Abstract

A study on the oil content of sea water and diatom abundance wereconducted in March 2016 at Tanjung Buton consist of three sampling station wereestablished with three depth strate (upper, midlle and lower) on each station. Theidentification and quantification of oil content as well as diatom were carried outin Marine Chemistry Laboratory, Faculty of Fisheries and Marine Science,University of Riau in Pekanbaru. The result of the study showed that oilcontents range apparently the highest of oil content were found at station 1(0,1603 ppm) and the lowest was found at station 2 (0,0994 ppm). The highestdiatom abundance was found at stasion 3 (352 cells/L) and the lowest abundancewas found at station 1 (289 cell/l). 18 species of diatom were found in TanjungButon Water. Nitzchia sp was the species with the highest dominance. Oil contentwith diatom abundance showed a weak negative corelation Y= 266,2-3,915x; R² =0,118; r = 0,344. At the upper showed a very weak negative corelation Y = 318,7-0,070x; R² = 2 X 10-9 ; r = 0,00014, at the midlle showed a weak positivecorelation Y = 236,2+615,2x; R² = 0,141 ; r = 0,3755 while at lower showed avery weak negative corelation Y = 492-1477x ; R² = 0,149 ; r = 0,386 whichmean increasing oil content will cause a decrease the abundance of diatom inTanjung Buton water’s.Key word’s : Oil content, diatom, Tanjung Buton Water

Abstract

Pandan Beach is inhabit by marine organisms, including mollusc. A research aims to determine species types and diversity of mollusc in the Pandan Beach was conducted on December 2015. Mollusc samples were collected 2 times from 3 stations. In each station, 5 quadrans (1x1 m) were placed randomly and mollusc present inside the quadrans were removed. The mollusc captured were identified based on Abott (1991) There were 17 mollusc species present, 7 species Bivalves and 10 species Gastropodes. The most common species was Saturnia corpulenta (The Important Value Index 59.45%). The rarest species was Daphanella elata, Polinices helicoides, Acteocina caniliculata, Fulgurofosus grabau, Tapes itterata. The diversity index (H’) ranged from 1.912 – 2.680, the evenness index (E) was 0.274 – 0.389, the dominant index (C) was 0.276 – 0.999, and the similarity index was 0.35 – 0.61. Based on data of obtained, it can be concluded that the Pandan Beach is suitable to support the live of mollusc.Keyword : Saturnia corpulenta, mollusc diversity, Pandan Beach

Abstract

The research was aimed to determine the effect of addition of kecombrang (Nicolaiaspeciosa Horan) extract at varied concentration on the quality of the smoked catfish selais (Crytopterusbicirchis). The research was used experimental method and composed as randomized block design (RBD). The treatment was addition of  kecombrangextract into the fish meat at different concentration, consisting of 4 levels, namely: catfish selais without the addition of kecombrang extracts (K₀), catfish selais with addition of kecombrang extracts 3% (K3), catfish selais with addition of kecombrang extracts 6% (K6) and catfish selais with addition of kecombrang extracts of 9% (K9). The smoked catfish products then were stored for 0 days, 15 days, 30 days and 45 days at room temperature. The results showed that the different concentrations of the kecombrang extract solution highly significantly affected to the organoleptic value (appearance, taste, aroma and texture), moisture content, total phenol, total acid, pH, antioxidant activity of the smoked catfish produced,  but significantly affected to the value of TBA. The highest quality of the smoked catfish was produced by the control treatment, which was without kecombrang added (K0) as indicated by the highest value of organoleptic characteristics. The smoked catfish selais was appeared intact, clean, brown, shiny specific types, smelt distinctive aroma of smoked fish, tasted good and tasty, and textured intact, clean, brown, shiny specific species.  The smoked catfish contained water of 32.46%, total 1:15 ppm phenol, 4.73% total acid, pH 6.86, TBA 4.02mg/kg, and antioxidants 62.81%.     Keywords: Crytopterusbicirchis, Nicolaiaspeciosa, kecombrang extract, smoked catfish

Abstract

This research aimed to determine the effect of addition the different concentration of tapioca flour on consumer acceptance of surimi catfish (Clarias gariepinus) fishball. The methode for this research was experimental methode with completely randomized designed non factorial with 4 treatments: B0 (without addition tapioca flour), B1 (15% of tapioca flour), B2 (20% of tapioca flour), and B3 (25% of tapioca flour). The parameter test was organoleptic and proxsimat analysis. The results showed that the addition 75 g (15% of tapioca flour) on fishball was the best treatment and most preferable by consumer acceptance, where as the fishballs have the criterias: appearance (good and nice, grayish white in colour); texture (chewy, compact and elastis); aroma (typical fishball and slightly fishy smell); and flavor (fish flavor and seasoning tested); with moisture content 68.84%, protein content 14.09% and fat content 0.58%.Keyword: Catfish, consumer acceptance, fishball, surimi.

Abstract

The aim of the research was to determine the effectiveness of smoking method implemented forproducing katsuobushi (woody smoked fish). The processes were distinguished into two methods, namely: liquid smoking (Pc) and traditional smoking (Pt). Skipjack katsuobushi produced were then evaluated for their quality, including: the value of organoleptic, the value of pH, the content of moisture, acids, and phenols. The results showed that the quality of the katsuobushi produced by implementing the liquid smoking method was significantly different from that produced by implementing traditional smoking one. The value of the odor, flavor, and the content of moisture, phenols and acids, katsuobushi skipjack produced by liquid smoking methods were higher, whilst the value of colour and pH were lower and significantly different than those produced by implementing traditional smoking. Both kinds of katsuobushi skipjack were overgrown by fungi Aspergillus sp. and Penicillum sp. indifferent intensities. The growth intensity of the fungi on the surface of katsuobushi skipjack produced by implementing traditional smoking was higher than that produced by implementing liquidsmoking. Keywords: katsuobushi, liquid smoking, skipjack, traditional_________________
