Abstract

This study aims to analyze the suitability of coastal waters in Tanah Kuning Village, Bulungan Regency, for Kappaphycus alvarezii seaweed cultivation amidst the industrialization dynamics of the Indonesian Green Industrial Estate (KIHI). An exploratory descriptive method was employed, with four observation stations selected through purposive sampling. The analyzed parameters included physical aspects (current speed, depth, temperature, transparency) and chemical properties (salinity, pH, dissolved oxygen, nitrate, phosphate). Suitability levels were determined using a weighted scoring method. The results indicated that the water quality conditions in Tanah Kuning Village exhibit varying suitability levels across parameters, ranging from highly suitable (S1) to unsuitable (N). Accumulatively, the total suitability score was 58, classifying the area into the Suitable (S2) category. The primary limiting factors identified were the relatively deep waters (10–19 m) and strong current speeds (0.41–0.53 cm/s). To optimize this potential, innovation in cultivation technology, such as the use of more robust long-line methods and precise micro-siting in sheltered areas, is required to mitigate the risk of physical damage to the seaweed thallus.

Abstract

Peda is a traditional fermented fish product widely consumed in Indonesia and has potential as a protein source. Different fermentation methods are thought to affect the nutritional quality of the product, particularly its protein content. This study aims to determine the effect of fermentation methods on the protein content of mackerel peda (Rastrelliger sp.). The study was conducted using an experimental method with a completely randomized design (CRD) consisting of four treatments, namely fish cleaned until stage I fermentation, fish cleaned until stage II fermentation, fish not cleaned until stage I fermentation, and fish not cleaned until stage II fermentation, each with three replicates. Protein content analysis was performed using the Kjeldahl method, while data were statistically analyzed using analysis of variance and follow-up tests. The results showed that the fermentation method significantly affected the protein content of mackerel peda. The treatment of fish that were cleaned until fermentation stage I produced the highest protein content, while the treatment of fish that were not cleaned until fermentation stage II produced the lowest protein content. In general, stage II fermentation and the use of unscaled fish resulted in a decrease in protein content. The results of this study indicate that control of the fermentation method, particularly the fermentation stage and raw material treatment, is important for maintaining the nutritional quality of mackerel peda.

Abstract

The Nila Anjani Fishing Spot is located in Mentaos Village. Visitors are charged an entrance fee of IDR 50,000, providing full access to fish without time restrictions during operating hours, from 8:00 AM to 11:00 PM WITA. The uniqueness of this fishing spot is that visitors are not charged additional fees for fish caught. All fish caught are included in the ticket price, thus providing comfort and convenience for visitors. The purpose of this research at the Nila Anjani agrotourism fishing spot in Banjarbaru City, South Kalimantan is to analyze the benefits of the Nila Anjani agrotourism fishing spot and analyze the business feasibility and prospects of the Nila Anjani agrotourism fishing spot. The selection of this research location was chosen intentionally (purposive), because this fishing spot is different from those that have existed in Banjarbaru City, South Kalimantan Province. This research was conducted from February to March 2026. The total cost incurred by the Nila Anjani agrotourism fishing reached Rp 46,108,995 per year with an annual income of Rp 158,150,000 resulting in a profit of 112,041,005 per year. Business feasibility is seen from the R/C ratio value of 3.43 which indicates that every Rp 1 of costs incurred produces Rp 3.43 in income. The payback period is around 1.15 years indicating that the capital is returned in less than 1 year and 2 months. The BEP production is 922 visitors and the BEP price is 14,578 which is far from the number smaller than the number of visitors who come and the price of tickets sold per piece so that the Nila Anjani agrotourism fishing business is very profitable

Abstract

This study aims to identify fisheries resources in the waters of Kateman, which is one of the coastal areas with unique ecological characteristics. This region is known as a center for traditional capture fisheries that still maintains a local wisdom-based fishing system. Kateman features estuarine, pelagic, demersal, and benthic waters. The waters of Kateman have relatively high turbidity due to sediment supply from rivers and strong tidal activities. The presence of a mangrove ecosystem along the water's edge provides protection and spawning grounds for various species of fish, shrimp, and shellfish. The study employs a purposive sampling method, which is a deliberate sampling technique that selects subjects with specific criteria relevant to the study's objectives. A descriptive method is used to describe or portray the characteristics and identification in a factual and accurate manner. Meanwhile, a qualitative method focuses on understanding the meanings, experiences, and perceptions of individuals or groups about fishermen in depth. Based on the data from the identified catches of fishermen in the waters of Kateman, there are 24 species of fish, 3 species of bivalves, and 7 species of crustaceans with notable abundance and biodiversity. These species dominate the area and exhibit wide tolerance to changes in salinity, making it a habitat rich in marine resources. This diversity is vital not only for the local ecosystem but also for the economic sustainability of fishermen who rely on marine resources. The fishermen's catch data indicates that the composition of the catch is dominated by estuarine, pelagic, demersal, and benthic fish species that hold significant economic value for coastal communities. Variations in the types and quantities of catches reflect the influences of oceanographic conditions, fishing seasons, and the characteristics of the fishing gear used by local fishermen. This data also mirrors the level of intensive utilization of fisheries resources, highlighting the need for sustainable management practices to maintain the ecological balance of the waters and the livelihoods of fishermen in the Kateman area.

Abstract

A patty is a slice of meat that serves as the filling in a burger. It is usually made from beef, but fish-based patties are rarely found. Barracuda is a type of savory fish with a low fat content, making it a potential raw material for patty production. The aim of this study was to determine the formulation of barracuda fish patties (Sphyraena obtusata) with varying proportions of Eucheuma cottonii seaweed flour based on panelists' preferences. In addition, the study aimed to examine the effect of adding E. cottonii seaweed flour on the proximate composition of barracuda fish patties (Sphyraena obtusata). The method used in this study was a quantitative experimental laboratory approach. The experimental design employed was a Completely Randomized Design (CRD) consisting of one factor with five levels of treatment, which were different ratios of barracuda fish and seaweed flour. The treatments were: P1 (100%:0%), P2 (95%:5%), P3 (90%:10%), P4 (85%:15%), and P5 (80%:20%), with each treatment replicated four times. The tested parameters included organoleptic properties color, aroma, taste, and texture as well as chemical properties such as protein, fat, moisture, ash, and carbohydrate content. The results showed that panelists preferred P1, the patty without seaweed flour addition. The addition of seaweed flour led to a decrease in protein, fat, and moisture content but increased ash and carbohydrate content in the fish patties. Therefore, from an organoleptic standpoint, panelists favored the patties without seaweed flour.

Abstract

Seaweed is a marine plant widely used as a food additive due to its high carrageenan content, one of which is the Eucheuma cottoni type. Generally, the public only knows the use of seaweed in processed foods like dodol, jam, and jelly. With the advancement of information and technology, research has been found on yogurt with the addition of plant-based ingredients in the form of seaweed, aiming to develop plant-based yogurt products to increase fermented product consumption and improve yogurt quality. The method used in this research is a quantitative method with a Completely Randomized Design (CRD) with independent variables in the form of different concentrations of seaweed (Eucheuma cottoni) (0%, 5%, 10%, 15%) and consumer acceptance. Consumer acceptance testing was conducted using hedonic preference tests. Determination of the best treatment was carried out using the De Garmo method. The research results obtained indicate that different concentrations of Eucheuma cottoni seaweed significantly affect the organoleptic properties, including taste, aroma, color, and texture, of seaweed yogurt (Eucheuma cottoni). The best treatment was achieved with P2 (5% seaweed concentration), based on the organoleptic parameters of taste, aroma, color, and texture.
