Abstract

Background: Early childhood is a golden period that greatly determines growth and development in later life. However, parents' busy work schedules often result in suboptimal provision of nutritious food for children, who are more often given low-nutrient ready-to-eat meals. This condition has an impact on the low level of healthy lifestyle habits from an early age. Aims: This study aims to describe the implementation of healthy lifestyles through the habit of eating nutritious food in children aged 4–5 years and to identify the obstacles encountered in its implementation at Mutiara Bangsa Kindergarten, Kaway XVI District, West Aceh Regency. Methods: This study used a qualitative field research approach. Data were collected through observation, structured interviews with five parents and several teachers, and documentation. The research instruments consisted of observation sheets, child development assessment rubrics, and interview guides. Data analysis was conducted using the Miles and Huberman interactive model, which included data reduction, data presentation, and conclusion drawing, and was tested for validity through source triangulation. Results: The results showed that most children had begun to adopt clean and healthy habits and brought nutritious meals from home. Teachers actively guided children in group meals, limited snacks from outside, and instilled an understanding of healthy food. The main obstacles faced were parents' limited time to prepare healthy meals, children's tendency to choose food based on taste, and the influence of unhealthy snacks around the school. Conclusion: The implementation of a healthy lifestyle through nutritious eating habits has proven to be effective in fostering healthy habits in early childhood, while also supporting children's physical and cognitive development. Continuous collaboration between teachers and parents is needed to maintain the consistency of the program, as well as the expansion of its implementation in other early childhood education institutions in an effort to shape a generation of children who are healthy, intelligent, and resilient from an early age.

Abstract

Background: Balanced nutrition is an important factor in supporting the growth and development of elementary school children. However, national data shows that the prevalence of stunting and double nutrition problems in Indonesian children remains high. This condition is exacerbated by students' low understanding of the concept of balanced nutrition, which has the potential to affect their eating patterns and health. Aims: This study aims to describe the level of balanced nutrition knowledge among fifth and sixth grade students at SDN Karang Dalem 1 Sampang as a basis for developing more targeted nutrition education strategies. Methods; This study used a descriptive design with a population of 80 fifth and sixth grade students. The sampling technique used total sampling. Data were collected through a questionnaire containing 20 true-false questions that had been modified from previous studies. Data analysis was performed using frequency distribution and percentages. Result; The results showed that the majority of respondents were female (61%) and aged 11 years (69%). The level of balanced nutrition knowledge was mostly in the adequate category (53%), while 39% of students had good knowledge, and the remaining 9% were classified as lacking. Conclusion; The balanced nutrition knowledge of fifth and sixth graders at SDN Karang Dalem 1 Sampang was mostly in the adequate category. These findings emphasize the need for more innovative nutrition education interventions, such as animated media or project-based learning methods, to improve students' understanding and support efforts to prevent double nutrition problems in elementary school children.

Abstract

Background:Stunting is a chronic nutritional problem that remains a serious challenge in Indonesia. This condition impacts physical growth, cognitive development, and the quality of future human resources. Mothers' knowledge and motivation in providing balanced nutrition are crucial factors that can influence the nutritional status of toddlers. Aims: This study aims to analyze the relationship between maternal knowledge about stunting and motivation to provide balanced nutrition to toddlers aged 7–24 months in the working area of ​​Bangetayu Community Health Center, Semarang City. Methods:The study used a descriptive, correlative design with a cross-sectional approach. The sample consisted of 115 mothers of toddlers selected using simple random sampling. The instrument was a structured questionnaire covering demographic data, knowledge about stunting, and motivation for providing balanced nutrition. Data analysis was performed using the Spearman Rank test. Result:The results showed that the majority of respondents had high levels of knowledge (73%) and strong motivation (53.9%). Spearman Rank correlation analysis yielded a coefficient of r = 0.744 with p < 0.05, indicating a very strong and significant relationship between maternal knowledge about stunting and motivation to provide balanced nutrition to toddlers. Conclusion:Maternal knowledge has been shown to play a crucial role in increasing motivation to provide balanced nutrition. Comprehensive and ongoing health education needs to be strengthened as a preventative measure to reduce the prevalence of stunting, particularly during a child's first 1,000 days of life.

Abstract

Background:Diabetes mellitus is a degenerative disease with a high prevalence in Indonesia. Efforts to control blood glucose levels can be achieved by consuming foods with a low glycemic index, high fiber, and rich in antioxidants. Mocaf flour has a lower glycemic index and higher fiber content than wheat flour, while Tiwai onions are rich in flavonoids and phenolic compounds, which act as natural antioxidants. Aims:This study aims to determine the effect of mocaf flour and tiwai onion formulation on fiber content, antioxidant activity, and organoleptic characteristics of onion sticks, as well as to determine the best formula. Methods:This study used an experimental design with a Completely Randomized Design (CRD) of three treatments and three replications. The treatment formulations were F1 (48 g mocaf : 15 g tiwai onion), F2 (42 g mocaf : 21 g tiwai onion), and F3 (36 g mocaf : 27 g tiwai onion). Fiber content analysis was carried out using the gravimetric enzymatic method, antioxidant activity using the DPPH method, and organoleptic tests were carried out on 30 untrained panelists using a hedonic scale. Data were analyzed using ANOVA and further tests were carried out if there were significant differences. Result:The results showed that the formulation affected fiber content, antioxidant activity, and organoleptic properties. Formulation F1 produced the highest fiber content (2.28%) and the best acceptability in terms of taste and texture. Formulation F3 had the highest antioxidant activity (190.13 µg/ml) and the most preferred color by panelists. This indicates that increasing the mocaf composition increases fiber content, while the addition of tiwai onions strengthens antioxidant activity. Conclusion:The combination of mocaf flour and Tiwai onions has the potential to produce onion sticks, a healthy, functional snack that consumers will love. This product can be used as a local food alternative to support diet management for people with diabetes mellitus and to strengthen the use of local food ingredients in nutrition and dietetics innovations.

Abstract

Background:Stunting is a chronic nutritional problem that has long-term impacts on the quality of human resources. Basic Health Research (Riskesdas) data shows that the prevalence of stunting in Indonesia remains high, including in Blora Regency, Central Java, particularly in Kediren Village, which recorded a figure of 22.1%. This situation requires active community involvement in supporting Community Health Center (Puskesmas) nutrition programs as a mitigation effort. Aims:This study aims to describe the form of community participation in the Kutukan Community Health Center nutrition program and identify the factors that influence this participation. Methods:The study employed a descriptive qualitative approach, with data collection techniques including interviews, observation, and documentation. Informants were selected purposively, including health workers, integrated health post (Posyandu) cadres, village officials, pregnant women, and members of the community with stunted toddlers. Data analysis was conducted interactively using the Miles and Huberman model, supported by triangulation of sources, techniques, and time to ensure data validity. Result:The research results show that community participation manifests itself in the form of ideas, energy, skills, materials, and social aspects. The stages of participation include planning, implementation, utilization of results, and evaluation. Supporting factors for participation include government intervention, free programs, and public awareness, while inhibiting factors include low nutritional knowledge, time constraints due to work, suboptimal communication, and lack of program follow-up. Conclusion:This study concludes that community participation plays a vital role in the success of the stunting reduction program in Kediren Village. To increase the program's effectiveness and sustainability, strategies are needed to strengthen the capacity of cadres, intensify outreach, and strengthen collaboration between health workers, the village government, and the community.

Abstract

Background: Nutritional status is a crucial factor influencing students' cognitive abilities and comprehension during the learning process. Concentration is a crucial mental aspect for mastering course material, but it is easily disrupted by internal and external factors, including inadequate nutrition, such as skipping breakfast. Initial observations of students in the Nutrition Study Program at the Faculty of Public Health, Universitas Negeri Medan (UNM) revealed a diversity of nutritional statuses and complaints of difficulty focusing (easily feeling sleepy) during lectures if they skip breakfast. Aims:This study aims to analyze and prove the relationship between nutritional status and concentration levels in students of the Nutrition Study Program, Faculty of Sport and Health Sciences, Makassar State University (UNM). Methods: The type of research used is quantitative with a descriptive correlation design using a Cross Sectional approach. The study population was students of the Nutrition Study Program aged 18-22 years, with a total of 66 respondents selected through a purposive sampling technique. Measurement of nutritional status was carried out through anthropometric measurements (weight and height) which were converted into Body Mass Index (BMI). The concentration level was measured using the Test Grid Concentration. Data were analyzed using descriptive tests, normality tests, and Pearson correlation tests with the SPSS 23 program. Result: The results of the descriptive analysis showed that most respondents had Normal nutritional status (41 of 66 respondents) and were in the Good concentration category (33 of 66 respondents)10. The results of the Pearson correlation test between nutritional status and concentration level produced a statistical value of P = 0.78. Conclusion: Based on the statistical analysis, it was concluded that there was no significant relationship between nutritional status and concentration levels of students in the Nutrition Study Program at FIKK UNM (p = 0.078). This result indicates that in the study population, nutritional status was not the primary factor influencing learning concentration, but rather was influenced by other factors such as breakfast habits and physical condition.

Abstract

Background: The sili fish (Macrognathus aculeatus), a freshwater fish, is a specialty and a popular side dish in Lamongan's Nasi Boran cuisine. Fish is a good source of animal protein, while its fat content is predominantly unsaturated, which is beneficial as an efficient energy source, as well as for growth and lowering blood cholesterol. Aims: This study aims to determine the protein and fat content of Sili fish in the Bengawan Solo River, Jelakcatur Village, Kalitengah District, Lamongan Regency. Methods: This research is quantitative descriptive. Sili fish samples were taken from three different stations (Plarisan Station, Gangin Station, and Jelak Station). Protein content was determined using the Kjeldahl method and fat content using the acid hydrolysis method. Result: Protein and fat content varied among the three stations. The highest protein content was found at Jelak station at 13.51%, followed by Gangin station at 11.60%, and Plarisan station at 11.38%. The average protein content across the three samples was 12.16%. The highest fat content was also found at Jelak station at 1.01%, followed by Gangin station at 0.72%, and Plarisan station at 0.70%. The average fat content across the three samples was 0.81%. Conclusion: Sili fish samples from Jelak Station had the highest protein (13.51%) and fat (1.01%) content. Overall, Sili fish from all three locations had good protein and fat nutritional content.

Abstract

Background: Food security is a crucial issue in Indonesia. Kebocoran Village, Banyumas, is developing melon-picking agrotourism as an innovative solution to address food security challenges and improve community well-being. Aims: This study aims to analyze the community empowerment strategies implemented by the Mina Pisang Farmers Group through the melon picking agrotourism program. Methods: This research is a field study using a descriptive qualitative approach. Primary data was obtained through interviews with farmer groups and village government officials. Data collection techniques used were observation, interviews, and documentation. Result: The integrated empowerment strategy uses the 5P approach (Enabling, Strengthening, Protecting, Supporting, and Maintaining). Enabling includes land access and melon cultivation training. Empowerment is carried out through technical training to increase farmer capacity. Conclusion: The Mina Pisang Farmers Group's 5P-based empowerment strategy has been successfully implemented. This program significantly strengthens village food security through land optimization, food diversification (melons), and simultaneously improves community welfare in a sustainable manner.

Abstract

Background: Sustainable food security is a critical issue in Indonesia. Kebocoran Village, Banyumas Regency, initiated the development of melon-picking agrotourism as an innovative solution to strengthen local food security and improve community well-being. Aims: To determine the relationship between parental knowledge about balanced nutrition and the practice of providing healthy food menus to children at Almaarif Islamic Kindergarten. Methods: Correlational, using a questionnaire on 80 respondents (parents). Data analysis used Spearman's Rank correlation. Result: There was no significant relationship (0.95 > 0.05) between parental knowledge and healthy food provision. The correlation coefficient indicated a very weak relationship (0.6%) and was unidirectional. The majority of parents' knowledge was moderate (55%), while healthy food provision practices were good (81%). Conclusion: The null hypothesis (H0) is accepted, namely that there is no relationship between parental knowledge about balanced nutrition and providing a healthy food menu to children.

Abstract

Background: The Free Nutritious Meal Program (MBG) in Pinrang Regency requires an analysis of its implementation and legal regulations from a Siyasah Syar'iyyah perspective. Aims: This study aims to determine the implementation of the MBG Program and its implementing legal regulations in Pinrang Regency through Siyasah Syar'iyyah analysis. Method: The type of research is qualitative field research. Data was obtained from primary and secondary sources, through observation, interviews, and documentation. Data analysis techniques include data reduction, data presentation, and drawing conclusions. Result: The implementation of the MBG Program in Pinrang proceeded through planning, implementation, and monitoring stages. Its implementation received high participation from the school and parents. The involvement of local MSMEs has also been proven to help the local economy. The legal basis for this program refers to Law No. 18/2012 (Food), Law No. 17/2023 (Health), and Presidential Regulations No. 83/2017 & 2024. Conclusion: The MBG program is a form of public welfare (maslahah 'ammah) that is valid according to sharia. This policy aligns with the maqasid sharia principle of preserving the soul (hifz al-nafs) and the mind (hifz al-'aql), with the goal of improving health, reducing stunting, and improving the quality of human resources for the younger generation
