Abstract

Lomek and biang fish are types of fish commonly used as raw materials for making salted fish in Dumai. Industrial activity in Dumai can influence on heavy metal content in dried salted fish. In addition, the requirements for the quality of salted fish are salt concentration and Salmonella test. The aim of this study were to determine heavy metal (Pb and Cd), salt concentration, and Salmonella test in dried salted fish. The study was carried out the preparation of raw materials and the manufacture of salted fish using dry salting method with a salt concentration of 5%, 10% and 15% for lomek and biang fish. The second was the analysis of heavy metal, salt concentration, and Salmonella test. The addition of 10% salt concentration to Lomek fish was the highest result for Pb (1,48± 0,01 ppm), while all samples were not identified for Cd levels. The highest salt concentration was L3 that was 22,45%, while for Salmonella test results all samples were negative. Based on the results, it was concluded that Pb contamination passed the safe limit, while Cd was not detected. The difference in salt addition gave an effect on the salt concentration for dried salted lomek and biang. Salmonella were not found in all salted fish samples.Keywords : Food safety, pathogen, product quality, salted method

Abstract

 Simeulue Islands are the farthest area in West Indonesia that have potency in fisheries and marine science sectors. One of the marine resources from Simeulue Island are Octopus. The octopus price in the market were prospective than other fisheries commudity. However, we have no strategy to increase the Octopus sustainability. Thus, the research about the socio-economic were very important. The aim of this research was to determine the increasing strategy of small scale fishermen sustainability through the utilization of Octopus potency at Simeulue Island. The research method by using descriptive method with sampling method that used accidental sampling.  Subsequently, those samples were analysed by using SWOT Analysis. The result showed that the internal factor in our study are togertherness in capture operational system with value as much as 0,58. Moreover, the weakness generated the lack attention from institutional as much as 0,31. In external factors showed the opportunity from fisheries resources abundantly as much as 0,61. However, the threats showed mostly local fishermen catch the fisheries resources by using unfriendly fishing gear. According to the scoring I  grand matrix of small scale fisheries in Simeulue Islands. Thus, this grand strategy in the first kuadran. It means that the small scale fisheries have high opportunity for developing with utilize the strength and grab the opportunity.                                                                                      Keywords :small scale, fisheries, octopus, Simeulue

Abstract

Snakehead (Channa sp.) was one of the superior freshwater fish species native to Indonesia that has been successfully domesticated. The increasing demand for snakehead fish on the market has resulted in the addition of cultivated land and water use. Aquaponics technology was a combination of fish farming and plants that grow without soil media. The aim of this research was to determine the best composition of probiotics that can be used in aquaponic technology to optimize growth rate and feed conversion of snakehead fish (Channa sp.). This research used an experimental method. The experimental design used was a completely randomized design with four probiotic combination treatments and each treatment was repeated three times. The results showed that awarding of different probiotic compositions in the aquaponic system resulted in a spesific growth rate that was not significantly (P>0.05) different between treatments. The highest value of spesific growth rate were in the treatment of probiotic composition of Lactobacillus casei and Saccharomyces cerevisiae with a value of 4.11%/ day. Awarding of different probiotic compositions in the aquaponic system results in significantly (P<0.05) different feed conversion ratio values. The best feed conversion ratio values were in the treatment of probiotic composition of Lactobacillus casei and Saccharomyces cerevisiae with a value of 1.78. The conclusion of this study was the composition of probiotic Lactobacillus casei and Saccharomyces cerevisiae was the best probiotic composition to increase the spesific growth rate and feed conversion ratio of snakehead fish.

Abstract

Cork fish is one of the commodities from the freshwater fisheries sector which is commonly found in rivers, swamps and swamps that have high economic value and high market demand. The availability of cork fish is still limited to the results of their catch in the wild. And efforts to develop cork fish culture are still small due to slow growth in cork fish and the low response of cork fish to commercially-made feed compared to natural feed. This research is intended to improve the growth of cork fish fed with cinnamon leaf flour (Cinnamomumm burnamani) at different doses.The design used in this study was a completely randomized design (CRD) consisting of 4 treatments with 3 replications. The treatments performed were control (P1), addition of 0.5% cinnamon leaf flour (P2), addition of cinnamon leaf flour 1% (P3), and addition of cinnamon leaf flour 1.5% (P4). The research parameters observed were absolute weight, absolute length, daily growth rate, EP, fat in SR fish body, and cork fish water quality. The results showed that the addition of cinnamon leaf flour at a dose of 1% influenced the growth of absolute weight, absolute length, LPH, and EP. The addition of anis wood leaf flour with a dose of 1.5% can reduce fat content in the body of cork fish.Keywords: Canna striata, Cinnamomum burnamni

Abstract

Potential geothermal water is located on the coast of West Halmahera Regency. The geothermal potential is utilized by the community as a medium of traditional medicine and local tourism. Utilization of hot water sources as a fish processing media has not been done. The purpose of this study was to determine fish processing using a modified oven in geothermal water flow. The research material is anchovy (Stolephorus indicus) measuring 10 cm. Fish drying equipment is made closed (airtight) as a whole. The process of fish maturation is done by laying the fish on the base located in the oven. The results showed that the fish cooked at room temperature 2 hours at room temperature 21 oC with geothermal water flow temperature 49oC-51 oC.
