Abstract

Nutrition problems in Indonesia are still a serious health problem with 28,47% of children are in a condition of malnutrition and malnutrition. Efforts to develop materials Nutritious and affordable food is very necessary. This research was conducted to prove The impact of giving skim milk with the substitution of tempeh flour and moringa flour improve nutritional status in children with malnutrition. This research uses design completely randomized, namely with 4 treatments with 1 standard treatment. Based on the results above showed that the addition of tempeh flour and moringa flour had an effect on the levels The nutritional content of the product produced, especially protein, is 3.076. This is due to because the portion of carbohydrates was replaced with tempeh flour and moringa flour, it increased tempe flour and moringa flour are supplemented or added to the teko formula, the protein content in the formula becomes high so the teko formula is Substituted with tempeh flour and moringa flour, it can be consumed by malnourished toddlers can meet their nutritional needs.

Abstract

The World Health Organization (WHO) reports that the prevalence of CED in pregnant women globally is 35-37% which is significantly higher in the 3rd trimester compared to the first and second trimesters of pregnancy. Efforts to develop food ingredients are very necessary. This research was conducted to prove the impact of providing high protein food made in the form of sokateri milk pie which was substituted for anchovy flour, peanuts, green beans and sorghum. This research used a completely randomized design, namely with 5 treatments with 1 standard treatment. Total Energy from the five milk pie treatments, namely P0 465.02%, P1 462.36%, P2 463.22%, P3 428.80%, P4 423.35%, and vitamin C levels in treatments P0 to P4 were not there is Vitamin C content in the product, the Fe content is 3.42%, and the calcium content is 126.91%, pie milk has met SNI 01-42701996 standards, for the best acceptability of milk pie in terms of color, taste, aroma and texture, namely with milk pie in the P2 treatment.

Abstract

ABSTRAK Nusa Tenggara Timur masih menghadapi masalah gizi yang serius, salah satunya adalah stunting. Peran ibu sangat penting dalam memastikan anak tumbuh dan berkembang secara optimal dalam upaya pencegahan stunting. meningkatkan pengetahuan ibu dalam pemantauan pertumbuhan dan perkembangan anak. Kegiatan pengabdian masyarakat dilaksanakan di Kelurahan Oesapa yang dihadiri oleh ibu baduta sebanyak 24 orang pada bulan September tahun 2025. Metode yang digunakan meliputi ceramah, demonstrasi, praktik langsung, serta diskusi interaktif. Edukasi diberikan mengenai pentingnya pemantauan tumbuh kembang anak, pelatihan pemantauan pertumbuhan (pengukuran antropometri dan membaca grafik pertumbuhan) serta pemantauan perkembangan anak menggunakan buku KIA. Evaluasi dilakukan melalui pretest dan posttest untuk mengukur perubahan pengetahuan. Hasil menunjukkan adanya peningkatan skor pengetahuan ibu dari rata-rata 67 pada pretest menjadi 78 pada posttest. Proporsi ibu dengan pengetahuan baik meningkat dari 20,8% menjadi 58,3%, sedangkan kategori kurang menurun dari 16,7% menjadi 0%. Hal ini menunjukkan bahwa edukasi gizi efektif dalam meningkatkan pemahaman ibu. kegiatan pengabdian masyarakat ini efektif meningkatkan pengetahuan ibu dalam pemantauan pertumbuhan dan perkembangan balita. Penelitian selanjutnya disarankan menilai perubahan perilaku ibu serta memanfaatkan media digital sebagai sarana edukasi. Ke depan, pemanfaatan buku KIA perlu lebih dioptimalkan melalui pendampingan kader dan kolaborasi lintas sector.  Kata Kunci: Stunting, Tumbuh Kembang, Buku KIA  ABSTRACT East Nusa Tenggara continues to face serious nutritional problems, one of which is stunting. The role of mothers is crucial in ensuring children grow and develop optimally, thereby helping to prevent stunting. To increase mothers' knowledge in monitoring children's growth and development. The community service activity was conducted in Oesapa Village in September 2025, attended by 24 mothers of infants. The methods used include lectures, demonstrations, hands-on practice, and interactive discussions. Education was provided on the importance of monitoring child growth and development, including training on growth monitoring (anthropometric measurements and reading growth charts), as well as monitoring child development using the KIA book. Evaluation was conducted through pretests and posttests to measure changes in knowledge. The results showed an increase in mothers' knowledge scores from an average of 67 on the pretest to 78 on the posttest. The proportion of mothers with good knowledge increased from 20.8% to 58.3%, while the proportion in the poor category decreased from 16.7% to 0%. This indicates that nutrition education is effective in improving mothers' understanding. This community service activity is effective in increasing mothers' knowledge about monitoring the growth and development of toddlers. Further research is recommended to assess changes in maternal behavior and utilize digital media as an educational tool. In the future, the use of the KIA book needs to be further optimized through cadre mentoring and cross-sectoral collaboration. Keywords: Stunting, Growth and Development, KIA book

Abstract

ABSTRAK Posyandu merupakan pelayanan kesehatan dasar bagi masyarakat dalam mendeteksi masalah gizi. Peran kader sangat dibutuhkan dalam pendampingan pemantauan tumbuh kembang balita. Untuk meningkatkan pengetahuan dan keterampilan kader dalam melakukan pengukuran antropometri, menghitung umur dan ploting KMS serta pembuatan PMT mi beras hitam kelor. Kegiatan pengabdian masyarakat dilaksanakan di Prodi Gizi Poltekkes Kemenkes Kupang dengan mendatangkan kader posyandu Puskesmas Oesapa sebanyak 30 orang pada bulan April-Mei tahun 2024. Kegiatan pengabdian yang dilakukan meliputi: 1). Pelatihan pengukuran antropometri (berat badan, tinggi badan, lingkar kepala dan lingkar lengan atas), 2). Pelatihan ploting grafik pertumbuhan dan menghitung umur, dan 3). Pelatihan pembuatan PMT Mie Beras Hitam Kelor. Setelah kegiatan pelatihan dilakukan, pengetahuan kader terhadap materi yang diberikan mengalami peningkatan yang ditunjukkan nilai posttest yang menunjukkan pengetahuan kader kategori baik meningkat dari 5 (16,7%) menjadi 20 (66,7%) dan kategori kurang berkurang dari 9 (30%) menjadi 1 (3,3%). Rata-rata pengetahuan kader mengalami peningkatan dari 61 menjadi 82. Refreshing (pelatihan) efektif meningkatkan pengetahuan kader dalam pemantauan pertumbuhan balita dan pembuatan PMT mi beras hitam. Kata Kunci: Pelatihan, Kader, Posyandu, Stunting, Balita  ABSTRACT Posyandu is a basic health service for the community in detecting nutritional problems. The role of cadres is very much needed in assisting in monitoring the growth and development of toddlers. To increase cadres' knowledge and skills in carrying out anthropometric measurements, calculating age and plotting KMS as well as making PMT for Moringa black rice noodles. Community service activities were carried out at the Kupang Ministry of Health Polytechnic Nutrition Study Program by bringing in 30 Oesapa Community Health Center posyandu cadres in April-May 2024. The service activities carried out included: 1). Anthropometric measurement training (body weight, height, head circumference and upper arm circumference), 2). Training in plotting growth charts and calculating age, and 3). Training on making Moringa Black Rice Noodle PMT. After the training activities were carried out, the cadres' knowledge of the material provided increased as shown by the posttest score which showed that the knowledge of the good category cadres increased from 5 (16.7%) to 20 (66.7%) and the poor category decreased from 9 (30 %) to 1 (3.3%). The average knowledge of cadres has increased from 61 to 82. Refreshing (training) is effective in increasing cadres' knowledge in monitoring the growth of toddlers and making PMT black rice noodles.  Keywords: Training, Cadres, Posyandu, Stunting, Toddlers
