada bulan September 2021 – Februari 2022. Kajian yang dilakukan dalam penelitian ini menggunakan pendekatan kuantitatif dengan metode sensus dan pendekatan kualitatif dengan metode observasi serta wawancara mendalam (indepth interview). Referensi dalam pemilihan lokasi dan desain RPH induk merujuk pada Peraturan Menteri Pertanian No. 13 Repubik Indonesia tahun 2010 dan SNI 01-6159-1999. Penelitian ini bertujuan untuk mengkaji dan merancang RPH induk yang memenuhi syarat ideal di Jember. Hasil dari penelitian ini adalah teridentifikasinya wilayah yang mempunyai potensi untuk dijadikan lokasi RPH induk yaitu berada di desa Wirowongso, kecamatan Ajung (8˚13'28”S 113˚41'47" E). Rancangan RPH induk didesain dengan menyesuaikan lokasi perencanaan serta merujuk pada Peraturan Menteri Pertanian Nomor 13 Republik Indonesia Tahun 2010 dan SNI 01-6159-1999. Desain RPH induk juga disesuaikan dengan pemenuhan persyaratan higiene-sanitasi untuk memenuhi standar dalam memperoleh NKV (Nomor Kontrol Veteriner) sebagai sertifikat tertulis resmi untuk produk pangan hewani.

Abstract

Penelitian ini bertujuan untuk mengevaluasi pengaruh penambahan ekstrak kulit buah naga merah (Hylocereus polyrhizus) terhadap karakteristik sensorik, komposisi kimia, dan aktivitas antioksidan kerupuk ikan lemuru. Empat formulasi diuji dengan konsentrasi ekstrak 0 %, 10 %, 20 %, dan 30 %. Parameter sensorik meliputi uji hedonik terhadap warna, rasa, tekstur, dan aroma, sementara parameter kimia mencakup kadar air, abu, protein, lemak, serta aktivitas antioksidan menggunakan metode DPPH. Hasil menunjukkan bahwa penambahan ekstrak kulit buah naga secara signifikan meningkatkan skor warna dan rasa (p<0,05), dengan skor tertinggi pada konsentrasi 30 %. Kadar air dan abu meningkat seiring peningkatan konsentrasi ekstrak, mencerminkan sifat higroskopis dan kandungan mineral dari kulit buah naga. Sebaliknya, kadar protein mengalami penurunan pada konsentrasi tertinggi, sedangkan kadar lemak tidak menunjukkan perubahan yang signifikan. Aktivitas antioksidan meningkat secara signifikan, dari 20,03 % menjadi 47,17 %, menunjukkan kontribusi senyawa fenolik dan betalain dalam menetralkan radikal bebas. Hasil ini menunjukkan bahwa ekstrak kulit buah naga merah berpotensi sebagai bahan tambahan fungsional pada produk pangan berbasis ikan, meningkatkan kualitas visual, sensorik, dan aktivitas antioksidan tanpa mengorbankan mutu dasar produk.

Abstract

The introduction of K3 (Safety System) is one of the important aspects that must be known and implemented for students who will carry out apprenticeships. The implementation of the K3 system is closely related to the implementation of risk management. The implementation of the K3 system and risk management aims to identify potential dangers and control potential dangers and risks that exist in the industry. The aim of implementing this socialization is to strengthen students' abilities in identifying potential dangers and determining the appropriate type of control. The implementation of this socialization consists of 4 (four) stages including: 1) delivering material, 2) providing case studies in the form of teaching aids. 3) give assignments to students regarding potential dangers and control systems in the school environment, and 4) carry out evaluations and assessments regarding the work objects of each student. It is hoped that this activity will be able to provide students with an overview of potential hazards and their control systems in a specific and measurable manner.

Abstract

Semboro Siamese oranges have a higher selling value However, the selling value of the Siamese oranges is still relatively low, thus some efforts need to be made to increase the added value of the Siamese oranges. One way that can be done is by producing Siamese orange extract using the High Pulsed Electric Field (HPEF) technology. The aim of this research is to determine the added value and business development strategies of the HPEF Siamese orange extract. The analysis methods used were Hayami and SWOT. The research results show that there is a linearity between the two methods which indicates a positive value with a ratio of value and added value that is classified as high category, and there are development strategies that can be implemented by expanding marketing areas and improving product quality and safety by applying the existing technology.

Abstract

Understanding the development planning priorities and commodity sub-sector in Jember Regency, it is necessary to acknowledge the prime sub-sector and the primary commodity sector in Jember Regency. Regional products should be able to prioritize the sub-sector and the preferred crop, prime and which is considered a sub-sector basis to optimize the food security in the region. The research was conducted from 2016 to 2021 by several analysis methods: Location Quotient, Analytical Hierarchy Process, and Exponential Comparative Method. The criteria used are based on seven normative criteria. The results showed that plantation and horticultural crops were the basis of sectors in the 2016-2020 survey, with values of 2,1036 and 1,3879. Based on the analytical hierarchy process and exponential comparative method analysis, it is seen that there are many leading commodities in the agriculture sector. These commodities are orange fruit, durian, banana, mushrooms, chili, coffee, and sugarcane.
