Abstract

The aim of this research was to find the effect of ratio of pineapple pulp with carrot pulp and stabilizer type on the quality of mixture of pineapple and carrot jam sheet. The research was conducted by using completely randomized design with two factors, i.e. : ratio of pineapple pulp and carrot pulp (B) : (85% : 15% ; 75% : 25% ; 65% : 35% ; 55% : 45%) and stabilizer type (P) : (CMC, Carrageenan, Arabic gum, Pectin). Parameters analyzed were moisture content, vitamin C content, total soluble solid, total acid, crude fiber content, organoleptic score values of color and texture and organoleptic hedonic values of taste and flavor. The results showed that the ratio of pineapple pulp with carrot pulp had highly significant effect on moisture content, vitamin C content, total soluble solid, total acid, crude fiber content, organoleptic score values of color and texture and organoleptic hedonic values of taste and flavor. Stabilizer type had highly significant effect on moisture content, vitamin C content, total soluble solid, total acid, crude fiber content, organoleptic score values of color and texture, organoleptic hedonic values of taste and flavor. Interaction of the two factors had highly significant effect on organoleptic score values of texture and had no effect on moisture content, vitamin C content, total soluble solid, total acid, crude fiber content, scores values of color, hedonic values of  flavor and taste. The ratio of pineapple pulp with carrot pulp of (85% : 15%) and CMC produced the best quality more acceptable jam sheet. Keywords : Carrot, Jam sheet, Pineapple, Stabilizer type.

Abstract

The aim of this research was to find the effect of stabilizer type and stabilizer concentration on the quality of red guava and soursop fruit leather. The research was conducted at the Laboratory of Food Technology, Faculty of Agriculture, University of Sumatera Utara, Medan, using completely randomized design with two factors, i.e. : stabilizer type (J) : (CMC, Gelatin, Arabic gum, Pectin) and stabilizer concentration (K) : (0,6% ; 0,8% ; 1,0% ; 1,2%). Parameters analyzed were moisture content, ash content, total soluble solid, vitamin C content, total acid, organoleptic score of color, taste and texture and organoleptic hedonic values of color, taste, flavor and texture.The results showed that the stabilizer type had highly significant effect on moisture content, total soluble solid, score of color, taste, and texture, and hedonic values of flavor, taste, and texture. Stabilizer concentration had highly significant effect on moisture content, ash content, total soluble solid, vitamin C content, total acid, and had significant effect on organoleptic hedonic values of texture. Interaction of the two factors had highly significant effect on organoleptic score values of texture and had no effect on moisture content, ash content, total soluble solid, vitamin C content, total acid, curb fiber content, scores of color, taste and texture, and hedonic values of  flavor, taste and texture. The stabilizer type (Arabic gum) and stabilizer concentration (1,2%) produced the best quality of fruit leather and more acceptable. Keywords : Fruit leather, Red guava, Soursop, Stabilizer

Abstract

Coconut production in Indonesia is very abundant, but its processing is still very minimal, therefore the diversification of coconut processing is needed to increase. This study was conducted to determine the effect of carrageenan concentration on the quality of coconut sheet jam during storage. This study used a completely randomized design with two factors namely carrageenan concentration (K): 2,5%, 3,5%, 4,5% and 5,5%, and storage time (L): 0 days, 2 days, 4 days and 6 days. The parameters analyzed were water content, total acid, vitamin C, total dissolved solids, color and texture scores as well as organoleptic values of color, aroma, taste and texture. The results showed that the concentration of carrageenan had highly significant effect on water content, total acid, vitamin C, total dissolved solids, color scores, texture scores as well as organoleptic of color and texture. Storage time had highly significant effect on water content, total acid, total dissolved solids, color scores, texture scores as well as organoleptic of color, taste and texture. Interaction of the two factors had highly significant effect on water content. Concentration of 2,5% carrageenan gave the best quality characteristics of the coconut sheet jam and storage for 6 days was still acceptable for consumption. Abstract

In Power plant Irrigation water ,one of the component of the turbines is the blade. This study was aimed to examine the number of blades on water mill power generation in Medan Krio Irrigation. This study used a non-factorial completely randomized design (CRD) with 8, 10, and 12 blades respectively. Parameters observed were flow  rate power, voltage, rpm generator rotation. The result showed that the mean flow rate were 0,040 m blade /s at the 8 blades; 0,047 /s at the 10 blade and 0,048 /s at the 12 blade. The mean electric power was 161.180 Watt at the 8 blades; 175.120 Watt at the 10 blade; and  181.380 Watt at the 12 blade . Electric voltage mean was 7.418 volts at the  8 blade;  7.582 volts at the 10 blade of; 8.242 volts and at the 12 blade. Mean of the water miil rpm was at the  64.618 rpm at the 8 blade;  was 66.190 rpm at the 10 blade; was 67.480 rpm at the 12 blade. Abstract

Evaluation of the performance of irrigation system is one way to describe the circumstances and characteristics of an irrigation system. This study aims to evaluate the performance of operation and maintenance of Bandar Sidoras irrigation system. Some of the indicators used to determine the performance of the irrigation system were: functional performance and network infrastructure of irrigation, water sufficiency level, the level of accuracy of the provision of water, management of government institution, the availability of fund, human resources and farmer institutional performance. The results showed that the level of accuracy was very appropriate water supply, the management of government institution was very good, the farmer institution performance was very good each with the value of 4, functional performance and irrigation network infrastructure was well, the adequacy of water was sufficient, the availability of funding was adequate , and human resources were adequate each with the value of 3. in general, the performance of operation and maintenance of the Bandar Sidoras irrigation system categorized very well with a value of 3.36. Abstract

Seepage is one of the causes of lost of water in irrigation channel. It is difficult to measure the seepage directly on the field. Therefore there should be a model or equation to determine the channel seepage that is the first stage through laboratory scale. This research was done to analyze the seepage coefficient of trapezoidal cross-section irrigation channel on Latosol soil through laboratory scale. The water balance component which was measured were evaporation, percolation and seepage through channel wall. The research showed that the coefficient of seepage was about 3732,48 to 5339,52 mm/day. The evaporation  value was 1,33 mm/day and channel percolation was 376,41mm/day. Key Word : coefficient of seepage, irrigation channel, trapezoidal cross-section, Latosol soil, laboratory scale.

Abstract

The decrease of fossil resources and increase population are very contradictive to energy consume for human life and social economy activity. So, alternative energy is needed which environment friendly by the use of plastic waste as fuel. This research as aimed to compare fuel from plastic (Polyethylene), cosmetic bottle (HDPE) and mineral water bottle (PET) with kerosene. This research was done in Agriculture Engineering Laboratory, and in Physical Chemistry Laboratory of  MIPA and Heat Engine Laboratory Faculty of Engineering in August 2014 until finish using completely randomized non factorial design with plastic (Polyethylene), cosmetic bottle (HDPE) and mineral water bottle (PET). The parameters analysed were yield, value of heat and viscosity. The results, showed that fuel nearly the same with kerosene was P2 (cosmetic bottle) with heat of 10.578,6 kcal/Kg and viscosity of 0,940 cP. Keywords : Plastic waste, Polyethylene, HDPE, PET

Abstract

Knowing about water distribution in root area is important as one of our reason to give irrigation. This research was purposed to study water distribution in root area for several types of soil and plant at laboratory scale. The important parameters observed were soil physical property, evapotranspiration, water application and storage efficiency, and water distribution. The result of this research showed that Inceptisol soil had clay texture, Latosol soil had clay texture, and Andepts soil had sand clay loam texture. Evapotranspiration for mustard green plant in middle phase was 1,92 mm/day and for last phase was 0,96 mm/day. Evapotranspiration for soya bean plant in middle phase was 1,84 mm/day and for last phase was 1,12 mm/day. Water application efficiency for the three varieties of soil was between 35,89% and 100% and water storage efficiency was between 9,16% and 100%. Water distribution for mustard green plant in the three varieties of soil was between 29,20% and 37,91% and soya bean plant was between 25,95% and 37,05%. Abstract

agricultural waste. One of  utilization of the agricultural waste is tea waste that into briquettes as an alternative energy to replace fuel oil and gas, as well as a raw material for the manufacture of activated charcoal. That is why the author made a cast to simplify charcoal briquette printing making process. This study used literature study, cast making, instruments testing and parameters observation. Parameters measured were was capacity, moisture content, ash content, heating value, economic analysis, break even point, net present value, and internal rate of return. The results showed the capacity was 2,907kg tool / h, average water content was 2,6%, average ash content was 6,357%, average calorific value was 5740,70 cal / g, cost was Rp. 25.750,46 for the first year, Rp. 25.453,35 for the second year, Rp. 25.354,45 for the third year, Rp. 25.305,08 for the fourth year, and Rp. 25.275,53 for the fifth year, the break even point 952,89 kg /year for the first year, 513,71 kg /year for the second year, 367,52 kg / year for the third year, 367,52 kg / year for the fourth year and 250,86 kg / year for the fifth year, net present value of Rp. 1.135.273.634,79, internal rate of return was 12,74%, its mean that this equipment was worthy to used. keywords: printing tools, charcoal briquettes, tea waste.

Abstract

Food processing by cooking needs a special technique to maintain the nutrition of the food. This research was aimed to measure the effective frying temperature in vacuum frying (vacuum pump type). This research was carried out at Agricultural Engineering Laboratory, Faculty of Agriculture USU in March – April 2014 using non factorial randomized block design with five levels, i.e. 75oC, 80oC, 85oC, 90oC, and 95oC. Parameters observed were water content, loss of oil, organoleptic value, and economic analysis. The results showed that frying temperature had highly significant effects on water content, loss of oil, and organoleptic value, but it showed that there was no highly significant effect on taste. Economic analysis showed that investment with this equipment was non - profitable. Keywords: Snake Fruit, Temperature, Chips, and Vacuum Frying.
