Abstract

Background: Toddlers commonly experience nutritional problems due to a variety of factors such as direct, indirect, main, and basic factors. Stunting is a chronic malnutrition problem that can have both long and short-term impacts on toddlers. The Bengkulu area is predominantly located along the coast, boasting an abundance of marine products. There are certain types of small fish that are considered byproducts and relatively inexpensive. Objectives: This study aimed to assess the hedonic test for fish crackers with a variety of vegetables (mustard greens, carrots, and apple tomatoes) using a hedonic test. Methods: This study was conducted in the Nutrition Laboratory for 1 month start with product manufacturing, organoleptic and acceptability tests carried out at selected public health centres that had the highest stunting criteria. The selected public health centres are Pasar Ikan, Beringin Raya, Sawah Lebar, Penurunan, Anggut Atas, Sukamerindu, and Jalan Gedang. This study was a completely randomized design (CRD). Data were analysed using the Stata 16, conducting univariate analysis (proportions and averages). Results: The fish crackers with apple tomatoes variant, composed of 250 g of fish and 50 g of apple tomatoes, showed the highest average score among other variants. This formulation had 424.42 kcal and 0.96 g ) between the four variants. Conclusions: The formulation of bleberan fish crackers with tomato showed the highest preference score with an average value of 3.83, with a significant difference in the quality of the colour.

Abstract

ABSTRACT Nutritional status in children under five is very important, if malnutrition occurs and if not treated immediately it will reduce the quality of human resources resulting in physical disorders, impaired intelligence and productivity. The COVID-19 pandemic increases the risk of an increase in the prevalence of stunting. The purpose of this study was to analyze the nutritional management of stunting toddlers during the COVID-19 pandemic using the Analytic Hierarchy Process (AHP) method at the X Health centre, Bengkalis Regency based on input, process and output components. Method: This study used a qualitative approach using the analytic hierarchy process method. Data collection methods were carried out by in-depth interviews and observations to 15 informants, consisting of the administrative head of the Health Centre, nutrition officers, MCH coordinator midwife, village midwife, posyandu cadres and mothers of stunting toddlers. Result: showed that at the input stage, health workers such as TPG and village midwives had met the competency requirements, there were no special appointments for stunting cadres and specific technical guidelines for stunting management, as well as the lack of infrastructure for monitoring growth and development in Posyandu. Implemented properly include antenatal care, supplementary feeding, vitamin A administration, the coverage of which is still low is exclusive breastfeeding and visits to Posyandu. Abstract

Berdasarkan WHO dan Kemenkes RI, status gizi merupakan suatu keadaan dimana disebabkan oleh keseimbangan asupan zat gizi dari makanan yang dikonsumsi dengan kebutuhan nutrisi yang diperlukan tubuh untuk metabolisme. Selain itu Status gizi juga disebabkan oleh zat gizi dan penyakit infeksi. Untuk menilai status gizi yaitu dengan mengukur antropometri. Ada beberapa faktor yang mempengaruhi status gizi, yaitu faktor primer (asupan gizi) dan faktor sekunder (zat gizi tidak mencukupi). Faktor ini sangat mempengaruhi status gizi pada remaja dan faktor ini juga yang menentukan status gizi normal atau tidaknya berdasarkan asupan yang kita konsumsi. Tujuan penelitian ini adalah mengetahui hubungan konsumsi buah dan konsumsi sayur dengan indeks massa tubuh (IMT) pada mahasiswa Jurusan Gizi Poltekkes Kemenkes Bengkulu. Penelitian ini merupakan Deskriptif Analitik dengan menggunakan rancangan Cross Sectional. Sampel pada penelitian ini sebanyak 92 mahasiswa. Pengambilan sampel dilakukan pada bulan April–Mei tahun 2024 dengan teknik pengambilan Proportionate Stratified Random Sampling. Analisis data pada penelitian ini menggunakan uji statistik  Chi-Square. Hasil penelitian menunjukkan hubungan konsumsi sayur dengan indeks masa tubuh dengan hasil p-value 0,035 dan hubungan konsumsi buah denganIMT dengan p-value=0,036. Ada hubungan antara konsumsi sayur dan konsumsi buah dengan IMT. Disarankan kepada pihak dosen memberikan informasi dalam bentuk pembelajaran ataupun sosialisasi kepada mahasiswa tentang konsumsi sayur dan konsumsi buah terhadap IMT.Kata Kunci: konsumsi buah, konsumsi sayur,  indeks massa tubuh (IMT), mahasiswa

Abstract

This paper aims to examine the development trend of the prevalence of stunting in the provinces of South Sumatra and Bengkulu between 2021-2022, by exploring the PB/U and TB/U indicators to see trends in the prevalence of stunting in regencies and cities in the two provinces. The study method uses a secondary data analysis approach to the results of the Indonesian Nutrition Status Survey which will be conducted from 2021 to 2022, using descriptive statistical analysis. The sample studied was the results of a nutritional status survey in the Provinces of South Sumatra and Bengkulu in 27 urban districts. The results of the study in general show that there has been a decline in the stunting prevalence rate from 2021-2022 in the South Sumatra Province by 6.2% and the Bengkulu Province by 2.3%. However, if we look at the figures per district/city, there is one district in South Sumatra Province which has experienced an increase in the prevalence of stunting, namely Banyu Asin by 2.8% and there are five districts in Bengkulu Province which have also experienced an increase in the prevalence of stunting, namely Kepahiang by 2%, South Bengkulu 2.4%, North Bengkulu 2.1%, Mukomuko 0.1%, Kaur 1.1%. Based on the results above, it can be concluded that the prevalence of stunting in the provinces of South Sumatra and Bengkulu in general has decreased, but there are 6 districts in the two provinces that are still experiencing an increase in the prevalence of stunting. It is suggested to the competent authorities in the 6 regencies to improve specific nutrition interventions and sensitive nutrition interventions by means of convergence between regional apparatus organizations (OPD) through the Team for the Acceleration of Stunting Reduction (TPPS) in each city-district.

Abstract

Permasalahan gangguan pertumbuhan balita secara langsung dipengaruhi oleh kurangnya asupan gizi dan adanya penyakit infeksi. Protein sebagai salah satu asupan penting sangat diperlukan dalam pertumbuhan balita. Indonesia merupakan negara maritim, kaya hasil laut, tetapi pemanfaatannya belum optimal. Penelitian ini bertujuan untuk menggali potensi ikan lokal di Provinsi Bengkulu sebagai solusi sumber protein bagi balita stunting. Pada umumnya ikan hanya digoreng atau dimasak santan dalam keluarga, sehingga balita tidak pernah diberikan, hal ini mempertimbangkan duri ikan yang dapat membahayakan sistem pencernaan. Penelitian ini menggunakan pendekatan kualitatif untuk mengetahui kebiasaan ibu balita memanfaatkan ikan yang ada di sekitar tempat tinggal. Setelah diperoleh gambaran jenis ikan lokal yang mudah diakses yaitu Thryssa sp., dilanjutkan analisis zat gizi secara laboratorium. Kandungan protein dan zat besi hanya dapat dipenuhi oleh makanan mahal ternyata tidak selalu benar. Setiap 100 g ikan Thryssa sp. giling mengandung energi 153 kkal, protein 18,75 g, lemak 1,13 g, karbohidrat 0,19 g, dan Fe 1,71 mg.
