Abstract

Background: Baruasa is favored the local snacks by the people of South Sulawesi, but low in fiber. One of the high fiber foods is the banana hump. Banana hump can be processed into semi-finished materials such as banana hump flour.  Banana hump flour can be substituted on the manufacture of baruasa.Objective: The purposeof this study to determine how the effect of banana hump flour substitution on the power of the baruasa receipt. This research is pre experimental research that is making baruasa with three varieties of banana hump flour substitution (10%, 20% and 30%). Hedonic test using untrained panelists are Nutrition Students of Poltekkes Makassar as many as 35 people. Analysis of hedonic test data using  Anova and Tukey test with SPSS program.Results: The results showed that the preferred formula of the panelis of the color aspect is F1 of 82.85%, the smell is F1 of 88.57%, the texture of F1 is 54.29% and the sense is F1 of 80% .The test results show that there is a difference of panelist acceptance of the color aspect, Flavor and smell of banana hump flour subtitution flour with p <α value (0,05), whereas in texture aspect there is no difference of acceptance of baruasa banana hump flour with p> α (0,05).Conclusion: It was concluded that the higher concentration of banana hump flour addition was lower due to the panelist's preference for the acceptable power.Suggestion: It is recommended for further preparation, it is better to do further research on how to reduce the color of browning, as well as the smell  and flavor of the banana hump flour which is rather sharp on the baruasa.Keywords: Baruasa, Banana Hump Flour, Acceptability

Abstract

Kenaikan persentase anak balita Stunting di Sulawesi Selatan  terus  meningkat. Hasil  Riset Kesehatan Dasar tahun 2007, 2010 dan 2013 adalah berturut turut 29,2%,  39,8% dan 40,9%. Tahun 2018 Sulawesi Selatan menempati urutan ke-4 prevalensi  stunting tertinggi di Indonesia yaitu 30,1%.  Hasil pemantauan status Gizi (PSG) pada tiga tahun terakhir menunjukkan persentase balita stunting di Sulawesi Selatan tahun 2015, 2016 dan 2017 adalah 34,1%, 35,6% dan 34,8%. Dibutuhkan upaya untuk mencegah dampak buruk dari Stunting dimasa balita, agar dapat dicegah kelanjutannya baik secara fisik maupun psikososial. Penelitian ini ingin menganalisis pengaruh stimulasi psikososial terhadap perkembangan motorik kasar dan motorik halus serta peningkatan berat badan anak Stunting usia 2-3 tahun. Jenis dan rancangan penelitian ini adalah quasi eksperimental  dengan desain Pre Post Test Control Group Design. Sampel penelitian adalah anak balita stunting usia 2-3 tahun di wilayah kerja Puskesmas Sudiang Raya Kota Makassar. Jumlah sampel 30 anak (15 anak sebagai kasus dan 15 anak sebagai kontrol). Lokasi penelitian di Puskesmas Sudiang Raya Kota Makassar. Analisis statistik yang digunakan untuk menguji hipotesis menggunakan Mann-Whitney untuk uji perbedaan  hasil pengukuran perkembangan motorik kasar, motorik halus dan berat badan. Hasil penelitian menunjukkan ada pengaruh stimulasi psikososial anak terhadap perkembangan motorik kasar dan  perkembangan motorik halus pada anak balita Stunting usia 2-3 tahun dengan nilai P value = 0,000  dan P value = 0,001.  Tidak ada pengaruh stimulasi psikososial anak terhadap peningkatan berat badan anak balita Stunting usia 2-3 tahun dengan nilai P value = 0,089. Diharapkan ibu balita  memberi stimulasi psikososial yang rutin kepada anaknya agar perkembangan motorik kasar dan motorik halus anak optimal. Diharapkan kepada petugas puskesmas agar lebih banyak memberi edukasi kepada ibu balita tentang cara melaksanakan stimulasi psikososial kepada anak balita, dan  lebih intensif melaksanakan deteksi dini tumbuh kembang anak agar lebih cepat tertangani bila ada indikasi gangguan perkembangan pada anak.

Abstract

     Dalam pendekatan indeks glikemik (IG) menjelaskan tidak semua pangan sumber karbohidrat memiliki efek yang sama dalam meningatkan kadar glukosa darah. Bubur instan merupakan produk yang dapat dikembangkan sebagai pangan fungsional dan sumber karbohidrat yang digunakan adalah pisang goroho, pisang “mulubebe” indigenous Halmahera Utara, sagu baruk dan tepung mocaf. Tujuan penelitian ini adalah untuk menganalisis nilai indeks glikemik produk olahan  bubur instan berbasis pangan lokal.      Metode penelitian yang digunakan yaitu jenis penelitian eksperimen dengan empat perlakuan. Analisis indeks glikemik menggunakan desain rancangan one-shot case study pada sampel tikus putih (Rattus novergicus). Besarnya pengaruh pangan uji terhadap glukosa darah sampel dapat diketahui melalui perbandingan dengan pangan acuan. Hasil penelitian dijelaskan secara deskriptif yaitu untuk melihat hasil indeks glikemik dari bubur instan berbasis pangan lokal.      Hasil penelitian ini menunjukkan bahwa nilai indeks glikemik bubur instan yang temasuk daam ketegori IG rendah yaitu bubur pisang goroho (31,88), bubur instan sagu baruk (39,43), dan bubur instan pisang “mulubebe” (43,35). Sedangkan bubur instan yang memiliki IG sedang yaitu bubur instan mocaf (62,19). Hasil perhitungan beban glikemik bubur instan yang memiliki beban glikemik rendah adalah bubur instan pisang goroho (8,17) sedangkan yang memiliki beban glikemik sedang yaitu bubur instan pisang “mulubebe” (11,88), bubur instan sagu baruk (12,02) dan bubur instan mocaf (17,16).      Penelitian ini memiliki kesimpulan bahwa penggunaan sumber karbohidrat dari pangan lokal yang berbeda yaitu tepung pisang goroho, tepung pisang “mulubebe”, tepung sagu baruk, tepung mocaf pada bubur instan memberikan pengaruh terhadap nilai indeks glikemik. Formulasi bubur instan pisang goroho dapat direkomendasikan sebagai pangan fungsional yang memiliki nilai indeks glikemik rendah yang baik untuk penderita diabetes melitus dan juga untuk individu sehat yang ingin mempertahankan kadar glukosa darah.

Abstract

Backgrounds: Exclusive breastfeeding is beneficial to reduce child mortality and improve maternal health that compatible with the one of Sustainable Development Goals (SDGs) that ensuring the child get exclusive breastfeeding during the first six months of the birth.Objectives: This research aims to determine the relationship of family support to the practice of giving breastmilk to the baby in PuskesmasSudiang Raya Makassar area.Methods: This research is an analytic survey with Cross Sectional design. The population was 126 breastfeeding mothers. The statistical analysis used is the Coefficient of Contingency with α = 0,05.Results: The result showed that mothers who give breastmilk to their babies have a good family support of 57,6% and there is a relationship between family support and the practice of giving breastmilk to the baby in PuskesmasSudiang Raya Makassar area.Conclusions: Good family support can increase the amount of mothers who give breastmilk to their baby.Keywords: Breastmilk, Family Support, Baby, Mother

Abstract

ABSTRACT Misuke is solid food consisting of vegetable oil, skim milk, and soy which is a source of energy and high protein but with a small volume and in the form of powder. Soybean is a food ingredient with complete protein and is one of the food ingredients that contain amino acids needed by the body. This study is to determine the acceptability of Misuke (soybean oil) and the analysis of macronutrient content (protein, fat, and fat). This research is pre-experimental research that is making Misuke (soybean oil) using three variations of vegetable oil composition (8 ml, 10 ml, and 12 ml), and collecting resources based on color, aroma, texture, and taste. Data analysis using the Friedman Test in a computerized program. The results showed the panelist's most interesting formula on aspects of color, aroma, texture, and taste of Misuke (soybean oil) with an 8 ml vegetable oil composition. In 1 portion of Misuke (soy milk oil), a protein with 8 ml, 10 ml and 12 ml vegetable oil composition is 5.7 g, 5.4 g, 5.3 g while the fat content with vegetable composition is 8 ml, 10 ml and 12 ml, namely 8.1 g, 8.2 g, 8.5 g and fat composition with vegetable oil composition 8 ml, 10 ml and 12 ml, 4.9 g, 5.0 g, 4.2 g. Abstract

Background: Nugget is a popular food and fancied by community in various age groups, including school-age children and It is one of the most favorite and trendy foods. The raw materials used in nuggets in this study are Kurisi fish (Nemipterus nematophorus) and seagrass (Enhalus acoroides). The study is aimed at determining the nutrient contents (carbohydrate, protein, fat, calcium, Fe, and Phenol) and organoleptic test on kurisi fish nugget (Nemipterus nematophorus) substitute product of seagrass (Enhalus acoroides).Method: The design type of the research is complete randomized design as it is applied to experiments conducted in a homogeneous environment and the research approach used is an experimental approach using true-experimental design. Methods used for the treatment of kurisi fish (Nemipterus nematophorus) and seagrass (Enhalus acoroides) by comparing the experimental group 1:0 (100 gr kurisi fish), 3:1 (75 gr of fish and 25 gr seagrass), 1:1 (50 gr fish and 50 gr seagrass), and 1:3 (25 gr fish and 75 gr seagrass).Result: The results reveal that 4 different concentration treatments are conducted by adding the seagrass (Enhalus acoroides) i.e. 1: 0:1: 1:3: 1 and 1:3 with 3 repetitions. The results of carbohydrate are 32.35%, protein 13.74%, fat 14.04%, calcium 33.03 ug/g, Fe 35.24 ug/g and Phenol 2699.47 ug/g. The most favorable organoleptic test and good quality is 1:0 treatment. Abstract

Elementary School children (7 – 12 years old) are the age group who still experiencing growth and development also adequate nutritional that suitable to support it. Children having poor eating habits lead to many nutritional need can not be fulfilled optimally. To optimalize the promotion of balanced nutrition massage to the community, community-based Communication, information, and education are needed. The role of nutrition education by using media is to help the prosess of sending nutritional messages and motivate the target person so that the nutritional message given can be well recived. Method : used quasi experimental with pre-post test control group design with respondents each group 41 students. The analysis data was tested using Wilcoxon and Mann Whitney.There was significant differences in the knowledge and attitude average of snake and ladder Media group from pretest and postest (p=0.003) and  (p=0.006). There was significant differences in the knowledge in the media lectures from pretest and postest (p=0.000) difference and there was no significant difference in the attitude (p=0.442). There was no significant difference of knowledge between snakes and ladders with a lecture (p=0.063) and there was a significant difference in the attitude (p=0.014). The snake-ledder game media with lecture method increase the knowledge and attitude. Abstract

Background: Physical training is one of many method for solving overweight, overgrease and to reach the best freshness of body and fungtional capality from someone.Objectives: Knowing the influence of aerobicnastic (SKJ 2012) in middle intentcity for weight lost, grace percent, and hip waist rim for overweight nutrient student in Health Politeknik of Makassar.Methods: This method is research experiment with one group, pre-test and post-test design. The research will be held in nutrient faculty health polyteknik of Makassar. Sample 30 students of nutrient faculty with overweight status have been choosen by purposive sampling.Results: The result showed that the average of weight loss and grace fat amount was 1,42 kg and 1,96 mm, at the same time, the hip waist rim were not decrease. Based on data analysis found that there were a significant relationship between aerobic with middle intencity and weight loss and grace fat (p=0,000), at the same time,there were not significant relationship between aerobic with middle intentcity and hip waist rim (p=0,882).Conclusions: Energi demand is due to the physical activity. Energy source are drived from the fat-burning in the body. Regular aerobic exercise can reduce the fat strored in body so that weight loss occurs.Keyword : Aerobicnastic, Weight, Grase Persent, Hip Waist Rim

Abstract

AbstractBackground of this study is that controlling body weight is one of them by increasing the consumption of vegetables and fruit, because it has a lower energy content than other food ingredients such as energy sources (staple foods and side dishes).Objective of this study was to determine the amount of vegetable and fruit intake that can reduce energy intake.Method is a systematic review by tracing various studies related to vegetable and fruit consumption on various search engines, namely PubMed, Scinapse, Nature. The search term used is "intake energy, vegetable and fruit" for English references. All references published between 2015-2020 were selected using the Prefered Preferred Reporting Items for Systematic Reviews and Meta-analyses (Prisma) method. The final result found that 6 articles were read and a summary table of the research results was made.Results found that there were 6 articles discussing the theme of energy intake, vegetables and fruit. The amount of fruit and vegetable consumption is between 100-300 g per day, which can have a real effect on reducing energy intake.Conclusion is that decreasing energy intake is by increasing the intake of vegetables and fruits. Keywords: Energy intake, vegetables and fruit

Abstract

Exclusive breastfeeding is a baby who is only breastfeeding without any other liquid such as formula milk, orange, tea, mineral water, and without any additional solid food such as banana, porridge, biscuits, and rice Tim up to 6 months from first birth except drugs and supplements. The cause of mothers who do not breastfeed their children is assumed due to the lack of understanding about the right position and well sticking during breastfeeding. This research aims to determine the effect of leaflet media education on the position and sticking during breastfeeding. This research is a kind of pre-experimental research by applying pre-test and post-test design to the subject of the research, and data analysis used a Wilcoxon statistical test. The sample of this research is the mother who had a baby aged 0-5 months. Moreover, there was 25 sample of this research. The data were obtained by using an interview and questionnaire. While the researcher used direct observation to the mothers who do not breastfeed their baby, then the mother was given an education using a counseling method about leaflet media for three days and 1 day for evaluation. The data were presented in tables, graphs, and descriptive form. The result of the research performed that 100% of babies who had the wrong position before being educated, well sticking (53.1%), wrong sticking(94.7%). On the other hand, after being educated, the sample knows the right position of breastfeeding and get 100%, and well sticking (100%). The result of the statistical test showed that there is a correlation (p=0.000) between before giving the leaflet education and after giving the leaflet education.
