Abstract

The potential of fishery resources in Gorontalo is quite abundant because of its strategic geographical position bordering Tomini bay. Gorontalo, especially in the Dungingi District, is one of the regions with promising potential fisheries resources where fishery application activities are not only focused on fish cultivation but also processing fishery products. However, people's understanding of fish processing that can only be obtained from their meat makes the community's income in the Libuo Village, Dungingi District Gorontalo City tend to be unstable. The Libuo community as fishery product processing actors need to be given an understanding of the potential and diversification of fishery products that can be produced from by-products that can be obtained from bones, scales, stomach contents, heads, and fish skins so that the application of zero waste can be implemented. Also, as an effort to increase public understanding related to the shelf life of fishery products which tends to be fast, the use of carrageenan as an alternative to edible coatings needs to be introduced to the community as a form of food safety of fishery products. Thus the benefits will be gained from increasing the added value of fisheries and a better level of food safety.

Abstract

Gapoktan Al-Barokah of Lombok Kulon, Wonosari Subdistrict, in Bondowoso Regency has started milling organic rice using husking machine thus produced raw red rice. Raw red rice is rice grain that has its husks removed. The study established that raw red rice is actually covered by hard husk which contains Phytic Acid that could obstruct nutrition absorption to the body. Other drawbacks from raw red rice is that soaking is required before cooking, the texture of the cooked rice is hard to eat, and its nutrition is difficult to digest. These make it less favorable among society therefore it is not in a good sale so far, resulting in low revenue of the organic rice farmers. Therefore, this program was initiated to enrich the quality of red rice products through adding a step into the milling process which is milling using sugawa machine to remove the hard husks. The final product expected from the program was organic embryo red rice that is easy for cooking, soft textured cooked rice, and digestable rice in order to increase the chance of optimal nutrition absorption to the body. Among several solutions offered in the program include supplying and testing a milling machine, production training and guidance, socializing and marketing. The first solution administered was supplying and testing a Sugawa machine to mill raw rice into embryo red and brown rice. Then, it was followed by providing a Sugawa pressure cooker tool to mix derived product from the materials used such as embryo rice and bran, that is embryo porridge and bran cereal. The training conducted in the program contains guidance for applying the SOP of producing embryo rice and its derivatives. Abstract

Ginger (Zingiber officinale) is a rhizome plant that is very popular as a spice and medicinal ingredient. The use of ginger itself varies depending on culture. While in Indonesia, ginger roots and rhizomes are widely used for treatment. Starting from crushed, made into tea, until smeared for healing then the use of ginger root is very thick in the community environment. Seeing how popular and the various benefits that exist in the ginger plant make masangka in Harjomulyo Village, Silo District, Jember Regency, especially the women of the Al-Hasan Muslimatan Group held an instant ginger powder production activity. This is because Harjomulyo Village is a very strategic plantation area for ginger cultivation so that this plant is quite abundant in the Harjomulyo Village area. The problem that arises that is the marketing of instant ginger production has not been effective. This is due to the absence of special media as a means of promotion / marketing. Until now marketing techniques have only been carried out manually by word of mouth so that not many people know that abundant ginger plants in Harjomulyo Village are produced to become instant ginger ready to drink or as a mixture of drinks or other food ingredients. Therefore there is a need for training and assistance related to production and marketing activities in the hope that it can improve the packaging design to be more attractive so that it has a high selling value; use social media as a new means of marketing instant ginger products for women from the Al-Hasan Muslimatan Group Harjomulyo Village; using Instagram as a marketing tool; as well as using the Android-based "Follower Chief" application to automate marketing using Instagram social media.
