Abstract

The utilization of local food resources is an important strategy to support food security, improve nutrition, and empower communities. Bangun Rejo Village, Tanjung Morawa Subdistrict, Deli Serdang Regency, has abundant local food resources such as taro and kepok banana that have not been optimally utilized. This community service program aimed to improve the knowledge, attitudes, and practices of mothers with children under five years old and PKK cadres regarding the production of snack bars made from taro flour with the addition of kepok banana as a local food ingredient. The program was implemented through several stages, including socialization, pre-test, nutrition and local food education, hands-on training and demonstration of snack bar production, independent practice by participants, and post-test evaluation. A total of 25 participants took part in the activity. The results showed an increase in the average knowledge score from 63.20 before the training to 78.40 after the training. The proportion of participants with good knowledge increased from 16% to 76%. Participants’ attitudes toward local food processing were already positive prior to the intervention and remained positive after the training. These findings indicate that practical, community-based education and training using local food resources are effective in strengthening knowledge and skill capacity of community, particularly among mothers of young children, to produce nutritious and practical food products.

Abstract

Forest Farmers Group (KTH) Peduli Pesisir has played an active role in coastal conservation through mangrove forest rehabilitation and the utilization of fishery products. Although it is well known locally and has many customers, the lack of proper standardization is a major obstacle to improving the competitiveness and economic value of its products.  This community service activity was carried out using an educational approach and discussions. Participants in the activity were members of the KTH Peduli Pesisir directly involved in food production processes. The methods used included education on hygiene, sanitation, and good manufacturing practices (GMP) in food production in the micro, small, and medium enterprises (MSMEs) and the importance of product standardization. The questionnaire results show that participants’ perceptions consistently improved after participating in the program, particularly regarding the importance of product standardization, quality assurance, and consumer trust. Participants also felt that implementing standardization not only facilitates market access but also increases product value and helps meet distribution and certification requirements. Enhancing KTH Peduli Pesisir's capacity in product standardization is a crucial foundation for sustainable business development. The implementation of good quality standards not only improves product safety but also opens access to larger markets and enhances consumer trust. The combination of education and active discussion plays a significant role in promoting economic independence among coastal communities, alongside efforts to preserve the environment.

Abstract

Pudak Village is an Integrated Laboratory Village (Desa Laboratorium Terpadu/DLT) of the University of Jambi and serves as a center for agricultural, livestock, and fisheries activities. However, frequent flooding during the rainy season often reduces agricultural productivity and household income. To address this issue, a Minigrow Farm program was implemented to improve household food security and generate additional income through integrated small-scale vegetable cultivation and poultry farming. The program involved four housewives from the local Women Farmers Group (KWT) who had available yard space. Their home yards were converted into productive areas for growing vegetables, including pak choi, mustard greens, water spinach, and red spinach, and for raising laying hens. Activities were conducted using a learning-by-doing approach, consisting of two months of mentoring followed by two months of independent implementation. The results showed that vegetable production generated a total income of IDR 3,066,000 from two production cycles per month, while egg sales from 55 laying hens generated IDR 2,970,000 per month. The combined additional income reached IDR 6,036,000 for the four participating households. Participants also demonstrated improved knowledge and skills in integrated farming practices. The Minigrow Farm model effectively enhanced household food security, increased family income, and promoted sustainable use of household yard resources in flood-prone rural areas.
