Abstract

The level of knowledge of sanitary hygiene of food handlers greatly affects how the attitude of food handlers in processing food, if the level of knowledge of sanitary hygiene of food handlers is less then the application of personal sanitary hygiene per person will be less and vice versa because the level of knowledge greatly affects the attitude of how to apply sanitary hygiene. This study aims to determine the differences in the application of sanitary hygiene based on the level of knowledge of food handlers at Tabanan Regional Hospital. The type of research used is observational with a cross sectional design. The research sample was food handlers at the Nutrition Installation of Tabanan Regional General Hospital as many as 30 people. The data collected include the level of knowledge and application of sanitary hygiene of food handlers using questionnaires. To determine the difference between the application of sanitary hygiene based on the level of knowledge of food handlers, an independent analysis of t-test was carried out. The results showed knowledge of the application of sanitary hygiene with good categories as many as 16 people (53.3%) and sufficient categories as many as 3 people (100.0%). The results of the analysis show that there is a difference between knowledge and the application of sanitary hygiene of food handlers with the results p = 0.000 (p 0.005).Keywords: Application of sanitation hygiene, knowledge level

Abstract

Young women are susceptible to nutritional problems, one of which is anemia. The cause of anemia is the lack of consumption of macro and micronutrients, such as iron and zinc. The problem of anemia in adolescent girls will cause adverse effects such as causing babies born with low weight, stunting babies, and high prenatal mortality. The purpose of this study was to determine the relationship between zinc and iron consumption and hemoglobin levels in high school students Negeri 1 Gianyar. The type of data in this study is analytical using a cross sectional design. The population in this study was grade 11 and 12 students with a sample of 60 people selected by random sampling. Data on zinc and iron consumption were obtained using a 24-hour food recall questionnaire processed using the 2007 Nutri Survey program, and hemoglobin levels were obtained by digital multicheck method, namely with GCHb Easy Touch. Data were analyzed using bivariate analysis using the spearman rank test. The results showed the level of zinc and iron consumption was still lacking.  The average consumption of zinc and iron after the data was processed was zinc consumption which was 4.3 mg and iron consumption which was 3.95 mg. Consumption of zinc and iron is lower than the daily needs, namely zinc 9 mg and iron 15 mg. There was no significant association (p0.05) between zinc consumption and hemoglobin levels. TThere was no significant association (p0.05) between iron and hemoglobin levels in adolescent girls.

Abstract

Stunting or often called stunting or stunting is a condition failure to thrive in children under five years old (toddlers) due to chronic malnutrition and repeated infections, especially during first 1,000 Days of Life (HPK) period, namely from fetus to child aged 23 months. Toddlers experiencing growth retardation characterized by short and very short physique are 2 main toddler nutrition problems in Bali. purpose of this study was to determine relationship between intake protein, carbohydrates and iron with stunting in toddlers in  Gianyar 1 Health Center area. Using research method using cross-sectional method presented in a cross table and then analyzed using statistical tests to determine the strength of the relationship and the direction of the relationship between variable. results this study are that there is relationship between intake of protein, kh , and iron (FE) on incidence stunting as indicated by the value α (0.05). With contingency coefficient value of 0.324 protein. Intake kh 0.354 and intake of iron (FE) 0.338. results this study it was suggested to families to pay attention amount intake toddlers both in womb and at birth and to carry out nutritional counseling at posyandu. Puskesmas always provide education about the dangers of stunting.

Abstract

Obesity is one of the nutritional problems caused by the accumulation of fat in the body and the consumption of food that exceeds the needs. Consumption of various types of snacks containing high sugar and high fat and lack of physical activity affect the incidence of obesity. The purpose of this study was to determine the relationship between snacks consumption patterns and physical activity with obesity in adolescents at SMPN 1 Kuta. This type of research is observational with a cross sectional design conducted in December 2022 which amounted to 90 people by simple random sampling. Data on snacks consumption patterns were collected through interviews with the SQ-FFQ form. Physical activity data using the PAQ-C questionnaire. Data analysis in the form of the relationship between snack consumption patterns and physical activity with obesity using the Pearson correlation test. There is a relationship between the type of snack consumption and obesity (p=0.000). There is a relationship between frequency of snack consumption and obesity (p=0.004). There is a relationship between energy snacks with obesity (p=0.000) and there is a relationship between physical activity with obesity (p=0.000). It is recommended that schools and parents pay more attention to the selection of snacks consumed and conduct regular monitoring of nutritional status in school adolescents.

Abstract

Siomai is a minced meat product wrapped in a thin skin made from wheat flour and cooked through a steaming process. In this study there was the addition of composite flour of moringa leaves and chicken liver. This study aims to determine the effect of the addition of moringa leaves and chicken liver composite flour on organoleptic quality, iron (Fe) content and antioxidant capacity in dumplings.This type of research is experimental with a randomized block design (RBD). The treatment given was 5 types of treatment with 3 repetitions. Data analysis used aims to determine the effect of treatment on organoleptic quality, levels of iron (Fe) and antioxidant capacity using analysis of variance (ANOVA). The results showed that there was an influence on organoleptic quality including aroma quality, taste quality, texture quality, overall acceptability, iron (Fe) content, and antioxidant capacity in dumplings. The addition of moringa leaf and chicken liver composite flour as much as 16% per weight of ground chicken meat resulted in the most widely accepted quality with characteristics of a non-pleasant aroma, savory taste, chewy texture, overall acceptance of likes, iron (Fe) content of 2.23 mg/ 100 g and antioxidant capacity of 0.0107%.Keywords : Dumplings, Composite Flour, Moringa Leaves, Chicken Liver, Iron, Antioxidant Capacity

Abstract

Stunting is a major nutritional problem of concern in Indonesia. Stunting is defined as a condition in which the nutritional status of a child is based on the height-for-age index (TB/U) with z-score -2SD. The purpose of this research is to find out relationship between levels of consumption of micronutrients, immunization status and stunting in toddlers aged 12-24 months in Sangkan Gunung Village Sidemen Karangasem Regency. This type of observational research with cross-sectional research design. The research sample consisted of 44 toddlers (12-24 months of age). The type of data used includes primary data, namely stunting status, consumption level of micronutrients (zinc, calcium, phosphorus), immunization status, as well as secondary data, namely the number of children under five and an overview of Sangkan Gunung Village. Sampling using simple random sampling technique. The results of the study found that 18.2% of children under five had stunting nutritional status, with 15.9% having a low consumption of zinc, 18.2% having a low consumption of calcium, 15.9% having a low consumption of phosphorus, and 2.3% having incomplete immunization status. Tthe Pearson Correlation statistical test showed that there was a significant relationship between the consumption level of micronutrients (zinc, calcium, phosphorus) and the stunting status in children under five (p = 0.015, 0.003, 0.004), and there is a non-significant relationship between immunization status and stunting status in toddlers (p = 0,313).Keywords: Stunting, Zinc, Calcium, Phosphorus, Immunization Status

Abstract

Diabetes Mellitus (DM) is a disease characterized by the occurrence of Hyperglycemia and carbohydrate metabolism disorders. According to Riskesdas (2018) the prevalence of diabetes in Bali Province reached 1.33% and in Denpasar City reached 1.39%. The purpose of this study was to determine the relationship between knowledge of carbohydrate counting and carbohydrate intake with the control of blood sugar levels in patients with Diabetes Mellitus in UPTD Puskesmas II East Denpasar. This type of study is observational with a cross sectional design. This research was conducted in December 2022 at UPTD UPTD Puskesmas II East Denpasar totaling 37 samples. The sampling technique is Incidental sampling / Accidental Sampling. The data analysis used is chi-square with p value = 0.05. The results obtained knowledge related to carbohydrate counting good category as many as 5 samples (13.5%), enough 3 samples (8.1) and less 29 samples (78.2). Carbohydrate intake was obtained more than 20 samples (54.1%), both 11 samples (29.7%) and less 6 samples (16.2). Blood sugar levels were obtained under control as many as 9 samples (24.3%) and uncontrolled 29 samples ( 75.7%). Based on statistical tests, a relationship was obtained between knowledge related to carbohydrate counting and controlling blood sugar levels p = 0.006 (p 0.05). While there was no relationship between carbohydrate intake andcontrol of blood sugar levels p = 0.269 (p 0.05).

Abstract

Hipertensi atau yang dikenal dengan tekanan darah tinggi merupakan suatu gangguan pada pembuluh darah yang mengakibatkan suplai oksigen dan nutrisi yang dibawa oleh darah terhambat sampai ke jaringan tubuh. Faktor terjadinya hipertensi salah satunya konsumsi lemak yang tinggi terutama makanan tinggi lemak jenuh, dan tinggi kolesterol dapat berpengaruh pada tingginya simpanan kolesterol dan peningkatan kadar kolesterol dalam darah. Simpanan ini nantinya akan menumpuk pada pembuluh darah menjadi plaque yang akan menyebabkan penyempitan dan penyumbatan pembuluh darah. Penyumbatan ini menjadikan kelenturan atau elastisitas pembuluh darah berkurang sehingga meningkatkan volume dan tekanan darah. Salah satu faktor risiko hipertensi lainnya yaitu obesitas yang akan meningkatkan beban jantung untuk memompa darah ke seluruh tubuh, akibatnya tekanan darah cenderung lebih tinggi. Tujuan penelitian ini adalah mengetahui hubungan asupan lemak jenuh dan status obesitas terhadap derajat hipertensi pada pasien hipertensi rawat jalan di Puskesmas I Denpasar Timur. Jenis penelitian yang digunakan adalah penelitian observasional dengan desain cross sectional dengan menggunakan teknik Consecutive Sampling, yang berjumlah 45 orang. Data yang dikumpulkan dengan metode wawancara dan pengukuran. Data disajikan dengan tabel frekuensi dan tabel silang. Hasil uji analisis Korelasi Sperman menyatakan ada hubungan yang signifikan antara asupan lemak jenuh dengan derajat hipertensi pada sampel (p=0,021, r=0,342). Kemudian, setelah itu dilakukan uji yang sama memperoleh hasil yaitu tidak ada hubungan yang signifikan antara status obesitas dengan derajat hipertensi pada sampel (p=0,118, r=0.236).
