Abstract

The objectives of study was to determine phytochemicals content and singlet oxygen quencher (SOQ)activities examination in 2 type (DMA and GKN) of coconut leave. Analyses of phytochemicals based ontotal phenolic, flavonoid and condensed tannins. To detect the involment of singlet oxygen inphotodegradation 5 ppm erythrosine solution containing 2 types of extracts were exposed under 4000 luxfluorescent light for up to 5 hours. The result showed that coconut leave of DMA type possessed totalphenolic, flavonoid and tannin content were 149.27; 3725 and 1822 mg/kg, whereas for type of GKN was138.73; 4625 and 2110.81 mg/kg, respectively. The DMA leave exhibited the highest singlet oxygenquenching activities compared by GKN leaves. The results also indicated that concentration of both theextracts increased with increasing. The results also indicated that concentration of both the extractsincreased with increasing singlet oxygen quenching activities. Abstract

ABSTRAKPenelitian ini bertujuan untuk mempelajari kombinasi asap cair tongkol jagung dan sari lemon cui dalam menghambat pembentukkan peroksidasi lipid. Penelitian ini menggunakan metode untuk menganalisis kandungan total fenolik, penangkal radikal bebas (DPPH), uji vitamin C dan peroksidasi lipid dengan menggunakan spektrofotometer UV-Vis. Hasil penelitian menunjukkan kandungan total fenolik dari kombinasi asap cair tongkol jagung dan sari lemon F1 (57,94 µg/mL),  F2 (82,21 µg/mL), F3 (77,85 µg/mL) F4 (59,94 µg/ mL) dan F5 (93,94 µg/mL). Penangkal radikal bebas (DPPH) kombinasi asap cair tongkol jagung dan sari lemon cui F1 (78,20%), F2 (68,76%), F3 (73,93%) F4 (75,10%) dan F5 (65,75%). Kandungan vitamin C dari kombinasi asap cair tongkol jagung dan sari lemon cui F2 (73,04 µg/mL), F3 (25,25 µg/mL), F4 (183,04 µg/mL) dan F5 (292,16 µg/mL). Kombinasi dari asap cair tongkol jagung dan sari lemon cui dalam penghambat pembentukkan peroksidasi lipid pada ikan cakalang dengan konsentrasi 10% tanpa kombinasi asap cair tongkol jagung dan sari lemon cui menunjukkan peroksidasi lipid yang tinggi yaitu 1,217 dalam empat hari. Kombinasi asap cair tongkol jagung dan sari lemon cui mengandung fenolik yang bertindak sebagai antioksidan dan dapat menghambat peroksidsi lipid pada ikan cakalang. ABSTRACTSersermudy et al., 2019. This research aims to study a combination of corncob liquid smoke and cui lemon juice in inhibiting the formation of lipid peroxidation. This research used a method to analyze the content of total phenolic, free radicidal (DPPH), vitamin C and lipid peroxidation using a UV-Vis spectrophotometer. The results showed a combination of total phenolic from a combination of corncobs and lemon juice F1 57.94 F2 82.21 F3 77.85 F4 59.94 and F5 93.94 μg / mL. Free radical scavenging (DPPH) a combination of liquid corncob and lemon juice cui F1 (78.20%), F2 (68.76%) F3 (73.93%), F4 (75.10%) and F5 (65.75%). Vitamin C content from a combination of liquid corncob smoke and lemon juice cui F2 (73.04 µg/mL), F3 (125.25 µg/mL) F4 (183.04 µg/mL) and F5 (292.16 μg/mL). The combination of corncob liquid smoke and cui lemon juice in the formation of lipid peroxidation in 10% of skipjack tuna without the combination of corn cob liquid smoke and cui lemon juice showed high lipid peroxidation of 1.217 in four days. The combination of corncob liquid smoke and lemon cui juice contains phenolic which acts as an antioxidant and can inhibit lipid peroxidation in skipjack.

Abstract

This study aims to determine the type and content of fatty acids in fish, especially on the head catfish catfish andparts of the body as a comparison. Fish oil or triglycerides extracted with soxhletation method with n-hexanesolvent. Water content, iodine number and saponification numbers of fish oil has been determined. Qualitative test of fish oil has been done by TLC (thin layer chromatography). To observe the fatty acid content profile is done in two ways, through the process of hydrolysis of triglycerides then esterified and the second, through enzymatic transesterification reaction. The enzyme used is immobilized lipase (Lipozyme). The results obtained were analyzed using a gas chromatography-mass spectrometry (GC-MS). Total percent composition of unsaturated fatty acids (oleic, linoleic, EPA and DHA) on the head is 3.34% - 5.06% while in the body is 2.02%. - 3.85%.Penelitian ini bertujuan untuk mengetahui jenis dan kandungan asam lemak pada ikan Lele terutama padabagian kepala ikan lele dan bagian badan sebagai perbandingannya. Teknik ekstraksi minyak (trigliserida)menggunakan metode soxhletasi dengan pelarut n-heksan. Minyak yang diperoleh kemudian dianalisis kadarairnya, ditentukan angka iod, angka penyabunannya dan uji kualitatif dengan KLT (Kromatografi Lapis tipis).Untuk melihat profil kandungan asam lemaknya dilakukan dua cara, yaitu melalui proses hidrolisis trigliseridakemudian diesterifikasi dan yang kedua melalui reaksi transesterifikasi secara enzimatis. Enzim yang digunakanadalah enzim lipase yang sudah diimobilisasi (Lipozim). Hasil yang didapatkan dianalisis menggunakan alat gaschromatography-mass spectrometry (GC-MS). Total persen komposisi asam lemak tak jenuh (oleat, linoleat, EPA dan DHA) pada bagian kepala adalah 3,34% - 5,06% sedangkan pada bagian badan adalah 2,02%-3,85%.

Abstract

Lemon grass (Cymbopogon citratus Stapf) is a traditional food ingredient characterized by its specific andrefreshing aroma. This objectives of study was determined phytochemical contents and the effect of lemongrass leaves extract in photooxidation linoleic acid and ascorbic acid in system model. Lemon grass leaves wasextracted sequentially with hexane and methanol. The photooxidation reaction system was consisted of linoleicacid 0.03 M in ethanol containing 0.017 mM erythrosine as sensitizer the reaction mixture was exposed under4000 lux fluorescent light up to 5 hours while ascorbic acid 200 μg/mL in phospat buffer solution (pH 7.5)containing 0.0068 mM erythrosine as sensitizer illuminated for 20 minutes. Analyses of phytochemical based ontotal phenolic and flavonoid. Analyses of photooxidation of linoleic acid based on peroxide value anddegradation of ascorbic acid was analyzed using the spectrophotometer at λ 265 nm. The total phenolic andflavonoid content in hexane extract showed the highest phenolic content than methanol extract. Hexane extract1500 ppm exhibited singlet oxygen quenching effect on photooxidation linoleic acid compared with methanolextract, peroxide value 3.57 and 3.72 meq/kg after 5 hours illumination, respectively. Hexane extract 100 ppmalso exhibited singlet oxygen quenching effect on photooxidation ascorbic acid compared with methanol extract,ascorbic acid content 185.44 and 76.67 mg/kg after 5 hours illumination, respectively. It’s concluded thathexane extract of lemon grass leaves contain phenolic component that have singlet oxygen quencher activity.

Abstract

ABSTRAK Pisang, jagung dan sagu merupakan sumber makronutrien, vitamin, mineral, serat pangan dan fitokimia. Tujuan penelitian adalah untuk menentukan aktivitas antioksidan dan fotoprotektif tepung komposit dari pisang goroho, jagung manado kuning dan sagu baruk menggunakan perbedaan pelarut. Tepung komposit diproduksi menggunakan campuran tepung pisang, jagung dan sagu pada perbandingan 60:30:10. Tepung komposit dievaluasi menggunakan kandungan total flavonoid (metode aluminium), aktivitas antioksidan (uji radikal 1,1-diphenyl-2-phycrylhidrazyl) dan aktivitas fotoprotektif (uji SPF menggunakan spektrofotometer). Hasil penelitian ini menunjukkan bahwa kandungan total flavonoid tertinggi ditemukan pada pelarut aseton dibandingkan dengan methanol, ethanol, petroleum eter dan TPTJ (kontrol) pada tepung komposit. Aktivitas penangkal radikal bebas ekstrak aseton tepung komposit menunjukkan aktivitas paling tinggi daripada ekstrak etanol, metanol, petroleum eter dan TPTJ (kontrol). Hasil penelitian ini juga menunjukkan bahwa ekstrak aseton mempunyai aktivitas fotoprotektif paling tinggi daripada ekstrak metanol, etanol, petroleum eter dan TPTJ (kontrol) pada nilai SPF (sun protection factor). Secara keseluruhan, penelitian ini menyarankan bahwa ekstrak aseton tepung komposit mengandung komponen yang memberikan aktivitas antioksidan dan fotoprotekstif serta berpotensi melindungi kulit dari efek radiasi UV-B. Kata kunci: tepung komposit, pelarut, antioksidan dan fotoprotektif ABSTRACT  Banana, corn and sago are source of macronutriens, vitamines, minerals, dietary fiber and phytochemicals. The objective of this study was to determine antioxidant and photoprotective activities of composite flour from goroho banana, yellow Manado corn and baruk sago using different solvent. Composite flour was produced using mixture of banana, corn and sago flour in the ratio of 60:30:10. The composite flour extracted with petroleum ether, acetone, ethanol, and methanol by using a maceration extraction for 24 hours. The composite flour was evaluated using total flavonoid content (aluminium ion method), and free radical scavenging activity (1.1-diphenyl-2-phycrylhidrazyl radical assay). The in vitro photoprotective activity was studied by UV spectrophotometric method in the range of 290-320 nm. This result showed that the highest total flavonoid content was found in acetone solvent compared that of methanol, ethanol, petroleum ether, and TPTJ (control) in composite flour. The radical scavenging activity of acetone extract of flour composite showed the highest activity than ethanol, methanol, petroleum ether, and TPTJ (control). The results also showed that the acetone extract has highest photoprotective activity than methanol, ethanol and petroleum ether in sun protection factor (SPF) value. In overall, the present study suggests that acetone extract of composite flour contains components that give antioxidant and photoprotective activities and potency to protect skin of UV-B radiation effects. Keyword: composite flour, solvents, antioxidant, photoprotective

Abstract

Telah dilakukan penelitian mengenai pembuatan gliserol dengan reaksi hidrolisis minyak goreng bekas.Penelitian ini bertujuan untuk mengetahui kondisi operasi (waktu, suhu, konsentrasi katalis (HCl) danperbandingan reaktan) yang optimum yang dapat memberikan yield gliserol yang maksimal. Penentuan kondisioptimum didasarkan pada analisa kadar asam lemak bebas yang dihasilkan. Reaksi dilakukan denganmencampur minyak goreng bekas dengan HCl dan air. Dari data optimasi didapatkan kondisi optimumpembuatan gliserol pada waktu reaksi 1 jam, konsentrasi HCl 3%, suhu 100o C dan perbandingan reaktan 1:9dengan yield gliserol 5,87%.A research was done to produce of glycerol premises used cooking oil hydrolysis reaction. This study was todetermine the operating conditions (time, temperature, catalyst concentration HCl and the ratio of reactants) togive optimum yield a maximum. Determination of optimum conditions based on the analysis of free fatty acidlevels resulting. The Produce of glycerol by mixing cooking oil with HCl and water. From the data obtainedoptimization optimum conditions for the produced of glycerol at 1 hour, 3% HCl concentration, temperature of100 ° C and the reactant ratio of 1:9 to yield 5.87% glycerol.

Abstract

Sintesis mangan oksida telah dilakukan secara luas karena memiliki banyak aplikasi  pada berbagai bidang.  Pada penelitian ini telah dilakukan sintesis birnessite melalui metode sol-gel mengunakan asam sitrat sebagai reduktor. Birnessite yang telah disintesis dapat digunakan sebagai prekursor untuk sintesis mangan oksida lainnya seperti todorokite. Maka untuk mempelajarinya, waktu kontak reaksi serta konsentrasi MgCl2 yang digunakan pada Kapasitas Tukar kation (KTK) divariasikan. Kondisi optimum sintesis birnessite adalah dengan perbandingan mol prekursor 3 (KMnO4= 0,6 M) : 1 (asam sitrat) dengan temperatur kalsinasi 450oC selama 2 jam. Hasil menunjukkan bahwa KTK birnessite diperoleh pada saat waktu reaksi 17 jam dan konsentrasi MgCl2 2000 ppm.   Kata kunci : Birnessite, CEC, sol-gel

Abstract

Penelitian ini merupakan serangkaian upaya untuk meningkatkan potensi tumbuhan pinang yaki sebagaisumber obat tradisional. Pada penelitian ini telah dilakukan analisis fitokimia dan toksisitas ekstrak metanoldaun pinang yaki. Analisis fitokimia meliputi uji alkaloid, flavonoid, triterpenoid, steroid, tannin, dan saponin. Ujitoksiksitas dilakukan dengan metode BSLT (Brine Shrimp Lethality Test). Analisis toksisitas menggunakanmetode probit untuk mendapatkan Lethality Concentration 50 (LC50). Hasil penelitian menunjukkan bahwaekstrak metanol pinang yaki mengandung senyawa terpenoid, steroid dan tannin. Abstract

This research was done to study benzo(a)pirene content produced from liquid smoke by directburning process, also how to reduced the component. The results show that liquid smoke from coconutpericarb that produced by direct burning method has 28% recovery. The smoke was yellow to brown,smelled as smoke with density 0,9965 g/mL. To reduce benzo (a) pirene of liquid smoke was done usingredistilled and absorbed with active carbon. Redistilled liquid smoke was done at 98-100 oC. RedistilledLiquid smoke almost colorless and no color compared with initial liquid smoke, less smoke scent. Thedensity was 0,9970 g/mL with 55% recovery from initial smoke. Absorbed liquid smoke using activecarbon (1:5) was acquired more clear liquid, no color and no scent, density 0,9975 g/mL with 51,7%recovery. Benzo(a)pirene concentration can be reduced using redistilled and absorbed with activecarbon method. Reduce concentration using redistilled technique was 33.1%, whereas using absorbedtechnique was 54,3%.

Abstract

The purpose of this research was to determined antioxidant activity of extract and various fractions of corn kernels. Extract and fractions of corn kernels were evaluated for total phenolic content, antioxidant capacity with phosphomolybdate and free-radical scavengers activity with DPPH (1,1-diphenyl-2-picryl hydrazyl) method. The result of this study shows that the ethyl acetate fraction had the highest total phenolic content of 49.59 mg/kg, followed by aquadest fraction, n-hexane fraction, and butanol fraction. The total antioxidant activity indicates that the greater the concentration of corn kernels’ fraction, it also increases the antioxidant activity and the n-hexane fraction has the highest total carotenoid of 1.433 mg/g, followed by the fractions of ethyl acetate, ethanol, butanol, and water. The total carotenoid content indicates that carotenoid compound have an important role as an antioxidantPenelitian ini bertujuan untuk menentukan aktivitas antioksidan ekstrak dan berbagai fraksi dari biji jagung. Ekstrak dan fraksi biji jagung dievaluasi untuk kandungan total fenolik, total karotenoid, kapasitas antioksidan dengan metode fosfomolibdat dan aktivitas penangkal radikal bebas dengan metode DPPH (1,1-diphenyl-2-picryl hydrazyl). Hasil penelitian menunjukkan fraksi etil asetat biji jagung memiliki kandungan total fenolik paling tinggi yaitu 49,59 mg/kg diikuti dengan fraksi air, fraksi n-heksana dan fraksi butanol.Total aktivitas antioksidan menunjukkan bahwa semakin besar konsentrasi fraksi biji jagung maka semakin meningkat juga aktivitas antioksidan dan fraksi n-heksana memiliki kandungan total karotenoid yang tinggi yaitu 1,433 mg/g diikuti dengan fraksi etil asetat, ekstrak etanol, fraksi butanol dan fraksi air.
