Abstract

Penyelenggaraan makanan di Rumah Sakit ialah aktivitas merencanakan menu hingga aktivitas distribusi makanan kepada konsumen yang bertujuan, agar dapat mencapai taraf kesehatan optimal. Tujuan penelitian yakni mengetahui gambaran metode Activity Based Costing (ABC) dalam penyelenggaraan makanan di RSUD Undata Provinsi Sulawesi Tengah. Penelitian ini menerapkan metodologi kualitatif disertai studi kasus selaku pendekatannya. Sejumlah 12 orang informan penelitian ditetapkan memakai teknik purposive sampling disertai pengumpulan data primer beserta sekunder. Data dianalisa memakai teknik matriks. Hasil penelitian memperlihatkan bahwa biaya tenaga kerja, food cost, overhead beserta profit yang dilaksanakan RSUD Undata sesuai pedoman PGRS. Metodologi ABC telah diterapkan di Instalasi Gizi RSUD Undata Provinsi Sulawesi Tengah.

Abstract

The amount of leftover food obtained by inpatients at the Kabelota Regional Hospital on the breakfast schedule is > 20%. The impact of patient food waste causes losses both in terms of nutritional adequacy per person and costs in terms of purchasing food ingredients. The aim of this study was to analyze external factors related to morning schedule food waste in inpatients at the Kabelota Regional Hospital. This research method uses cross-sectional analytical observation , with a sample size of 50 patients. With primary and secondary data collection techniques.The results of the chi square test analysis showed that there was no significant relationship between the acceptability of food menus and food waste (p>0.05). There is no relationship between portion standards for each type of food and food waste (p>0.05). There is no significant relationship between the timeliness of eating staple food menus, animal side dishes, vegetable side dishes, vegetables and food waste (p>0.05). There was no significant difference between the attitude of the food waiter and the remaining food on the breakfast menu (p>0.05). Conclusion: There is no significant relationship between external factors and the occurrence of food waste in inpatients at the Kabelota Donggala Regional Hospital during the breakfast schedule. Suggestion: For further research, it would be better to analyze the internal factors that cause food waste.

Abstract

The successful implementation of food delivery in hospitals is closely related to the presence of food waste which indicates less than optimal food delivery so that the nutritional needs of patients are not met. Obtained data on food waste in diabetes mellitus patients at RSUD Undata is high as much as 50.9%. The purpose of this study was to analyze external factors associated with the occurrence of food waste in patients with diabetes mellitus at RSUD Undata  Palu Central Sulawesi Province. This type of research is quantitative with an analytic observation approach using a cross-sectional design. The sample in this study were all patients with a diagnosis of diabetes mellitus who were treated in the Inpatient Room of RSUD Undata totaling 30 people, who were taken by purposive sampling, with primary and secondary data collection techniques. Data analysis using univariate and bivariate techniques. Food acceptability (aroma, taste, texture, color combination) of patients with diabetes mellitus on food waste obtained P> 0.05, as well as waiter's attitude towards food obtained P> 0.05 and standard portion of food on food waste obtained P> 0.05. there is no significant relationship between external factors and the occurrence of food waste in patients with diabetes mellitus at RSUD Undata Palu  Central Sulawesi Province. it is necessary to be careful with diabetes mellitus patients who bring food from outside the hospital, because this affects the remaining food of diabetes mellitus patients.

Abstract

Salah satu jenis ikan bernama ikan kembung (Rastrelliger) memiliki kandungan gizi yang sangat banyak Tujuan untuk menganalisa kandungan gizi dan daya terima dendeng ikan kembung dengan penambahan tepung kacang merah sebagai cemilan sehat untuk ibu hamil. Metode penelitian ini adalah experimental menggunakan Rancangan Acak Lengkap (RAL). Data yang diperoleh di analisis menggunakan SPSS 16.0 For Windows dengan uji ONE WAY ANOVA dan uji Duncan. Hasil daya terima terhadap 30 orang panelis semi terlatih diperoleh formulasi yang terpilih adalah F3 berdasarkan warna, aroma dan rasa sementara tekstur nilai tertinggi adalah F1. Hasil kandungan gizi per 100 gram terhadap formulasi terpilih F3 adalah kadar air 9,766%, protein 22,901%, lemak 14,647%, karbohidrat 45,319%. Berdasarkan hasil penelitian dapat disumpulkan bahwa kandungan gizi pada formulasi terpilih yaitu kadar air, protein, dan karbohidrat sudah sesuai dengan Standar Nasional Indonesia tentang dendeng, sedangkan kadar lemak pada formulasi terpilih melebihi dari Standar Nasional Indonesia (SNI)

Abstract

Background: Effective communication could be done by SBAR method, by SBAR communication could be used by health team members while doing handover to other teams. The main communication failure toward nurse is the lack of communication among providers that supports that the handover process is very important in health care. Currently, not all staff nurses know what kind of data should be reported during handover. In answering the problems found, it is necessary to perform digital-based SBAR so as to ensure the completeness of documentation, as well as improve nursing services and patient safety. The purpose of this study was to design a digital-based SBAR communication application in handover implementation at Undata Hospital, Central Sulawesi Province. Methods: The type of research is qualitative research with the research and development method, which is a method used to produce a particular product. Results: Qualitative research to explore the SBAR form as the initial part of designing a web-based management information system in order to increase the effectiveness of communication during the handover process, through data with input, process and output activities in the handover process at Undata General Hospital, Central Sulawesi Province. Conclusion: Nursing services at Undata General Hospital of Central Sulawesi Province require applications in conducting nursing documentation so that handovers between nurses and other health teams could be done effectively. This SBAR communication design is expected to be further developed into an application development that implemented in hospitals.

Abstract

The impact of consuming unhealthy snacks can cause foodborne disease. The purpose of this study was to analyze the effect of nutrition education through pop-up book media on the level of knowledge of food safety in school snacks at Inpres LIK Layana Indah State Elementary School. The research design used was a quasi experimental pre-test and post-test with a population of 30 students in grade 5 and grade 6. The instruments used were Pop-up book media and questionnaires. Data were analyzed using data normality test, homogeneity test and hypothesis testing. The results of the study obtained abnormal data in the experimental class (p-value = 0.001) and abnormal control (p-value = 0.006), there was a significant effect between the experimental and control groups on increasing student knowledge related to snack safety (p-value = 0.001). There is no significant difference between the control group with powerpoint media and the experimental class with pop-uo book media based on a significant value> 0.05.

Abstract

Penanganan stunting yang tidak tepat dapat berdampak pada kehidupan anak hingga tumbuh dewasa. Perlu dikaji intervensi edukasi yang efektif dalam meningkatkan pengetahuan dan sikap siswa sebagai tindakan preventif. Tujuan penelitian ini yaitu menganalisis pengaruh efektivitas edukasi dampak pernikahan usia dini dengan stunting menggunakan medium video terhadap pengetahuan dan sikap siswa. Desain eksperimen kuasi pre-post test dengan jumlah sampel masing-masing 35 siswa pada kelompok eksperimen dan kontrol di SMPN 18 Kinovaro, Kab. Sigi. Analisis pengaruh menggunakan uji paired sampel t test dengan interval kepercayaan 95%. Hasil penelitian sebelum intervensi skor pengetahuan dan skor sikap berbeda signifikan antara kelompok eksperimen dan kontrol. Hasil setelah intervensi (post-test 2) menunjukkan terdapat perbedaan signifikan skor pengetahuan dan skor sikap pada kelas eksperimen yang cenderung lebih tinggi dibandingkan kelas kontrol. Abstract

Periode 1000 hari pertama sering disebut window of opportunities atau sering juga disebut periode emas (golden period) didasarkan pada kenyataan bahwa pada masa janin sampai anak usia dua tahun terjadi proses tumbuh kembang yang sangat cepat dan tidak terjadi pada kelompok usia lain. pemenuhan asupan gizi pada 1000 hari pertama kelahiran anak sangat penting. Tujuan untuk menganalisis hubungan pola pemberian Asi, pola makan anak, dan pendapatan keluarga dengan status gizi anak usia 2 tahun di Wilayah Kerja Puskesmas Bulili. Jenis penelitian menggunakan rancangan “Cross Sectional”. Variabel independen dalam penelitian ini adalah pola pemberian ASI, pola makan anak, pendapatan keluarga. Dan variabel dependen adalah status gizi anak usia 2 tahun. Data yang digunakan adalah data primer dan data sekunder, analisis data menggunakan analisis univariat dan bivariat. Populasi dalam penelitian ini adalah semua anak usia 2 tahun yang berjumlah 218 anak dengan teknik pengambilan sampel Proporsional Sampling sebanyak 68 anak. Dari hasil analisa bivariat menunjukan bahwa terdapat hubungan antara pola pemberian ASI dengan status gizi anak usia 2 tahun (p = 0,01), pola makan anak dengan status gizi anak usia 2 tahan (p =0,001), serta pendapatan keluarga dengan status gizi anak usia 2 tahun (p = 0,02). Hasil penelitian menunjukan bahwa adanya hubungan antara pola pemberian ASI, Pola makan serta pendapatan keluarga dengan status gizi anak usia 2 tahun di wilayah kerja Puskesmas Bulili.
