Abstract

Tape singkong merupakan hasil fermentasi singkong oleh ragi yang mengandung kapang, khamir, bakteri asam laktat, dan bakteri amilolitik. Jenis penelitian yang digunakan true eksperimen. Penelitian ini bertujuan untuk menganalisis pengaruh konsentrasi ragi yang berbeda terhadap analisis kadar alkohol pada tape singkong. Pada penelitian ini menggunakan metode Spektrofotometer UV-Vis, sampel dalam penelitian ini adalah singkong (Manihot Utilissima) yang difermentasikan menjadi tape singkong selama 5 hari. Hasil dari penelitian ini konsentrasi ragi 0,5% menghasilkan kadar alcohol sebesar 0,1%, konsentrasi ragi 1% menghasilkan kadar alcohol sebesar 0,15% dan konsentarsi ragi 1,5% menghasilkan kadar alcohol sebesar 0,165%. Dari hasil penelitian dapat disimpulkan bahwa konsentrasi ragi berbeda dapat mempengaruhi kadar alkohol pada tape singkong semakin tinggi konsentrasi ragi maka semakin tinggi juga kadar alkohol yang di dapat pada tape singkong.

Abstract

Background: Lead disrupts heme synthesis through various mechanisms, one of which is by interfering with the activation of the enzyme δ-aminolevulinic acid dehydratase (δ-ALAD) and ferrochelatase. Lead contamination in the blood will decrease hemoglobin levels; the higher the lead concentration in a person's body, the lower their hemoglobin levels will be. The purpose of this study is to determine the relationship between lead (Pb) levels in the blood and hemoglobin levels in miners in the nickel processing industry. Methods: This study uses an analytical research type with a cross-sectional design employing the Atomic Absorption Spectroscopy (AAS) and Hematology Analyzer methods. The population in this study consisted of 16 respondents. The sample in this study consisted of 15 respondents. The variables of this study are miners, lead (Pb) levels, and hemoglobin (Hb) levels. Results: The study obtained an average blood lead level of 13.81 µg/dL and an average hemoglobin level of 13.4 g/dL. The research results with the Pearson correlation statistical test between blood lead levels and hemoglobin levels showed a significance of p = 0.404 and a correlation coefficient of r = -0.233. Conclusion: Based on this study, it is concluded that there is no relationship between blood lead levels and hemoglobin levels in nickel processing industry mine workers, with a correlation between lead (Pb) and hemoglobin of p = 0.404, which is greater than 0.05 (p > 0.05).

Abstract

Stunting is a child's growth and development disorder caused by a lack of nutritional intake, infection, or inadequate stimulation. The impact of stunting includes decreased intelligence, vulnerability to disease, hampered economic growth and work productivity, and exacerbated inequality. The aim of this service is to provide information, knowledge, and education about the processing of sea urchins into cookies as a local resource with the potential to prevent stunting. This community service aims to educate through outreach and counseling using a food diversification approach for participants. The service was carried out in one of the houses of Linsowu Village residents, involving 47 participants in the socialization session and 27 participants in the counseling session. The target children, who were given cookies, included 11 children suffering from stunting. The PKM activities were conducted over 2 days, starting with the socialization stage on the first day and counseling on the following day, which focused on live demonstration activities related to the procedures for making sea urchin gonad-based cookies. The result of this activity is a cookie product made from sea urchin gonads, ready to be consumed by children suffering from stunting, made from Soroaki and Taeo gonads. Based on taste and preferences, cookies with a mixture of pineapple jam and Soroaki gonads were the most popular with both participants and stunted children.
