Abstract

Myrmecodia pendans termasuk tumbuhan epifit yang mengandung komponen bioaktif yang dapat berperan menjadi antioksidan didalam tubuh, seperti flavonoid, tanin dan polifenol. Ekstraksi ini  sudah banyak di terapkan, namun masih sedikit yang menerapkan MAE dalam proses ekstraksi sarang semut. Tujuannya untuk menentukan kondisi optimal konsentrasi ethanol, rasio bahan-pelarut, waktu ekstraksi sarang semut menggunakan metode MAE terhadap kadar fenol total dan kadar flavonoid total. Rancangan penelitian eksperimen ini memakai software Design Expert 10.0 Box Behnken Design (BBD) dengan pemodelan yang ingin diketahui yaitu interaksi rasio konsentrasi etanol, rasio pelarut dan bahan serta lama ekstraksi sarang semut terhadap kadar fenol total dan kadar flavonoid total.  Kemudian dilakukan langkah optimasi untuk mendapatkan respon yang optimal, selanjutnya  diverifikasi. Pada proses verifikasi didapatkan kadar flavonoid total 115.47 mgQE/g dan kadar fenol total 464.39 mg GAE/g. Sedangkan hasil penelitian menunjukkan bahwa hasil optimal adalah konsentrasi ethanol 75%, rasio pelarut dan bahan 25ml/g dan lama ekstraksi 20 menit menghasilkan kadar flavonoid total 118.87 mg/QE dan kadar fenol total 469.13 mg/GAE.

Abstract

Wedang uwuh merupakan minuman tradisional khas daerah Yogyakarta yang telah dilaporkan memiliki aktivitas tinggi antioksidan. Penelitian ini bertujuan untuk optimasi formula bahan herbal kayu secang, jahe, kayu manis, kapulaga dan cengkeh untuk pembuatan wedang uwuh yang mempunyai aktivitas tinggi antioksidan sebagai kontrol berat badan dan kadar glukosa darah. Rancangan percobaan ini menggunakan True Experimental Design: Post Test Only Control Group Design.  Hasil dari penelitian menunjukkan bahwa formulasi wedang uwuh mampu sebagai kontrol berat badan dan kadar glukosa darah.

Abstract

The relocation of the national capital from the Special Region of Jakarta to the Capital City Nusantara (IKN) in East Kalimantan poses strategic challenges in agriculture, particularly food availability. Population migration to IKN will significantly increase food demand, while the land characteristics in East Kalimantan, which are dominated by peat ecosystems and plantations, pose serious challenges for the development of rice farming. The imbalance between increased demand and limited local production potential risks food insecurity if not anticipated. This study aims to analyze the potential of land resources in two IKN buffer zones, namely Paser District and Penajam Paser Utara District, as food supply areas. The research method uses a Geographic Information System (GIS) approach with overlay techniques to identify potential zones for rice farming development. Analysis was conducted based on land suitability parameters including: Soil type, soil texture, moisture content, and porosity. The results showed that there are several areas with the potential to be developed as rice farming land. The results of this study are expected to be a scientific basis for the formulation of policies for the development of sustainable rice farming areas and meeting food needs in IKN.

Abstract

Pudding is a dessert characterized by its chewy, soft, and easy-to-chew texture. The texture and stability of pudding are highly influenced by the use of hydrocolloids, such as konjac glucomannan and carrageenan. This study aims to determine the optimal concentration of konjac glucomannan and carrageenan to achieve the best sensory characteristics and stability. The research method used a Randomized Block Design (RBD) with konjac glucomannan concentrations of 1%, 1.5%, and 2%, and carrageenan concentrations of 0.5% and 1%. All treatments were subjected to sensory evaluation using the hedonic method for texture, color, taste, and overall preference, as well as stability testing through syneresis analysis, followed by statistical analysis using Minitab 20. The results showed that the treatment with the lowest syneresis was S2K3 (2% konjac glucomannan and 1% carrageenan), with syneresis values of 7.76% at 24 hours, 13.34% at 48 hours, and 17.62% at 72 hours. However, the sensory evaluation indicated that the S2K2 treatment was the most preferred by panelists across all parameters, with preference scores of 4.2 for texture, 4.0 for color, 4.0 for taste, and 4.4 overall. This study is expected to provide valuable insights for the development of high-quality chocolate pudding products.

Abstract

Fresh vegetable commodities contribute significantly to food security and the national economy, but these products are easily damaged. Ozonation treatment and vacuum packaging are carried out to maintain product quality, reduce post-harvest losses, ensure food safety and extend the shelf life of vegetables. Choosing the right type of packaging is a challenge. The purpose of this study was to determine the effect of plastic packaging type on the storage time of fresh vegetables after ozonation based on physical parameters, water vapour transmission rate (WVTR), and water vapour permeability (WVP). The method used in this research is Randomized Group Design (RAK) with 3 treatments and 3 replicates and physical analysis using the scoring test method. The results of this study show that HDPE vacuum packaging has a better ability to withstand water vapor transmission rate (WVTR) and water vapor permeability (WVP) in all types of vegetables, as well as in physical testing including color, texture and appearance carried out based on scoring tests with an average value of 3, HDPE packaging has the best stability in preventing product quality deterioration to extend shelf life when compared to PP and LDPE packaging. These results are expected to be a recommendation for the type of packaging that is suitable in packaging fresh vegetable products to maintain product stability.

Abstract

Tanaman herbal telah lama dimanfaatkan dalam pengobatan tradisional karena kandungan senyawa bioaktifnya, terutama fenol yang berfungsi sebagai antioksidan alami. Di antara tanaman tersebut, kayu secang (Caesalpinia sappan), jahe (Zingiber officinale), dan stevia (Stevia rebaudiana) dikenal memiliki potensi aktivitas antioksidan. Penelitian ini bertujuan untuk mengoptimasi kombinasi ketiga bahan tersebut guna meningkatkan kandungan total fenol dalam formulasi minuman herbal. Pendekatan eksperimen menggunakan metode Response Surface Methodology (RSM) dengan rancangan Central Composite Design (CCD). Proses ekstraksi dilakukan melalui metode infusa pada suhu terkendali, dan kandungan fenol dianalisis menggunakan metode Folin-Ciocalteu dengan spektrofotometer UV-Vis. Hasil analisis statistik menunjukkan bahwa kayu secang memberikan pengaruh kuadratik yang sangat signifikan (p < 0,0001) terhadap peningkatan kadar fenol, sedangkan jahe dan stevia tidak menunjukkan pengaruh yang signifikan baik secara individu maupun interaksi. Model regresi yang dihasilkan signifikan (p = 0,0014) dan sesuai dengan data eksperimen. Grafik kontur menunjukkan bahwa kombinasi konsentrasi menengah antara kayu secang dan jahe menghasilkan kadar fenol tertinggi. Sementara itu, stevia lebih berperan sebagai pemanis alami tanpa kontribusi signifikan terhadap senyawa fenolik. Hasil ini menunjukkan bahwa pengoptimalan proporsi kayu secang dan jahe dapat secara signifikan meningkatkan potensi antioksidan minuman herbal, serta mendukung pengembangan produk fungsional berbasis bahan alami lokal.

Abstract

Budidaya jamur tiram membutuhkan lingkungan yang terkontrol, terutama suhu dan kelembaban untuk meningkatkan produktivitas. metode konvensional seperti penyemprotan manual dinilai kurang efisien dalam menjaga mikro iklim kumbung tetap stabil. Penelitian ini bertujuan untuk menciptakan sistem otomatis menggunakan Raspberry Pi 5 yang dikombinasikan menggunakan sensor suhu DHT22 dan penyemprot kabut halus, untuk mengontrol lingkungan. hasil penelitian menunjukan bahwa sistem otomatis memiliki efisiensi lebih tinggi dengan dapat mempertahankan kelembaban rata rata 91,3% dan suhu rata rata 27,4%. Namun dalam pengoprasianya sistem otomatis menggunakan lebih banyak air (47,1 Liter) dibanding dengan sistem manual (32,4 Liter). Hasil analisis uji (Anova dan uji-t) mengkonfirmasi perbedaan signifikan dalam stabilitas suhu (p < 0,01) dan kelembaban (p < 0,001). Sistem otomatis dengan menggunakan Raspberry Pi 5 terbukti lebih efektif dalam menjaga kondisi optimal pertumbuhan jamur tiram dalam kumbung dibandingkan dengan konvensional meskipun penggunaan airnya lebih tinggi.  Penelitian ini memberikan solusi inovatif bagi petani untuk meningkatkan efisiensi budidaya melalui teknologi IoT, sekaligus menjadi referensi pengembangan otomasi pertanian presisi di masa depan

Abstract

Cancer is a complex disease characterized by disruptions in cell regulation mechanisms, leading to abnormal or uncontrolled cell growth and the ability to spread to other parts of the body. The caspase-3 protein plays a crucial role in the apoptotic mechanism and is a key target in cancer therapy. Bioactive compounds from the brown alga Sargassum, such as fucoidan and fucoxanthin, show significant potential as anticancer agents through mechanisms including apoptosis induction, cell cycle arrest, and metastasis inhibition. This study employed an in silico method to investigate the interaction between the natural ligands fucoidan and fucoxanthin and the target protein caspase-3, simulating their potential as anticancer drug candidates. The analysis revealed distinct interactions for each ligand with the target protein, as indicated by their binding affinity values. The interaction between fucoidan and caspase-3 resulted in a binding affinity value of ∆G -4.7 kcal/mol, which was lower in effectiveness compared to the interaction between fucoxanthin and caspase-3, with a binding affinity value of ∆G -7.7 kcal/mol. This suggests that fucoxanthin exhibits stronger anticancer activity through its interaction with caspase-3 compared to fucoidan. Meanwhile, toxicity tests showed that fucoidan has a lower toxicity profile than fucoxanthin, particularly in terms of LD₅₀ values and active/inactive toxicity parameters. These findings indicate that fucoxanthin has potential as anticancer drug candidates. Further research is needed to optimize their therapeutic efficacy and safety profiles.

Abstract

Community service activities themed Socialization of State/Private University Entrance Strategy and CAT (Computer Assisted Test) Based Tryout Simulation were held at MA Al Ishlah Jenggawah, Jember. The purpose of this service is to improve the understanding, motivation, and readiness of grade XII students in continuing their education to college using the Lecture socialization and simulation method which is divided into 3 stages, namely preparation, implementation, and evaluation. The programs implemented include socialization of college selection pathways, effective learning strategies, scholarship information, and CAT-based Tryout simulations. The evaluation results showed a 130% increase in students' understanding of college selection pathways, from 1.98 on a scale of 5 (pre-test) to 4.56 on a scale of 5 (post-test). The Tryout Simulation provided real experience in facing technology-based exams, although the average score of 756 indicated the need for more intensive assistance. As many as 87% of students considered this activity useful in building self-confidence to continue their education to a higher level. This activity has a positive impact on preparing students academically and strengthening synergy between schools and organizers. For sustainability, it is recommended to hold periodic simulations, form independent study groups, and provide CAT devices in schools to support students' preparation in choosing a college.

Abstract

Kegiatan pengabdian kepada masyarakat ini bertujuan meningkatkan produktivitas dan keselamatan kerja pada proses produksi keripik gadung di UD “Gadung Badean” melalui penerapan teknologi tepat guna dan standarisasi proses produksi. Pendekatan yang digunakan bersifat deskriptif dengan rancangan sebelum–sesudah (before–after) pada satu mitra UMKM. Program dilaksanakan secara partisipatif dalam beberapa tahapan, meliputi observasi awal dan pemetaan masalah, perancangan dan instalasi mesin pengiris gadung, penyusunan dan sosialisasi standar operasional prosedur (SOP) produksi dan pengemasan, pelatihan serta pendampingan operator, dan evaluasi hasil. Data kuantitatif berupa waktu pengirisan per kilogram dan kapasitas produksi harian dikumpulkan menggunakan pengukuran langsung, sedangkan data kualitatif mengenai beban kerja, kenyamanan, dan persepsi pekerja diperoleh melalui wawancara singkat, kuesioner sederhana, dan catatan lapangan. Hasil kegiatan menunjukkan bahwa rata-rata waktu pengirisan menurun dari sekitar 18 menit menjadi 7 menit per kilogram, diikuti peningkatan kapasitas produksi harian dari 25 kg menjadi 45 kg bahan baku tanpa penambahan jam kerja signifikan. Skor kelelahan pekerja menurun dan keluhan terkait risiko luka gores akibat penggunaan pisau manual berkurang. Penerapan SOP turut memperbaiki konsistensi mutu irisan dan produk akhir.
