Abstract

Penja fish (Sicyopterus pugnans) is a local food resource closely associated with food consumption in West Sulawesi. Processing penja fish into a sambal formulated with Mandar oil represents a form of food diversification that combines a local fishery resource with a traditional regional oil. This study aimed to identify the initial characteristics of penja fish sambal based on Mandar oil through physicochemical, microbiological, and sensory observations. Four formulations were evaluated: M0 as the control containing 200 mL vegetable oil, M1 containing 200 mL Mandar oil, M2 containing 150 mL Mandar oil, and M3 containing 100 mL Mandar oil. Physicochemical parameters included moisture content, pH, fat content, acid value, and initial peroxide value. Microbiological characteristics included Total Plate Count, molds and yeasts, and coliforms, while sensory characteristics included color, aroma, taste, texture, and overall acceptance. Moisture content ranged from 34.03–34.81%, pH from 3.89–4.52, and fat content from 23.76–33.65%. Acid value ranged from 1.122–1.459 mg KOH/g and initial peroxide value from 1.1–1.9 mEq/kg. Total Plate Count and molds and yeasts were <1.0×10¹ CFU/g in all treatments, while coliforms were <3 APM/g. Sensory scores ranged from 4.53–5.07 for color, 4.70–5.23 for aroma, 3.90–4.63 for taste, 4.57–4.90 for texture, and 4.73–5.03 for overall acceptance on a 1–7 scale. M3 achieved the highest overall acceptance score of 5.03. These initial characteristics indicate that the formulation containing 100 mL Mandar oil provides a promising combination of initial quality and sensory acceptance for further development of penja fish sambal. Abstract

Whiteleg shrimp (Litopenaeus vannamei) is one of the leading aquaculture commodities with high economic value and a significant contribution to national fisheries production. The implementation of intensive culture systems has increased production; however, several constraints remain, including high operational costs, disease outbreaks, fluctuations in water quality, and increasing feed prices. This study aimed to analyze the implementation of the intensive whiteleg shrimp farming program, identify the internal and external factors affecting its development, and formulate appropriate development strategies using SWOT analysis. The research was conducted in Tambaan Village, Camplong, District, Sampang Regency, Indonesia, using a descriptive qualitative approach. Data were collected through observations, interviews, documentation, and questionnaires administered to 23 respondents selected from a population of 30 shrimp farmers using the Slovin formula. Data were analyzed using the Internal Factor Analysis Summary (IFAS), External Factor Analysis Summary (EFAS), Internal–External (IE) Matrix, SWOT Diagram, and SWOT Matrix. The results showed that the shrimp farming program had implemented an intensive culture system supported by adequate facilities and experienced farmers. The IFAS and EFAS scores were 2.53 and 2.78, respectively, placing the business in Cell V of the IE Matrix, indicating a hold and maintain strategy. Furthermore, the SWOT analysis positioned the business in Quadrant I, suggesting an aggressive (SO) strategy by utilizing internal strengths to maximize external opportunities. The recommended strategies include improving production quality, adopting aquaculture technologies, expanding marketing networks, strengthening partnerships with suppliers and consumers, and enhancing farm management to support sustainable shrimp farming.

Abstract

Abstract

Vibrio parahaemolyticus is a pathogenic bacterium responsible for diseases in shrimp, causing substantial losses in aquaculture. Silver nanoparticles (AgNPs) have emerged as potential alternative antibacterial agents due to their ability to inhibit bacterial growth. This study aimed to evaluate the in vitro antibacterial activity of AgNPs against V. parahaemolyticus. An experimental approach was conducted using four AgNP concentrations (12.5, 25, 50, and 100 ppm), chloramphenicol as a positive control, and sterile seawater as a negative control. Antibacterial activity was evaluated using minimum inhibitory concentration (MIC), minimum bactericidal concentration (MBC), and agar well diffusion assays. The reported MIC and MBC values were 12.5 and 100 ppm, respectively, yielding an MBC/MIC ratio of 8. Inhibition zone diameters increased with AgNP concentration, ranging from 1.17 ± 0.42 mm at 12.5 ppm to 9.82 ± 0.67 mm at 100 ppm. The positive control produced an inhibition zone of 21.28 ± 0.29 mm, whereas the negative control showed no inhibition. A strong concentration–response relationship was observed (R² = 0.9446). These findings indicate concentration-dependent antibacterial activity of AgNPs against V. parahaemolyticus, supporting further investigation of their efficacy and safety for aquaculture applications.
