Abstract

This research was aimed to determine the consumer acceptance of opaque crackers which fortified catfish (Pangasius hypothalmus) protein concentrate. The methode used was experimental and complete randomized designed non factorial with 4 level of treatment O0 (without adding catfish protein concentrate), O1 (adding 5% catfish protein concentrate), O2 ( adding 10% catfish protein concentrate), and O3 ( adding 15% catfish protein concentrate). The parameter was observed fororganoleptic test and chemical analysis. The result showed that the adding 5% catfish protein concentrate was most preferable by consumer acceptance by organoleptic test, with criterias: the dominand in catfish protein concentrate flavour and not exessive in seasoning there were no other flavour and not too satly. For chemical analysis: protein content 24.17%, fat content 1.59%, watr content 6.23%, and ash content 4.67%).Keywords : Concentrate Patin, Fortifikasi, Opaque Crackers

Abstract

The purpose of this research was to determine the formulation of jelawat fish sausage (Leptobarbus hoeveni) by using different dose of tapioca flour on consumer acceptance. The method used in this research was experimental method with completely randomized design (CRD) non factorial by given different dose of tapioca flour (treatment), S0 (without tapioca flour), S1 (5% tapioca flour), S2 (10% tapioca flour), S3 (15% tapioca flour). Based on consumer acceptance, it can be concluded that jelawat fish sausage by using 5% tapioca flour more preferable by consumer acceptance, with criterias (3,36) odor (3,30) texture (3,40)and taste (3,30). Furthermore, the proximate value was water content(66.03%), protein content(13.68%), fat content (12.35%), ash content (2.64%) and carbohydrate content (5.30%).Kata Kunci : sausage, fish jelawat, tapioca flour, consumer acceptance

Abstract

This research was to determine evaluate the sensory quality and microbiological various types of smoked fish which marketed at Kecamatan Sukajadi Pekanbaru. Three types of smoked fish obtained from market Cikpuan, Palapa and Kodim. Smoked fish originated from Bangkinang, Pelalawan, Rokan Hilir and Palembang. Smoked fish observed to the sensory quality ang microbiological. The result of this study have shown that the sensory quality and microbiological which marketed in Palapa have the highest sensory quality from Cikpuan and Kodim; Based on the types fish which marketed have shown that selais fish have the highest sensory quality from patin and baung; Based on the origin of the production area, showed that Pelalawan have the highest sensory quality from Bangkinang, Palembang and Rokan Hilir. Based on microbiological parameter (TPC, Stapylococcus aureus, Koliform and Jamur), showed that smoked fish which marketed in Cikpuan have the highest microbiological value from Kodim and Palapa. Based on the types, the fish which marketed in the three of market showed that baung fish have the highest microbiological value from patin and selais; Based on the origin of the production area showed that Palembang have the highest microbiological from Pelalawan, Bangkinang and Rokan Hilir.Keyword : smoked fish patin, baung, selais, sensory quality, microbiological

Abstract

This research was aimed to determine the using of flour as a binder for goldfish baby chips with appearance, aroma, texture and flavour on consumer acceptance. The treatment for this research was adding of flour, T0 (300 gr rice flour + 100 gr wheat flour), T1 (300 gr rice flour + 100 gr tapioca) and T2 (300 gr rice flour + 100 gr sagoo flour). The parameters was observed for organoleptic test, the crispness and proximate analysis on goldfish baby chips. The result showed that goldfish baby chips with the formulation of rice flour and tapioca flour was most preferable by consumer acceptance, with water content 25.69%, ash content 3.72%, fat content 11.19%, protein content 34.62% and crispness value 3.50.Keywords: Consumer acceptance, Fish baby chips, flour, goldfish.

Abstract

This research aims to study the quality of boiled fish presto jelawat with different packaging for low temperature storage seen from organoleptic value, moisture content, TVN (Total Volatile Nitrogen), Fungi and bacteria psikrofilik. The method used is a comparative study (comparative experiment) of the quality of boiled presto fish jelawat vacuum (V) and boiled presto non vacuum (NV) conducted cold storage at a temperature of ± 5 C with a time interval of observation 0, 10, 20, 30 days with each treatment were conducted three times. Quality research results presto boiled fish jelawat with vacuum packaging method is the best treatment. The results of the showed the water content of vacuum packaging 56,13% and packaging non vacuum 59,99%. TVN analysis showed vacuum packaging 21,76 mgN/100g and packaging non vacuum 24,44 mgN/100g. Psikrofilik bacterial analysis indicates vacuum packaging 3,43x10² cfu/mL and non vacuum packaging 4,67x10⁵ cfu/mLKeywords : Pindang Presto, Vacuum and Non Vacuum, Fish Jelawat

Abstract

This study aims to determine consumer acceptance of jelly seaweed (Eucheuma cottonii) with the addition of natural dyes rosele (Hibiscus sabdariffa L). The method used is experiment with a completely randomized design, consisting of 4 levels of treatment of R0 (without the addition of roselle), R1 (extra rosela 15%), R2 (extra rosela 20%), and R3 (extra rosela 25%). The parameters tested were organoleptic, chemical analysis and treatment of the best views of the parameters tested is treated R3 (xtra rosela 25%) with a red color such criteria (7.29), the distinctive aroma of seaweed no (7.46), sweetness and typical rosela acid (7.57), teksturserat-fiber smooth and not sticky (7.58), with a water content of 15.20%, ash content of 0.42%, 4.33% reducing sugar.Keywords: jelly, roselle, seaweed, organoleptic assessment

Abstract

The research was conducted during of March until June 2016 in Kampar River and Laboratory of Fishing Gear and Material Faculty of Fisheries and Marine Science University of Riau. It aim to determine effectiveness of shapes and potitions of escape gap. The method used are survey and experiment method and then use Analysist of Variance to complete the experiment. Abstract

Eucheuma cottonii seaweed is one of the plants that have bioactive compounds that can produce secondary metabolites that act as antibacterial, antioxidant, anticoagulant. This study aimed to find out that Eucheuma cottonii seaweed extracts have antibacterial compounds that can inhibit the bacteria Staphylococcus aureus and Escherichia coli bacteria as well as determine the minimum inhibitory zone diameters in bacteria Staphylococcus aureus and Escherichia coli. The method used is an experimental method that did extract manufacture seaweed (Eucheuma cottonii). The concentration of seaweed extract used was Er1 (0,02%),Er2 (0,1%),Er3 (0,5%). The experiments were performed with three replications.Results of research Eucheuma cottonii extract has antibacterial effects against bacteria Staphyloccocus aureus and Escherichia coli are indicated by the formation of inhibition zone around the well in order. The minimum inhibitory concentration Eucheuma cottonii extract against Staphylococcus aureus was 0,02% with an average inhibition zone of 10,00 ± 2,64mm and for the bacteria Escherichia coli 0,02% with an average inhibition zone of 0,67 ± 1,15mm.Keywords: Antibacterial activity, Eucheuma cottonii, Staphylococcus aureus, Escherichia coli

Abstract

This research is purpose to detemine the amount of invesment, income, profit also feasibility of tilapia cultivation in the pond in Tebing Tinggi Village, district of Benai, Regency of Kuantan Singingi. The method used based on case study. Populations in this research are 11 firsh farmers. From that populations sample taken with Stratified Random Sampling. Stratified Random Sampling is a method to choose sample by dividing populations into three categories that called level that is small secondary and big scale.Result ofresearch showed average investment of small scale that is Rp. 13.672.063. secondary scale that is Rp. 33.059.550 and for big scale it shown Rp. 116.571.950. Small scale earns Rp. 10.242.000 for average income and benefits about Rp. 1.783.388,-/hervest. Secondary scale aerns Rp. 27.166.000 and benefits about Rp. 6.158.182,-/harvest. Foe the big scale result shown Rp. 100.674.000 for average income and benefits Rp. 22. 947.184,-/harvest. Value of average RCR obtained from the small scale is 1,21, and 1,29 for secondary scale and 1,30 for big scale. Average FRR for small scale is 13,04%. 18,63% for secondary scale and 19,68% for the big one. And the value of average PPC for all scale are 5,67 period (small) 5,37 period (secondary) 5,08 period (big).Keywords : Tilapia, Investment, Income, Benefit, RCR, FRR, PPC

Abstract

This  research was conducted on March 2016 in Delima Jaya Village, Kerinci Kanan District, Siak Regency, Riau Province. The objective of this research was to find out the assessment ofextentor, the success of fish farmer, to analyze the correlation between the extentor performance and the success of fish farmer. The method used in this research was survey method. The population  of this research was the members of Kelapa Jaya Group who did fish cultivation which were 15 people. Therefore, the member of the respondents of this research was 15 people. Based on the result of research, the extentor performance in Delima Jaya village is categorized as good. It is proven by the final analysis scoring 279 which is around 226-316. Likewise the success of the fish farmers is also categorized as good, it is proven by the average scoring 681 which is around 501-750. The correlation is categorized as strong which proven by the Rank Spearman analysis scoring .658**. It means that ther is positive and significant (strong) correlation between the instructur’s performance and the success of the fish farmers which is around 0,600- 0,799.
