Abstract

Background: Stunting remains a major nutritional problem in Indonesia and can affect children's growth and development. Utilizing nutrient-rich local foods is one strategy to support nutritional improvement in stunted children. Spanish mackerel (Scomberomorus commerson) is a good source of high-quality animal protein, while moringa leaves (Moringa oleifera) are rich in vitamins, minerals, and antioxidants. These ingredients have the potential to be developed into nutritious food products. However, consumer acceptance is a critical factor determining product utilization. Purpose: To analyze the acceptability and differences in sensory evaluation of mackerel meatballs enriched with moringa leaves in stunted children aged 36–59 months. Method: This experimental study used three formulations of Spanish mackerel meatballs with different concentrations of moringa leaves: F1 (10%), F2 (15%), and F3 (20%). The study was conducted in June 2025 within the working area of ​​the Langgudu Timur Community Health Center, Bima Regency, West Nusa Tenggara. Acceptability testing was conducted by 30 panelists using a hedonic test covering aspects of taste, color, aroma, and texture on a five-point scale. Data were analyzed using the Friedman test at a 95% confidence level (α=0.05). Results: Significant differences in acceptability were found among the three formulations for all sensory aspects (p<0.05). Formulation F2 had the highest average ratings for taste (2.53), aroma (2.60), and texture (2.82). Meanwhile, formulation F3 had the highest average rating for color (2.82). Overall, formulation F2 demonstrated the highest level of acceptability among panelists. Conclusion: There were significant differences in acceptability of mackerel fish balls with added moringa leaves based on taste, color, aroma, and texture. Formulation F2, containing 15% moringa leaves, was the most preferred formulation and has the potential to be developed as a nutritious local food alternative to support stunting prevention and management programs. Suggestion: Further research is recommended to analyze the nutritional content, product shelf life, and examine the effect of mackerel fish ball and moringa leaf consumption on the nutritional status and growth of stunted children to gain a more comprehensive understanding of the product's benefits.   Keywords: Acceptability; Moringa Leaves; Local Nutritious Food; Spanish Mackerel Meatballs; Stunting.

Abstract

Background: Hypertension is a non-communicable disease with increasing prevalence and is a major risk factor for cardiovascular disease. Excessive nutritional status and unhealthy diet are modifiable risk factors that need to be studied to support hypertension prevention efforts. Purpose: To analyze the relationship between nutritional status and dietary patterns and the incidence of hypertension in the adult population. Method: A quantitative analytical design with a cross-sectional approach was used, with a sample of 92 respondents selected using simple random sampling. The study was conducted in the working area of ​​the Belo Community Health Center, Bima Regency, during May and June 2026. Nutritional status data were obtained through body mass index (BMI), dietary patterns were measured using a semi-quantitative food frequency questionnaire (SQ-FFQ), and blood pressure was measured using a sphygmomanometer. Data analysis included univariate and bivariate analyses using the chi-square test with a 95% significance level (α=0.05). Results: The majority of respondents were overweight (37.0%), had poor diet (76.1%), and had hypertension (59.8%). The analysis showed a significant association between nutritional status and the incidence of hypertension (p<0.001). Respondents with overweight nutritional status had the highest proportion of hypertension (85.3%), followed by obesity (80.0%). Furthermore, there was a significant relationship between dietary habits and the incidence of hypertension (p=0.002), with respondents with poor dietary habits more likely to experience hypertension (68.6%) than respondents with good dietary habits (31.8%). Conclusion: There is a significant relationship between nutritional status and the incidence of hypertension, as well as a significant relationship between dietary habits and the incidence of hypertension, with p values ​​<0.001 and 0.002, respectively (α<0.05). Suggestion: It is recommended to use a larger sample size, a wider area, and the addition of other unexplored variables to obtain a more comprehensive picture of the factors associated with the incidence of hypertension.   Keywords: Adults; Dietary Patterns; Hypertension; Nutritional Status.

Abstract

Background: Stunting is a major public health issue, with prevalence rates remaining above the WHO critical threshold. At the family level, a mother's formal education and accurate understanding of the first 1000 days of life period are key pillars determining a child's nutritional status and growth. Purpose: To analyze the relationship between maternal education levels and knowledge regarding the first 1000 days of life period and the incidence of stunting in children aged 0-59 months. Method: This observational analytic study, utilizing a case-control design, was conducted in the working area of ​​the Rasanae Timur Community Health Center, Bima City, between February and March 2026. The study sample consisted of 89 mothers with children aged 0–59 months. Primary data were collected using a structured questionnaire regarding education and knowledge concerning the "First 1,000 Days of Life" period, while stunting status was determined through direct anthropometric measurements analyzed using WHO Anthro software. Data were statistically analyzed using the Chi-Square (χ²) test with a significance level of p < 0.05. Results: Bivariate analysis showed a highly significant relationship between maternal education levels and stunting incidence (p< 0.001); 40.6% of mothers with low education levels had stunted children, compared to 7.0% of mothers with high education levels. Additionally, a significant relationship was found between maternal knowledge regarding the first 1000 days of life period and stunting (p < 0.001), with the highest incidence of stunting observed in the group of mothers with poor knowledge (66.7%), compared to those with adequate (7.1%) or good (14.3%) knowledge. Conclusion: Maternal education levels and knowledge regarding the first 1000 days of life period are significantly associated with the incidence of stunting in children. Strengthening cognitive literacy focused on specific phases within the first 1000 days of life cycle is crucial for inclusion in behavior change intervention programs aimed at preventing stunting.   Keywords: 1000 First Days of Life; Maternal Education; Maternal Knowledge; Stunting.

Abstract

Background: Being underweight is a key indicator reflecting the combined impact of acute and chronic malnutrition. Although various countries have implemented nutrition interventions, progress remains insufficient to ensure the achievement of all global nutrition targets by 2030. Findings from the 2025 Joint Child Malnutrition Estimates (JME) highlight the need for intensified efforts to prevent and address child malnutrition, including underweight status, by improving access to nutritious food and quality healthcare services, as well as promoting optimal child-feeding practices. Purpose: To analyze the relationship between maternal knowledge regarding the "First 1000 Days of Life" and the incidence of underweight status. Method: This quantitative study employed an observational analytic design with a cross-sectional approach and was conducted at the East Dompu Community Health Center in June 2026. Non-probability purposive sampling was used, resulting in a sample size of 77 respondents. Research instruments included a questionnaire on nutritional intake during the first 1000 days of life and anthropometric measurements to determine the children's nutritional status. Data were analyzed using the Chi-Square test with a significance level of p<0.05. Results: A total of 24 (31.2%) children under five were underweight, while 53 (68.8%) were not. The results showed that the proportion of underweight cases was higher among mothers with a low level of knowledge compared to those with adequate or good levels of knowledge. Conclusion: There is a significant relationship between maternal knowledge regarding nutritional intake during the first 1000 days of life and the incidence of underweight status in children under five (p=0.017; p<0.05). Suggestion: Future initiatives should focus on enhancing education and outreach regarding nutrition during the first 1000 days of life through integrated health posts, classes for mothers of young children, nutrition counseling, and the empowerment of health volunteers. Sustained education is expected to improve mothers' knowledge, enabling them to adopt better feeding and caregiving practices to prevent underweight conditions among young children.   Keywords: First 1000 Days of Life; Maternal Knowledge; Nutritional Status; Under-Five Children; Underweight.
