Abstract

Background: The diversity of food is one indicator of household food security level. The better the diversity of food, the better the quality of the nutritional intake of all family members, especially toddlers. The state of good nutrition and healthy in childhood become an important foundation for future health. The toddler has a rapid growth rate, and therefore the availability of nutrients to meet the needs for optimal child growth.Objective: This study aims to describe the diversity and food intake and nutritional status of children under five in Posyandu Bougenville 3 A Village Paccerakkang Makassar City.Mhetods: This study is a survey with descriptive approach. The research was conducted from January to July 2016. The sample was children aged 2-5 years were selected by purposive sampling as many as 33 people. Data about the diversity of food and nutrient intake were collected with food recall method 2 x 24 hours not consecutive. Weight anthropometric data of children under five were obtained by weighing using digital scales. Furthermore, the nutritional status of children under five is determined using WHO standards in 2005.Result: The research result shows that all samples are not diverse in eating food, less sample carbohydrate intake (69.7%), a good intake of protein samples (93.9%), fat intake less sample (75.8%), vitamin C intake less sample (97.0%), the intake of iron (Fe) less (60.6%), nutritional status of children under BB / U majority (69.7%) either.Sugesstion: It is advisable for parents, especially mothers in order to provide a variety of food (rice, meat of animal, vegetable side dishes, vegetables and fruit) in an amount sufficient so that all the nutrients needed by the body can be fulfilled.Keywords: The diversity of food, nutrient intake and nutritional status.

Abstract

Kota Sorong terletak di Provinsi Papua Barat merupakan salah satu provinsi Indonesia yang memiliki sumber daya alam hayati melimpah. Sumber daya alam hayati dapat digunakan sebagai pangan lokal bersifat fungsional yang dapat meningkatkan derajat kesehatan manusia.  Umbi talas merupakan produk lokal Papua Barat yang memiliki kandungan pati resisten sehingga lambat di cerna dalam tubuh. Berdasarkan penelitian sebelumnya, umbi sarang semut dari Papua Barat Kota Sorong terbukti dapat menurunkan kadar gula darah dengan dosis 360 mg/dl, dan tidak ada efek toksik ekstrak umbi sarang semut setelah dikonsumsi, kandungan serat, flavonoid pada umbi sarang semut tinggi dan memiliki aktivitas antioksidan yang tinggi. Oleh karena itu, pada penelitian ini dilakukan pengembangan produk snack bar. Tujuan : untuk mengetahui nilai gizi, aktivitas antioksidan dan pengaruh penambahan bubuk umbi sarang semut terhadap daya terima snack bar.Pada penelitian eksperimental ini dilakukan analisis komposisi zat gizi produk, aktivitas antioksidan dan uji daya terima menggunakan 35 panelis. Hasil penelitian : snack bar (90 kal/30 gram) , aktivitas antioksidan (68,75%), dan snack bar yang paling disukai snack bar X1 (3% bubuk umbi sarang semut) dan dapat diterima. Sehingga produk snack bar  merupakan produk yang aman dikonsumsi oleh penderita diabetes atau pre diabet selanjutnya karena kaya akan karbohidrat, serat dan protein.

Abstract

Abstrak  The incidence of stunting toddlers in Indonesia tends to increase, namely 35.6% in 2010 to 37.6% in 2013. In 2018 of stunting babies is still 36%.One form of nutrition services for toddlers in Indonesia is the provision of high doses of Vitamin A. This program can overcome the problem of  Xeropthalmia but has not helped much in overcoming stunting. Zinc supplementation is recommended supplementation for overcoming growth problems in children. Provision of high doses of vitamin A should be followed by zinc supplementation. The relationship between these two vitamins and minerals is closely related to the process of absorption of these two elements. In a state of vitamin A deficiency, there is a decrease in Zink-Binding Protein so that deficiency of vitamin A can cause disruption of zinc absorption. Zinc plays a role in the metabolism and transport of vitamin A and is needed in the synthesis of retinol transport protein (PTR), namely cellular hepatic PTR (cPTR) is an intracellular retinol transport protein in liver cells and PTR holo that carries retinol from the liver into the blood and other tissues.This study aims to determine the effect of zinc supplementation on stunting toddlers after the administration of high doses of vitamin A on nutrient intake and biochemical status. The design of the research was pre and post design, the research was carried out for one month, namely the administration of zinc syrup supplementation of 10 mg / day, at stunting children aged 2-4 years after administration of high doses of Vitamin A. Sample of 45 people. Indicators measured are energy intake, macro nutrient intake which includes carbohydrates, fats and proteins. Biochemical status such as zinc, albumin, total protein and hemoglobin.The results showed that the provision of zinc supplementation after administration of high doses of vitamin A in stunting toddlers was quite epective on biochemical status and not epective on energy intake and macro nutrients. Keywords  : Biochemical status , High doses of Vitamin A ,Nutrient intake, , Stunting,  Zinc

Abstract

ABSTRACTBased on the results of monitoring nutritional status in 2017, the percentage of babies who get exclusive breastfeeding in Indonesia is 35.73%. For the Province of South Sulawesi at 42.13%, while for the city of Makassar at 45.8% (Ministry of Health, 2018). According to Riskesdas in 2013, the most breastfeeding process began in 1-6 hours after birth (35.2%) and less than 1 hour (early initiation of breastfeeding) was 34.5%. While the lowest breastfeeding process occurs at 7-23 hours after birth which is 3.7% (Riskesdas, 2013).  Based on a preliminary survey conducted by researchers, it was found that in one of the Public Health Center in Makassar, the Jumpandang Baru Health Center Public of Makassar that the researchers visited, conducted 106 Early Breastfeeding Initiations as recommended by reasoning that it could reduce AKI, one of which was due to hypothermia. From the data above and based on previous studies and obtained from interviews and observations conducted by researchers there are many factors that influence the early initiation of breastfeeding (IMD) both from mothers, infants and health workers who assist in childbirth. The purpose of this study was to determine the relationship of maternal knowledge about Early Breastfeeding (IMD) and the application of IMD in the Jumpandang Baru Health Center Public in Makassar. This research uses analytic survey with cross sectional approach. The population in this study was maternity in the Jumpandang Baru Health Center Public in Makassar. Sampling was done by using purposive sampling technique as many as 35 people. Data was collected using a questionnaire instrument and delivery reports in the Jumpandang Baru Health Center Public in Makassar. Data were analyzed univariately and bivariately by Chi-square Test. There is a relationship between maternal knowledge about Early Initiation of Breastfeeding (IMD) with the application of IMD in the Jumpandang Baru Health Center Public in Makassar 2019 (p value 0,004 < α= 0,05), with a rather low inter-variable relationship strength the coefficient Phi (μ) = 0.485 or 48 , 5%. So it can be concluded that there is a the correlation between the mother's knowledge about Early Initiation of Breastfeeding with the implementation of Early Initiation of Breastfeeding (IMD) in the Jumpandang Baru Health Center Public in Makassar 2019.  Keywords: Knowledge, Early Initiation of Breastfeeding. ABSTRAKBerdasarkan hasil pemantauan status gizi tahun 2017, persentase bayi yang mendapatkan ASI eksklusif di Indonesia sebesar 35,73%. Untuk Povinsi Sulawesi Selatan sebesar 42,13%, sedangkan untuk kota Makassar sebesar 45,8% (Kemenkes, 2018). Menurut Riskesdas 2013, proses mulai menyusui terbanyak terjadi pada 1-6 jam setelah kelahiran (35,2%) dan kurang dari 1 jam (inisiasi menyusui dini) sebesar 34,5%. Sedangkan proses mulai menyusui terendah terjadi pada 7-23 jam setelah kelahiran yaitu sebesar 3,7% (Riskesdas, 2013).  Berdasarkan survei pendahuluan yang dilakukan oleh peneliti didapatkan bahwa di salah satu Puskesmas di Kota Makassar yaitu Puskesmas Jumpandang Baru yang peneliti kunjungi melakukan Inisiasi Menyusu Dini sebanyak 106 bayi baru lahir sesuai dengan yang dianjurkan dengan alasan dapat mengurangi AKI salah satunya akibat hipotermi. Dari data yang di atas dan berdasarkan  penelitian-penelitian sebelumnya serta diperoleh dari hasil wawancara dan pengamatan yang dilakukan peneliti ada banyak faktor yang mempengaruhi dilakukannya Inisiasi menyusu dini (IMD) baik dari ibu, bayi dan tenaga kesehatan yang menolong persalinan. Tujuan dari penelitian ini adalah untuk mengetahui hubungan pengetahuan ibu tentang Iniasiasi Menyusu Dini (IMD) dengan penerapan IMD di Puskesmas Jumpandang Baru Makassar. Penelitian survei analitik dengan pendekatan cross sectional. Populasi pada penelitian ini adalah ibu bersalin yang ada di Puskesmas Jumpandang Baru Makassar. Pengambilan sampel dilakukan dengan teknik purposive sampling yaitu sebanyak 35 orang. Pengumpulan data dilakukan dengan menggunakan instrumen kuesioner dan laporan persalinan Puskesmas Jumpandang Baru Makassar. Data dianalisis secara univariat dan bivariat dengan Uji Chi-square. Ada hubungan pengetahuan ibu tentang Inisiasi Menyusu Dini (IMD) dengan penerapan IMD di Puskesmas Jumpandang Baru Makassar 2019 (p value 0,004 < α= 0,05), dengan kekuatan hubungan antarvariabel agak rendah diperoleh nilai koefisien Phi (μ)= 0,485 atau sebesar 48,5%. Kesimpulan penelitian ini ada hubungan pengetahuan ibu tentang Iniasiasi Menyusu Dini (IMD) dengan penerapan IMD di Puskesmas Jumpandang Baru Makassar 2019. Kata Kunci: Pengetahuan, Inisiasi Menyusu Dini.

Abstract

ABSTRACTGambung cake is one of the traditional snacks made from wheat flour, the inside is filled with jam from a mixture of brown sugar and grated coconut. This cake contains enough energi, but is low in protein. The addition of tempe flour and moringa leaf flour can increase energi and protein content in Gambung cake as a snack food choice for school children in preventing and overcoming nutritional problems in school children. This research is pre-experimental with the design of Post Test Group Design. Addition of tempe flour and moringa leaf flour (1: 1) to Gambung cake successively formula 0 (F0 = 0%); formula 1 (F1 = 2.5%); formula 2 (F2 = 5.0%) and formula 3 (F3 = 7.5%). Energi and protein content are calculated using the List of Food Ingredients. The results showed that F0 Gambung cake contained energi and protein, respectively 366.4 kcal and 5.0%; F1, respectively 376.2 kcal and 5.8%; F2, respectively 386.0 kcal and 6.6%; F3, respectively 495.8 kcal and 7.4%. The energi and protein content of Gambung cake increases with the increasing number of addition of tempe flour and Moringa leaf flour. Keywords: Gambung, Moringa, Tempe

Abstract

Background : Moringa leaf is a food of vegetables group whose utilization is still low, even though this plant has nutritional content that almost meets the nutritional needs of humans and is useful as a nutritional improvement.             Objective: This study aims to determine the physical characteristics, acceptability, and chemical composition (protein and water) of wet noodles with the addition of moringa flour.Method: This research type is laboratory research with randomized block design, treatment with addition of 0%, 3%, 6%, 9% and 12% moringa flour. Implemented in Food Technology and Nutrition Laboratory of Makassar Health Polytechnic and Health Laboratory of Makassar. Parameter analysis is physical characteristics (rendemen, elasticity and brightness), panelist acceptance and chemical characteristics (water and protein content).Results: Physically wet noodles with the addition of Moringa leaf powder has randemen average above 95%, lower than the elasticity of the wet noodles without addition of moringa leaf powder. The color of wet noodles produced is getting green along with the increasing amount of addition of moringa flour. In general, panelists receive from the texture and taste aspects. Addition of maize flour 6-12% panalis stated rather like. Wet noodles with the addition of moringa leaves flour containing water averaged 36.7%, wet noodle protein content without the addition of moringa flour by 6.39%, 3% and 9% additions respectively 6.88% and 7.44% .Conclusion:  Wet noodles with the addition of moringa flour has an average rendemen above 95%, greenness is bright, moderate elastitas. In general, panelists receive wet noodles on the addition of 3% moringa flour and slightly accept at 6-12%. Protein levels increased due to the addition of moringa flour.Keywords: Wet noodles, moringa flour

Abstract

ABSTRAK Basic Health Research Data (RISKESDAS) In 2013 the number of pregnant women with anemia was 37.1%, further discussed in the RISKESDAS data in 2018 the number of pregnant women with anemia increased to 48.1%. The program carried out by the government so far is the provision of Tablets Added Blood (TTD) for adolescent girls and pregnant women who cannot overcome the problem of anemia in pregnant women. Cake with the substitution of barley flour and anchovy flour is expected to increase the substance intake of pregnant women. This study aims to determine the efficacy and content of the substance of the substitution of barley flour and anchovy flour in overcoming the problem of iron nutrient anemia. This type of research is an experimental study with a post-test design research group design. This research is pre-experimental research with 3 variations of formulas and data analysis using the Friedman Test The best results of the cookie formula research are the concentration of 5%, laboratory test results of 5% reserve of cookie substances are 2.88mg / 100 gram, fulfilling 16% of the substance needs of women aged 18-49 years. Keywords: Cookies, iron content, barley flour, anchovy flour

Abstract

Background: Nutrition problem is a public health problem that the prevention can not be done with medical approach and health service only. Nutrition problem in addition is a syndrome of poverty that closely related to the problem of food security at the household level also concerns aspects of knowledge and behavior that are less supportive of lifestyle. Puskesmas Bulurokeng Makassar City in 2016, reported that there are 45 children under five suffering from malnutrition in Bulurokeng urban village.Objectives: The purpose of community service is to assess the change of body weight (TB), height (TB) and nutritional status of children under five in the education and giving of kelor leaf meal on the daily diet of children under five in Bulurokeng Urban Village in 2016. Number of children target infants as many as 29 children, intervention carried out for 1 month.Results: The number of cadres who participated in education as many as 5 people and 29 mothers who have a toddler. But at the end of the intervention, as many as 25 children under five could be collected for analysis. Kelor flour in children under five showed significant difference of weight gain (p = 0,001), but there was no difference in height change (p = 0,41) before and after intervention. The nutritional status of children under five does not change based on body weight index by age (BB / U), height by age (TB / U) and body weight by height (BB / TB).Conclusions: It takes about 3 months of moringa flour intervention on the child's food menu, in order to appear a significant change in nutritional status in children under five.Keyword: Moringa leaf flour, nutritional status.

Abstract

Elderly (elderly) is a natural process that will surely be experienced by all those who are blessed with longevity. The anatomical structure or the process of aging is seen as deterioration in the cell. Based on SKRT morbidity data (2001) and Kor-Susenas (2001) data, there are 31.0% nutritional status of elderly people with low nutritional status, there is a normal nutritional status of 67.1%, while those with more nutritional status are 1.8 %. The success of development, among others, is marked by an increase in life expectancy that ultimately results in an increase in the number of elderly people (Ministry of Health, 2005 in Ratih et al, 2014). Factors that influence nutritional status in the elderly are characteristics, physical activity and nutrient intake. The purpose of the study was to identify the relationship of characteristics, physical activity and intake of nutritional substances with nutritional status in the elderly at the Tresna Werdha Budi Mulia 3 Social Institution in South Jakarta. This research method uses cross sectional. The sample is 147 people who are on Budi Mulia 3 PSTW using the Systematic Random sampling technique. Chi Square test shows that there is a significant relationship between energy intake (p = 0.040) and carbohydrate intake (p = 0.002) with the nutritional status of elderly in the Tresna Werdha Budi Mulia 3 Social Institution in South Jakarta. There was no significant relationship between protein intake, fat intake, characteristics (age, sex, marital status and level of education) and physical activity with the nutritional status of the elderly at the Tresna Werdha Budi Mulia 3 Social Institution in South Jakarta.

Abstract

Background: Nutritional status is a measure of the state of the body based on food consumption and the use of nutrients in the body. The monthly growth monitoring activities performed every month in Posyandu by looking at the growth monitoring through KMS, healthy childrens will show Weight gain every month follows the growth line and provides information on the nutritional status of children because the parents and children's visit is actively expected to help the parents in stimulating the development of children, but on the other hand the parent activity can make the parents become inactive in the visit to Posyandu.Objectives: The study objective was to analyze the relation between the frequency of weighing with nutritional status of children.Methods:  The samples was children aged 06-59 month which  amount 107 people obtained by using simple random sampling technique. Frequeny of weighing was known from the questionnaire which has been filled by the respondent and matched with KMS or Posyandu notebook. Children nutritional status was calculated by using WHO Anthro 2005 based on index of BB/U. This study used chi square test with SPSS program and the data was presented in the form of frequency distribution tables and narratives.Results:  The result of study showed that 55.1% of samples had a frequency of weighing ≥ 4 times. Sample with good nutritional status equal to 77,6%. The result of statistical test with ρ value 0,079 (ρ> 0,050) shows that there is no relation between frequency of weighing with nutritional status of children.Conclusions: There is no relation between frequency of weighing and nutritional status of children.Keywords: frequency of weighing, nutritional status, children
