Abstract

Abstract

Formaldehyde contamination from the illegal use of formalin and natural accumulation is an indicator of fish quality decline throughout the post-harvest supply chain, from capture to distribution to consumers. This study aimed to determine the level of freshness and formaldehyde content in seawater fish in the fisheries supply chain (TPI Dermaga Bom and traditional markets) in Kalianda, South Lampung. The methods used included organoleptic analysis, pH measurement, total volatile base (TVB) measurement, trimethylamine (TMA) measurement, active formaldehyde (FA) measurement, and dimethylamine (DMA) measurement. Samples of snapper, mackerel, sardines, and semar were analyzed to compare their quality. The results showed that fish samples from the collectors were fresher than those from traditional markets. The pH values at both locations ranged from 6.39 to 7.12. The TVB values of both locations ranged from 12.55 to 30.98 mgN/100 g, while the TMA values ranged from 8.82 to 12.35 mgN/100 g. The FA values at both locations ranged from 0.25 to 0.45 ppm, whereas the DMA values ranged from 0.54 to 0.67 ppm. Statistical results showed that the p-value was greater than 0.05 in the TVB and TMA tests between fish from collectors and markets, indicating that there was no significant difference between the two locations. However, no significant differences were observed in the pH values, natural formaldehyde content, or dimethylamine levels. The implications of these research results are expected to help improve fish quality management and support strict monitoring policies in the fishery product supply chain in the future.

Abstract

A training program on the application of chitosan as a natural coating agent for smoked fish products was conducted for the Smoked Fish Processing Group at the Mushola Bukit Salam Rest Area, Prigi Village, Trenggalek Regency. The objective of this training was to enhance participants' knowledge and skills in utilizing chitosan as a natural preservative to extend shelf life and improve the quality of smoked fish. The training activities included interactive lectures, practical demonstrations on the preparation of chitosan solution, and evaluations comparing the shelf life of treated and untreated smoked fish products. Observational results indicated that smoked fish coated with chitosan exhibited a longer shelf life and greater resistance to fungal growth and insect contamination compared to uncoated samples. Additionally, questionnaire-based evaluations revealed a significant increase in participants’ understanding of the benefits and applications of chitosan. The training received highly positive feedback, with participants expressing interest in the continuation of similar programs. These findings suggest that chitosan training positively contributes to the capacity of local fish processors to produce safer, more hygienic, and market-competitive smoked fish products.

Abstract

Omega-3 concentrates developed from fish oil without any other components are excellent for overall health. The objective of this study was to evaluate the effectiveness of the urea crystallization method in relation to the iodine value and the increase in total omega-3 fatty acids during the production of omega-3 concentrates from tuna fish oil using response surface methodology (RSM). Using the urea crystallization method, pure ethyl ester oil is mixed with urea, then left to stand at a low temperature with predetermined ratios and times to obtain omega-3 concentrate. The total omega-3 content in the crude tuna oil obtained in this study was 19.51%. The total omega-3 content from pure tuna oil was 32.90%. Meanwhile, the total omega-3 content in the tuna omega-3 concentrate was 16.97%. Longer storage times were found to reduce saturated fat content and increase omega-3 levels, as indicated by higher iodine values. Keywords: low-temperature crystallization, omega-3 concentrate, response surface methodology. tuna oil

Abstract

The escalating frequency and intensified magnitude of flood disasters, exemplified by the catastrophic events in Aceh, Indonesia, between 2023 and early 2026, have exposed critical vulnerabilities in traditional, reactive emergency management systems. Current frameworks often suffer from information blackouts, misaligned resource allocation, and a “one-size-fits-all” approach that neglects vulnerable populations. This study proposes SIAGA, an innovative mobile-based information system developed through a design science research (DSR) paradigm to optimize post-flood recovery. The methodological framework of this study is built upon a case study of Aceh, Indonesia. The system integrates a sophisticated multi-layered architecture: a machine learning (ML) engine adapted for automated disaster scale determination with explainable AI (XAI) for decision transparency, a hybrid multi-criteria decision making (MCDM) layer utilizing a tripartite weight synthesis and technique for order preference by similarity to the ideal solution (TOPSIS) logic for optimized logistics, and a resilient mesh network protocol for decentralized communication in infrastructure-constrained environments. Requirement engineering, conducted via a survey with 31 flood-affected respondents, validated the critical need for automated status determination and optimized supply chains. Results demonstrate that the SIAGA artifact successfully bridges the gap between complex predictive intelligence and tactical field response. By manifesting a high-fidelity interactive prototype, this research provides a scalable, socio-technical solution that enhances community resilience and ensures mathematically optimized resource distribution during humanitarian crises.
