Abstract

The high public demand for healthy and economical fast food encourages innovation in plant-based food products, one of which is tofu nuggets. White tofu and Sumedang tofu as potential raw materials have different physical and chemical characteristics. However, research analyzing their impact on nugget quality is still limited. This study aims to analyze the differences in the quality of nuggets produced from the use of white tofu and Sumedang tofu. This study used a pure experimental method (true experimental) with a completely randomized design (CRD). The treatment consisted of two variables, namely white tofu nuggets (X1) and Sumedang tofu nuggets (X2). Primary data were collected through organoleptic tests conducted by 15 semi-trained panelists to assess the quality of the aspects of shape, color, aroma, texture, and taste. Data analysis was performed using the Independent Sample t-Test. The results showed a significant difference in quality (p<0.05) between the two treatments in terms of volume, inner color, and texture. Nuggets made from Sumedang tofu exhibited superior qualities in terms of denser volume, a more yellowish-white interior, and a softer, chewier texture. Conversely, no significant differences were found in shape, outer skin color, aroma, or flavor. In conclusion, the type of tofu used as the base ingredient significantly influences the volume, inner color, and texture of tofu nuggets. The use of Sumedang tofu resulted in nuggets with several better sensory characteristics than white tofu.

Abstract

Education is a crucial process in developing human resources that are high-quality, adaptive, and competitive. However, conventional learning methods often result in low student learning outcomes. This study aims to examine the effect of the Project-Based Learning (PjBL) model on learning outcomes in the Creative and Entrepreneurship Projects (PKK) subject for XI Culinary students at SMK Negeri 2 Bukittinggi. This research employed a quantitative approach using a quasi-experimental method with a Non-Equivalent Control Group Design involving an experimental class and a control class. The research instruments consisted of pretest and posttest assessments as well as a student response questionnaire. Data were analyzed using normality and homogeneity tests and an independent sample t-test with a significance level of 0.05. The results showed that the average posttest score of the experimental class was higher than that of the control class, with a significance value of Sig. 2-tailed = 0.00 ≤ 0.05. This indicates a significant effect of applying the PjBL model on PKK learning outcomes. Moreover, students’ responses to project-based learning were positive, with 86% strongly agreeing. Therefore, the Project-Based Learning model is effective in improving learning outcomes while providing an active, collaborative, and meaningful learning experience.

Abstract

Steamed sponge cake is a popular cake product due to its fluffy texture, soft crumb, and distinctive sweet taste. One of the important factors that determine the success of steamed sponge cake is the material of the steaming equipment and the steaming time. This study aims to determine the effect of steaming equipment materials (bamboo, aluminum, and stainless steel) and steaming time (15, 20, and 25 minutes) on the quality of steamed sponge cake. The study used an experimental method with a 3×3 factorial design and three replicates. Organoleptic tests were conducted by five trained panelists on aspects of volume, four-segment fluffy shape, and texture (moist, soft, and finely porous). The results of the analysis showed that the steaming tool material had a significant effect on all quality aspects (p < 0.05), while the steaming time and the interaction between the two had no significant effect (p > 0.05). The highest average quality scores were obtained for the aluminum steamer, namely volume 3.33, four-segment shape 3.00, and neat shape 3.07. The Fcount value for the steamer factor was 6.41 for volume, 61.00 for four-segment fluffy shape, and 21.80 for neat shape, which was greater than the Ftable (3.31) at the 5% level. Thus, it can be concluded that the steamer material has a significant effect on the quality of steamed sponge cake, where aluminum steamers produce products with expanded volume, perfect four-segment fluffy shape, and soft and moist texture that are most preferred by panelists.

Abstract

The purpose of this study was to compare the quality of sweet potato leaf chips and spinach leaf chips through an organoleptic test covering shape, color, texture, aroma, and taste. This study employed a true experimental method with three expert panelists who conducted evaluations three times using a hedonic scale of 1–4 (1 = dislike, 4 = like very much). Since the data were not normally distributed, descriptive analysis was performed and followed by the Wilcoxon Signed Rank test. The results showed that, descriptively, sweet potato leaf chips obtained higher average scores in texture, aroma, and taste compared to spinach leaf chips, with the highest score on the taste attribute (4 = like), indicating a high level of acceptance. However, the Wilcoxon test results revealed no significant differences (p > 0.05) between the two products across all attributes. Therefore, although sweet potato leaf chips had higher mean scores descriptively, statistically there was no significant difference compared to spinach leaf chips. This indicates that both products have an equal level of sensory acceptance, with sweet potato leaf chips demonstrating strong consistency in the taste attribute and potential as an alternative raw material for innovative snacks and food product diversification.

Abstract

Jam is a popular fruit-based product due to its sweet flavor, distinctive aroma, and smooth texture, while watermelon has great potential as a jam ingredient because of its abundant availability in Indonesia and its high water, sugar, and lycopene content. This study aimed to determine the effect of three types of watermelon Inul watermelon (X1), seedless red watermelon (X2), and striped red watermelon (X3) on the quality of watermelon jam based on sensory and hedonic evaluations. Thirty panelists participated in three replications to assess four main parameters: color, aroma, texture, and taste. The sensory test results showed that jam made from seedless red watermelon (X2) had the best quality with color score 5.74, aroma 6.14, texture 5.69, and taste 6.22. Meanwhile, the hedonic test results revealed that the same sample (X2) was most preferred by panelists, with color score 5.89, aroma 5.53, texture 5.90, and taste 5.60. Analysis of variance indicated significant differences in color, texture, and taste, but no significant difference in aroma. Therefore, it can be concluded that watermelon type influences both the quality and acceptability of watermelon jam, with seedless red watermelon (X2) producing the best jam characterized by a bright red color, fresh aroma, soft texture, and balanced natural sweetness.

Abstract

Kefir is a fermented milk product characterized by a tangy, slightly alcoholic, and carbonated profile, produced through the symbiotic activity of lactic acid bacteria and yeasts. It naturally contains probiotics that exert beneficial effects on health. The anthocyanins present in purple sweet potato (Ipomoea batatas L.) exhibit prebiotic potential. This study aimed to evaluate the organoleptic quality of kefir supplemented with purple sweet-potato purée. A single-factor completely randomized design was employed, comprising four treatments (0 %, 15 %, 20 %, and 25 %) with three replications. Thirty trained panelists from the Family Welfare Education Study Program, Universitas Negeri Padang, assessed color, aroma, texture, flavor, and overall acceptance. Data were analyzed by one-way ANOVA followed by Duncan’s multiple-range test (α = 0.05). Results revealed that purée concentration significantly (p < 0.05) influenced purple color intensity, whereas aroma, texture, and flavor remained unaffected. The 25 % (X3) treatment yielded the best overall sensory profile. Consequently, supplementation of cow’s-milk kefir with 25 % purple sweet-potato purée can be recommended to produce an attractively colored, probiotic beverage with high consumer acceptability.

Abstract

This study aims to compare the quality of roll cakes prepared using different types of eggs, namely layer chicken eggs and free-range chicken eggs. Eggs serve as a main ingredient in cake formulation, significantly affecting the physical and sensory properties of the final product. A comparative research design was applied to evaluate two samples under controlled conditions. Sensory evaluation was conducted to assess organoleptic attributes, including shape, volume, color, aroma, texture, and taste. Data were collected from 30 Culinary Arts Students. Data were analyzed using the t-test (independent sample t-test) to determine whether there were significant differences between the two treatments. The results showed that roll cakes made with local chicken eggs had a larger diameter, a brighter yellow inner color, a more pleasant aroma, and a softer texture compared to those made with layer chicken eggs. The t-test revealed significant differences in shape, inner color, texture, and taste, while volume, crust color, and aroma showed no significant difference

Abstract

This study analyzes the effect of Moodle-based E-Learning on the learning effectiveness of undergraduate students of PKK Culinary Arts at Padang State University. With a quantitative correlational design and a sample of 176 students selected purposively, data were collected through a Likert scale questionnaire and analyzed using normality, linearity, and simple regression tests. The results showed a positive and significant influence between the use of E-Learning and learning effectiveness (R² = 0.320; p = 0.000 < 0.05). The contribution of E-Learning was 32%, while 68% was influenced by other factors such as motivation, teaching methods, and the learning environment. These findings confirm that E-Learning is an effective medium that increases the independence and flexibility of vocational students' learning.

Abstract

This study, titled Implementation of the Curriculum at SMK Negeri 9 Padang in Preparing Work-Ready Graduates, focuses on the culinary arts program. It aims to analyze the planning, implementation, evaluation, and challenges of curriculum application. The research employed a descriptive qualitative approach using in-depth interviews, observations, and documentation. Data were analyzed using the interactive model of Miles and Huberman, which includes data reduction, data display, and conclusion drawing. The findings show that the involvement of industries in curriculum planning remains limited; however, practice-based learning such as teaching factory and industrial internships effectively improve students’ culinary skills. Graduate employment absorption increased from 44.9% to 74%. The main constraints include limited practice facilities and insufficient practice time. This study highlights the importance of continuous collaboration between schools and industries to produce competent and work-ready vocational graduates.

Abstract

Pumpkin (Cucurbita moschata) is a locally abundant commodity, yet its utilization remains limited to traditional dishes. Its high content of β-carotene, dietary fiber, and vitamins A and C makes pumpkin a potential functional food ingredient. To increase its added value and consumption, pumpkin was processed into puree and used to replace water in making rice flour noodles. Noodles were selected because of their popularity across Indonesia, while rice flour is naturally gluten-free and therefore safe for people with celiac disease. This study employed a true experimental design using a Completely Randomized Design (CRD) consisting of four treatments (0 mL, 160 mL, 180 mL and 200 mL pumpkin purée) with three replications. Sensory evaluation was conducted by 30 untrained panelists who were students of the Family Welfare Education Study Program, Universitas Negeri Padang. Data were analyzed using ANOVA at a 5% significance level, followed by Duncan’s Multiple Range Test if F<sub> > F<sub>. Results showed that the addition of pumpkin purée had a significant effect on noodle colour (bright yellow) and aroma (distinct pumpkin odour), but no significant effect on texture (chewiness) or taste (savouriness). The overall best treatment, based on the highest total hedonic acceptance score, was the noodle prepared with 200 mL (X₃) of pumpkin purée.
