Abstract

RBD Palm olein is processed from the fruit of the oil palm (Elaeis guineensis) and used as cooking oil. RBD Palm Olein is widely used for cooking oil in many countries. Quality is an important and useful characteristic of edible oil commodities and their transactions from a business aspect. This study aims to analyze the quality of cooking oil based on PORAM (The Palm Oil Refiners Association of Malaysia) specification. Quality parameters requirements as listed in the Palm Oil Refinery Association of Malaysia (PORAM) specification such as moisture and impurities (M&I), free fatty acids (FFA), slip melting point (SMP), iodine value (IV) and colour were determined. There were six samples in total and the quality analysis result is compared with the PORAM Specification. All samples are fulfilled PORAM specifications.

Abstract

Latar belakang: Simplisia adalah bahan alami yang dapat digunakan sebagai obat tradisional, yang dalam praktiknya belum mengalami pengolahan lebih lanjut selain proses pengeringan Salah satu tumbuhan obat yang dapat digunakan sebagai obat tradisional adalah herba suruhan (Peperomia pellucida H.B.K.). Simplisia sebagai bahan baku ekstrak harus memenuhi persyaratan yang tercantum dalam monografi buku Materia Medika Indonesia. Tujuan: Penelitian ini bertujuan untuk mengetahui karakterisasi simplisia dan skrining fitokimia dari simplisia herba suruhan standar mutu dan keamanan dari bahan baku obat tradisional. Hasil: Diperoleh kadar sari yang larut dalam air 18,8%, kadar sari yang larut dalam etanol 12,83%, kadar abu total  3,85 %, kadar abu yang tidak larut dalam asam 1,17 % dan kadar air 6,66 %. Hasil pemeriksaan mikroskopik serbuk simplisia dijumpai adanya rambut penutup, parenkim, berkas pembuluh dengan penebalan spiral, tetes minyak, stomata tipe anomositik, pada tulang daun terdapat berkas pembuluh dan hablur kalsium oksalat berbentuk drusse dan persegi, sel batu dan sel epidermis. Skrining fitokimia terhadap serbuk simplisia menunjukkan adanya senyawa golongan flavonoida, glikosida, tannin dan triterpenoida/steroida bebas. Kesimpulan: Hasil pemeriksaan karakterisasi simplisia herba suruhan (Peperomia pellucida H.B.K.) memenuhi syarat dimana kadar sari yang larut dalam air 18,8%, kadar sari yang larut dalam etanol 12,83%, kadar abu total  3,85 %, kadar abu yang tidak larut dalam asam 1,17% dan kadar air 6,66 %.

Abstract

This study's main objective was to assess and compare the quality of liquid and solid oil on their iodine value (IV) and slip melting point (SMP). This study employed a comparative experimental design, in which liquid oil (palm olein) and solid oil (a blend of palm olein and palm stearin) were analyzed under controlled laboratory conditions. Standardized analytical methods were used to ensure reliable comparison between oil types. AOCS Official Method Cc 3-25 was used to calculate the SMP, and the Wijs method was used to measure the IV in accordance with AOCS Official Method Cd 1-25. IV solid oil are 51.80, 52.35 and 52.76 (? = 52.30),  SMP solid oil are 37.4, 37.8 and 37.4 (  IV liquid oil are 58.59, 58.55 and 58.11 (? = 58.42), SMP liquid oil are 19.6, 19.6 and 19.8 ( . In conclusion, liquid oil is higher iodine value that means greater content of Unsaturated fatty acids are linked to positive cardiovascular health outcomes. Solid oil, on the other hand, showed a higher slip melting point, which implies greater thermal stability and makes it more appropriate for high-temperature frying applications.
