Abstract

Stunting, a growth disorder in children characterized by height or length below the standard for their age, can be prevented by ensuring adequate intake of energy and protein. This study aims to assess the acceptability of modified Batawoli nuggets as a potential snack alternative for toddlers with stunting. The research employed a true experimental design with control and treatment groups. Organoleptic tests were conducted on Batawoli nugget formulations with varying ratios: F0 (1:0:1:1), F1 (1:2:1:1), F2 (1:1:1:1), and F3 (2:1:1:1). Data analysis utilized the Mann Whitney test. The findings reveal organoleptic test scores for each formulation: F0 scored 3.35 (somewhat liked), F1 scored 3.9 (somewhat liked), F2 scored 3.46 (somewhat liked), and F3 scored 3.52 (somewhat liked). The study concludes that the most preferred formulation, based on all indicators, is F1 (1:2:1:1), which provides an energy value of 3.5 kcal/g (>1.5 kcal/g) and a Protein Efficiency Ratio of 12.6% (within the range of 10% - 16%). Consequently, this formulation presents a promising local complementary food option for toddlers with stunting.

Abstract

Balanced Nutrition Message recommends getting used to breakfast. If you don't have breakfast, your concentration will be disturbed and your learning achievement will drop. Counseling is carried out to improve a person's behavior with messages conveyed through print media (posters) the aim is to change students' breakfast habits. In order to observe students' breakfast habits, this research used a pre-experimental study with a one group pretest posttest design. A total of 40 children participated in the study at SDN 155 Gresik in grades 4 and 5, using the proportional random sampling method. The average knowledge score before and after counseling was 61.35 78.50. Breakfast behaviors were graded on a scale from 75.58 to 81.55 before and after counseling. According to the study's findings utilizing the paired t-test, balanced nutrition counseling through poster media had an impact on understanding of balanced nutrition (p 0.05), but had no impact on breakfast behaviors (p > 0.05). It is preferable to implement balanced nutrition advice, and one of them is establishing a breakfast routine because it can stimulate the brain and aid in concentration and focus while learning.

Abstract

Many teenage girls in Indonesia suffer from anemia, prompting exploration into alternative dietary interventions. Moringa leaves, known for their high iron content, offer a potential solution. This study aimed to formulate tofu meatballs enriched with moringa flour, evaluating their iron content and organoleptic qualities as a feasible iron supplement for adolescent girls. Three tofu meatball formulations were tested: F1B with no added moringa flour, F2B with 5 g, and F3B with 10 g. Iron content was assessed using ICP-OES, and organoleptic tests were conducted. Statistical analysis included the Kruskal-Walli’s test, with Mann-Whitney test for significant differences. Results revealed F2B had the highest iron content at 1.34 mg/100 g, followed by F1B at 1.06 mg/100 g, and F3B at 1.23 mg/100 g. However, iron levels per serving fell short of the 10% daily requirement. While F1B was preferred for taste, aroma, color, and texture, F2B and F3B were still acceptable. Future improvements could involve using boiled moringa leaves and seasoning to enhance organoleptic qualities.

Abstract

Anemia is common in developing countries such as Indonesia. Government prevention efforts to overcome iron deficiency are by giving Blood Addition Tablets and also improving diet. Identify the intake of protein iron consumption, compliance consumption of government activity blood supplement tablets and consumption patterns of iron inhibitors in SMA Negeri 1 Barat Magetan District. This research is a descriptive study. Data collection by interview with a questionnaire instrument compliance consumption of blood supplement tablets and food intake interview with SQ-FFQ questionnaire. The number of respondents was 58 students with proportional random sampling technique. The percentage of students who did not consume blood supplement tablets (67.2%). The level of iron intake was deficient (62.1%), students consumed tannin very often (25.9%), consumption of phytic acid often (48.3%), and the level of protein intake was severely deficient (79.3%). Most students did not consume the given blood supplement tablets. Most students had iron deficiency and protein intake levels that were severely deficient. The students also had a frequent category in consuming phytic acid and also had a frequent category in consuming phytic acid. Schools are advised to hold counseling on anemia and balanced nutrition, and blood supplement tablets supplementation activities.

Abstract

Street food is food that is sold and served by street vendors on the side of the road and in public places, which can be eaten directly without further processing or preparation. This study aims to describe the level of knowledge, attitudes, behavior, eating habits, and nutritional status of students at MI Darun Najah Klopoten Sukodono Sidoarjo. This research method uses a descriptive method. The total population of this study was 311 students in grades 4, 5, and 6 and a sample of 56 students was taken using Proportionate Stratified Random Sampling. Data collection was carried out through interviews with knowledge questionnaires, attitudes, FFQ forms, and anthropometric measurements. From the results of the study, most of the students had a sufficient category of knowledge (64.3%), good attitude (71.4%), frequent snacking behavior (53.6%), and good nutritional status (55.4%). From this, it can be concluded that most students still have sufficient knowledge and behavior of frequent snacking habits. It is recommended that the school hold outreach to students regarding information on snacks and nutrition and how to eat good and healthy snacks. School canteens are also expected to provide nutritious snacks.

Abstract

Adolescence, which lasts from ten to twelve years, is a period of growth and development of the body that requires adequate nutritional intake to prevent problems such as malnutrition and decreased concentration in studies. According to basic data collected in October 2020, 30% of teenagers had normal nutritional status and 70% had poor nutritional status or were underweight. The purpose of this study is to ascertain how nutritional status and intake are related the focus of adolescent learning at the Ahludz Dzikri Al-Qur'an Assembly. This research uses an analytical observational method with a cross-sectional approach. Thirty students from the Ahludz Dzikri Al-Qur'an Council participated in this study. The Spearman test was employed to examine the non-probability sampling methods used in this investigation. The research results showed that there is a relationship between nutritional status and nutrient intake, and that nutrient intake and nutritional status are related, and then learning should be focused, so it is better for students to consume a variety of foods to improve the students' nutritional status and concentration.
